The history of the salad is long and rich: at first it was made “from what was available” in a French restaurant by chef Lucien Olivier. To this day, only boiled eggs and the freshest cucumbers remain from that same dish, and it is believed that they are not included in the traditional version of the salad. Nevertheless, thanks to its satiety and richness of taste, modern meat salad captured the hearts of Russians and became very popular. Let's talk about the features of making this recipe.

The most important thing to keep in mind when preparing a dish: be sure to use at least some meat! Boiled, stewed, baked, shish kebab - only meat will give the salad richness, naturalness, and originality of taste.

  • meat (any kind, to choose from) – 150 gr.
  • Boiled carrots – 1-2 pcs.
  • Boiled potatoes – 2-3 pcs.
  • green peas – 1/2 can
  • Chicken egg – 2 pcs.
  • Pickled cucumber – 1-2 pcs.
  • Mayonnaise – 3-4 tbsp.
  • Greens - To taste

Step-by-step manufacturing process at home

  1. Prepare all ingredients, not including vegetables: mayonnaise, green peas, pickles, herbs and meat. For a good housewife, a small piece of meat can provide both a salad and lunch: from the broth from cooking the product we get soup, and the boiled meat itself will become the basis of a traditional meat salad. You can take meat (beef or pork) and bake it in the oven, and if you have leftover kebabs cooked on the fire, then eating them and refreshing their taste the morning after the picnic will help with a meat salad!

Preparing to make a salad involves boiling eggs, potatoes and carrots “in their uniforms” until tender. We usually check the readiness with a knife: if it just goes into the vegetables, it means you can pull them out. They usually cook for no more than 20 minutes. Pay attention: if you are preparing a salad from young vegetables, then remember that they reach readiness even faster and may become boiled.

Cut pickled cucumbers (homemade or store-bought pickled) into cubes. Add them to the meat.


Chop the boiled eggs not very finely. Add them to the previous ingredients.

Cut the carrots into cubes. Also put in a salad bowl.

It's potato time. There doesn't have to be a lot of it.

Add green peas to your food. If you are cooking for two or three servings, then half the container will be enough.

To complete the taste, it is important to add lemon juice to the traditional meat salad.

Add mayonnaise to taste. To create the lightest and most dietary salad, replace part of the mayonnaise (or all of the sauce) with sour cream.

Now you need to prepare the decorations for serving the salad. You can take a scrambled egg mold or a round shape cut from a plastic bottle. Here the shape is taken in the form of a cloud and a sun.

Carefully place the salad in the mold and compact slightly. After this, the form must be carefully removed.

Let's finish decorating the dish with pickled cucumbers (these are the rays of the sun) and tomatoes (the sun). Sprinkle with herbs.

First, take the boiled meat and cut it into cubes.

Peel the pickles and cut them into cubes. Transfer the cucumber pieces to the container with the meat.

Peel the carrots and cut into cubes. Also transfer this ingredient to a salad bowl.

Boil the potatoes, cut into pieces.

Open the can of peas, place them in a colander, and let the excess juice drain.

Besides, as you can see, this meat salad is very similar to the Olivier salad we know and love, with the only difference being that it uses high-quality boiled meat as a base instead of doctor’s sausage, and the dressing is slightly more special and unique. If you wish, you can supplement the recipe with any type of vegetable, for example, corn.

