Recipe for Avocado Salad with Salmon:

Our ingredients. It is better to freeze salmon a little.

Finely chop the iceberg.
Cut the frozen salmon into small cubes. Cut one narrow circle from half a lemon and squeeze out the juice from the rest.

Peel the avocado, remove the pit and cut into small cubes, sprinkle with a little lemon juice.

In a bowl, mix iceberg, avocado and mayonnaise. You can add a little salt, but it seems unnecessary to me.

Place the mixture of avocado and iceberg with mayonnaise in a serving ring on a plate, press down with a spoon, place salmon cubes on top, and pour lemon juice over it.

Over the weekend, my friends and I prepared a very unusual salad with avocado, salmon and tomatoes. What makes it unusual, in my opinion, is the dressing and the fascinating interplay of flavors of fish, lettuce and arugula. I recommend it to those who don’t really like mayonnaise salads. At this point, I’ll tell you what we’re preparing and in what order.

To make a salad with avocado, tomatoes, salmon and arugula we will need:

  • Salmon - 300 g (pieces, it is better to use lightly salted, or smoked)
  • Avocado - 2 pcs. (medium, mature)
  • Lettuce leaves - 8 pcs. (2 per serving: “Iceberg”, “Romano”)
  • Arugula – 120 g
  • Tomatoes - 8 pcs. (medium in size, you can use cherry tomatoes, but then the quantity needs to be doubled)
  • Green onion feather - 6−7 pcs.
  • For dressing : lemon juice - 4 tbsp. spoons
  • Olive oil - 4 tbsp. spoons
  • Mustard - 2 teaspoons
  • Salt - a pinch
  • Ground red pepper - a pinch (hot, not paprika)
  • A mixture of Provencal herbs: basil, marjoram, rosemary, sage, oregano, thyme and mint - 1 teaspoon

How to prepare a salad with salmon, avocado and tomatoes

  1. Place the lettuce leaves in the first layer on the plate, on top of the arugula. You will get a green salad pad for our salad with avocado, salmon and tomatoes.
  2. Cut the avocado into thin strips and place on top of the salad pad.
  3. Cut the tomatoes into thin slices and place them on top.
  4. For the tomatoes we send salmon, cut into small slices.
  5. And finally, add the green onion feathers, which we cut into small strips 2-3 cm long.
  6. We are preparing the dressing for our salad. Mix the dry ingredients: salt, red pepper and herbs de Provence. Mix lemon juice with butter and mustard. Now let’s combine the dry ingredients with the resulting sauce. The end result is a fragrant dressing.
  7. We pour the dressing over our salad with avocado, tomatoes and salmon just before serving and enjoy both the appearance and the taste!
