Bird Cherry Pies
The bird cherry berries will ripen soon. In any case, my bird cherry, a reddish virginiana, has already begun to turn purple. Unfortunately, there will be very little of it this year. It’s unlikely that you’ll be able to dry it and make jam like you did last year. If you just enjoy the freshest bird cherry berry, and maybe. bake a bird cherry pie.
When I was little, a large bird cherry tree grew near our house. Common bird cherry is black. As she ripened, my morning began with her berries: I climbed a tree and simply could not tear myself away from the deliciousness given to us. My tongue was covered with a black coating, my mouth was “knitting,” and I was tearing up the newest brush with berries and throwing it into my mouth.
My kids are indifferent to bird cherry. My husband too. In general, I mostly eat it alone.
Reddish bird cherry is larger, although its flowers are smaller than those of black bird cherry. And, for sure, it is not as warm as black. But definitely not the least sweet and necessary!
My grandmother gave the household members a bird cherry decoction if anyone in the family had an upset tummy. Regardless of the time of year, she broke the branches of bird cherry, made a decoction from them and forced the sick person to drink it. This was an option if the dried berries ran out. But we didn’t bake bird cherry pies. What a pity!
Bird cherry flour is sold in stores. It’s not exactly cheap, but you can completely afford such excess for yourself: 500g – 250 rubles. Last year, I decided that I had dried the bird cherry, so I would grind some flour for myself, using a coffee grinder…. Result: no flour, no coffee grinder - I broke it during the first attempt to grind dried bird cherry berries. Here you need something more powerful - a home mill or millstone. Or he can grind the freshest bird cherry through a meat grinder. In general, now I am without a pie and without a coffee grinder. That’s why I’ll buy ready-made bird cherry flour for the pie, because four broken coffee grinders is too much. The three previous ones, however, suffered not from bird cherry, but from the roots of other plants.
BURRY PIE RECIPES
Dried fruits and their flour have a sweetish taste and impart a pleasant almond smell to confectionery products.
- For the dough, take a glass of ground bird cherry, two eggs, a glass of sour cream, one and a half glasses of flour, a glass of sugar, a spoonful of soda, which needs to be quenched. Mix bird cherry with sour cream and let it brew for an hour or two. Later, grind the eggs with sugar, mix with bird cherry sour cream, add soda and flour. The dough should be like excellent sour cream and pour out of the bowl into the mold, and not fall out in a lump. Bake at 180 degrees for 40-50 minutes, then remove the cake from the mold, cool, and cut into two cake layers with a long knife. We generously coat the shortcakes with thick country sour cream, whipped with sugar, or preferably without it, and combine them. This pie does not require any flavorings or additives. After this, put everything cooked in the refrigerator - the chilled pie tastes better. The taste is very unexpected, memorable, very narrow and at the same time multifaceted.
- Another bird cherry pie, but made on the basis of shortcrust pastry. Not even just shortbread dough, but made in the form of crumbs.
Wheat flour – 320 g.
Butter – 240 g.
Sugar – 2-2.5 cups;
Ground bird cherry – 210 g.
Water (boiling water) – 0.5-0.7 cups;
Starch – 2 teaspoons;
First, let's deal with bird cherry. How to brew bird cherry for a pie? Easier than usual! Pour boiling water, stir and wait 30 minutes. The mixture should resemble sour cream.
Now let's move on to the test. Divide the butter into cubes and grind with flour and sugar (0.5 cups) until a huge amount of crumbs form. Add the remaining sugar, eggs, starch and sour cream to the not yet completely cooled bird cherry mass. Mix well! Line a baking dish (preferably a springform pan with high sides) with special baking paper. Pour an even layer of crumbs onto the bottom (70% of the size). Then lay out the bird cherry filling and sprinkle the same crumbs on top. Place in an oven preheated to 180 degrees for 45 minutes. Later, the cake must be allowed to cool completely.

Everything here is as simple and clear as possible! Take the finished puff pastry and a jar of bird cherry jam. Roll out the dough and divide into two layers. Place one on a baking sheet greased with oil. Place the filling on the dough. If the inside is very watery, you can mix it with 1-2 tablespoons of starch. Cover with a second sheet of dough, pinch the edges, pierce in several places with a fork, and then place in the oven for 20-25 minutes at 200 degrees.
Similar pies were previously often sold in stores. That is why it is popularly called “pie from youth”, “grandmother’s”, “Siberian”, “traditional” and “Russian”. Touch the legend given to us too! Bird cherry pie can become your favorite. Bon appetit!