    • Canned peas – 1 jar;
    • Meat (preferably tender) – 230 g;
    • Pickled cucumbers – 3 pcs.;
    • Potatoes – 4 pcs.;
    • Onion – 1 pc.;
    • Eggs – 3 pcs.;
    • Mustard (medium hot) – 1 tbsp;
    • Carrots – 2 pcs.;
    • Mayonnaise – 50 g;
    • Sour cream - the same amount;
    • Salt.
    1. First, let's boil the main component - meat. Remove any films, rinse, and place in salted, spiced boiling water in one piece. This way we will retain more juice. Later we’ll pierce it with a knife and check – if it’s soft, take it out and send it to cool. And then cut into careful cubes;
    2. Next is the turn of potatoes. Let's wash it off the ground, put it in cold water - and put it on fire. When it boils, add salt (but not earlier, otherwise it will be crumbly). Peel the finished potatoes, cool, and cut into cubes;
    3. Boil the carrots in the same way as I wash them. But there is no need to salt it. Later we will chop it like potatoes;
    4. Boil the eggs, cool, chop;
    5. We cut the cucumbers in the same way as the rest of the ingredients. You can squeeze it slightly if the juice is released in large quantities;
    6. Clean the onion and rinse it. Cut finely;
    7. Place the peas in a strainer and let them drain well;
    8. At the same time, prepare the dressing: mix together the indicated amount of mayonnaise sauce, sour cream, mustard, and also add salt;

    • Sugar – 1 tsp;
    • Spices;
    • Vegetable oil – 5 tbsp.

    1. First, let's deal with the main ingredient - meat. Be sure to take a solid piece, without veins or irregularities. So that you can simply cut it into thin slices. First, wash the meat and dry it slightly. Using a sharp wide knife, cut it thinly, like bacon, season with spices, salt and beat well. Next, cut the purchased chops into medium long slices;
    2. Heat the vegetable fat in a frying pan, throw in the cooked meat pieces, fry until beautifully browned and with a pleasant smell. Please note that this will happen quickly, because the chops are very thin. Place them on a cold plate with cardboard napkins, let them cool and drip off the fat;
    3. Now let's prepare everything else. We will cut a huge part of the cheese into careful, medium-sized cubes, and rub a very small amount into narrow shavings;
    4. Wash the tomatoes well, then chop them in the same way as cheese. You can get rid of the seeds earlier, this will help avoid “dampness” in the salad in the future;
    5. Let's wash and clean the onion. Let's cut the beginnings into halves, and later chop them into thin half-rings. Season with vinegar, sugar, mix and shake with your hands for uniformity. Leave it like this for 10 minutes;
    6. Now let's prepare our meat salad from the ingredients that we have prepared: combine fried pieces of pork with cubes of cheese, tomatoes and onions;
    7. Add mayonnaise and mix. Place in a salad bowl and sprinkle cheese shavings on top. You can also garnish with a pinch of chopped herbs. The treat, as unique as France itself, is ready to be enjoyed.

    Tip: You can make the salad a little more special by adding a tablespoon of spicy or grainy mustard.

    Recipe 3: Regular meat salad with cheese and onions

    Available ingredients, simple preparation, easy recipe - that’s all that characterizes this meat salad. Although its qualities include unusual satiety and great taste, you will appreciate them yourself when you prepare this treat for yourself or your family. Dare and create, everything will certainly work out!

    • Beef (pork) – 320 gr;
    • Hard cheese – 120 g;
    • Salad onions (can be onions) – 120 g;
    • Vinegar – 4 tbsp;
    • Testicles – 4 pcs.;
    • Mayonnaise – 1 sachet;
    • Salt.
    1. Boil the meat fillet. First, we’ll go through it and cut off all the excess (veins, lard). Boil and cool. And later we will separate it into short fibers with our hands;
    2. Let's also cook the eggs. Boil and cool. Shred;
    3. Wash the onion and chop it into thin half rings. Fill it with cold water and 2 tablespoons of vinegar. Let's forget about it for a quarter of an hour, let it marinate. Later, remove it from the water, rinse it with water, and squeeze it out;
    4. Grate the cheese into thin shavings;
    5. Now let’s prepare our meat salad; its recipe involves a layered assembly. Therefore, we will first place the pickled onions on a large flat dish. Cover it with a narrow mayonnaise mesh. Next, lay out the boiled meat and also sprinkle with sauce. After this comes the turn of the chopped testicles, on top of them another portion of mayonnaise;
