Step-by-step recipe with photos

Prepare the necessary ingredients for the Greek chicken salad. Wash vegetables and lettuce leaves and dry with a cardboard towel.

Cut the cherry tomatoes in half.

Cut the pepper in half, remove the stalk, white partitions and seeds. Cut into large cubes.

Cut the onion into thin rings.

Tear the lettuce leaves with your hands and place on a flat dish or in a salad bowl.

In a bowl, combine olive oil, lemon juice, dried basil and ground dark pepper.

Cut the chicken fillet into thin slices and place on lettuce leaves. Add cherry tomatoes, cucumber, pepper and onion.

Cut the cheese into small cubes and add to the salad. Place olives on top. Pour dressing over salad.

Greek salad - Traditional step-by-step recipe

The key to a successful salad is the freshest vegetables, high-quality pitted olives, and good olive oil. Due to its own unique taste properties, it has become very famous. It has a huge number of varieties and is prepared differently depending on the region. So, we start making!

Ingredients:

  • Tomatoes - 3 pcs.
  • Cucumbers – 5 pcs (small size)
  • Bell pepper – 2 pcs.
  • Onions – 1 pc.
  • Feta – 250 gr
  • Olives - to taste
  • Olive oil – 5 tablespoons
  • Lemon juice 1 tbsp. spoon
  • Salt, pepper and oregano - to taste.

Manufacturing method:

1. First, prepare all the necessary ingredients.

2. Wash the vegetables, then start cutting them: cut the cucumbers into large pieces, cut the tomatoes in half and cut each half into approximately 5 pieces.

3. Peel the bell pepper from the seeds and cut into large pieces. For the most colorful dish, we took peppers of two colors: yellowish and reddish.

4. Chop the onion into half rings and mix the chopped vegetables in a plate.

5. Mix salt, pepper, lemon juice and olive oil.

6. Cut the cheese into cubes approximately 1-1.5 cm.

  • Fetax cheese – 200 gr
  • Lettuce leaves – 3 pcs.
  • Olives – 50 gr
  • Olive oil – 4 tbsp

  • Salt - to taste.

Manufacturing:

1. Prepare the necessary ingredients. Wash the vegetables.

2. Cut tomatoes, cucumbers and cheese into small cubes.

3. Coarsely chop the lettuce leaves or tear them apart with your hands.

The main highlight of the traditional Greek salad is that all the ingredients for this dish are chopped coarsely. During production, vegetables, cheese and olives in the salad are combined, but not mixed. This method is explained by the fact that the appetizer allows you to feel the taste of each ingredient, both as a whole and separately.

Due to the huge content of greens and vegetables, Greek salad is considered a dietary dish that can be a substitute for a real dinner. And in order to make the salad richer, but at the same time not load it with unnecessary calories, chicken meat is added to the dish.

Typically, in a Greek chicken salad recipe, the dressing is made from lemon juice, olive oil, and spices. Without losing the taste of the salad, balsamic vinegar is often used instead of lemon juice. For example, in Greece there is such a tradition - salad with the addition of balsamic vinegar is served only on festive occasions and only for noble guests.

  • Chicken fillet – 600 g.
  • Cucumbers – 3 pcs.
  • Soft cheese (Brynza or Feta) – 80 g.
  • Onions – 2 pcs.
  • Tomatoes – 3 pcs.

  • Lemon juice – 2 tbsp. l.

Step-by-step production

If necessary, chicken fillet is defrosted in advance, the meat is washed with cool water, and excess veins and skin are cut off. Cut the fillet into large proportional cubes.

A marinade is prepared for raw meat with the consistency of olive oil and freshly squeezed lemon juice, crushed garlic and spices. For piquancy, add mustard, reddish ground pepper or curry to the sauce.

Place the fillet pieces into a separate bowl, pour over the prepared dressing moderately and mix the chopped chicken meat with your hands a couple of times so that the marinade is better absorbed into it.

Cover the container with the fillet with plastic wrap and place the dish in the refrigerator for five to six hours. Turn the meat pieces over in the marinade a couple of times. There will be enough time for the fillet to mix with the smells of spices.

In a Greek salad with chicken, the meat will really turn out tasty and tender if you leave it to marinate in a cold place all night (that is, in the dark) . To do this, the finished pieces of fillet are washed with water, dried and fried in a frying pan or in a slow cooker until cooked. Transfer the meat to a plate and leave until completely cool.

The cheese is cut into medium-sized cubes. If to prepare a dish they use feta cheese - a cheese that in itself is salty, then the salad is not added at all. The catchy juicy color of vegetables harmoniously mixes with the delicious temptation of chicken meat, marinated and baked in the oven. A recipe for Greek salad with chicken will take a little more time to prepare than a traditional Greek salad with croutons and feta cheese, but the end result is worth it. You can exchange homemade chicken for a ready-made grill, in which case it will take less time to cook.

  • 2 pcs. skinless and boneless chicken breasts

  • 1 tablespoon lemon juice
  • 50 gr. olive oil
  • 2 cloves garlic, minced ahead of time
  • ¼ teaspoon pepper, dark ground
  • 3 medium cucumbers (cut into large cubes in advance)

  • 2 medium tomatoes, also coarsely chopped

  • 1 reddish onion, finely chopped into rings
  • Greens (lettuce, oregano)
  • 150 gr. balsamic vinegar
  • 100 gr. feta cheese or low-fat cottage cheese
  • 100 gr. pitted olives
  • Salt, pepper to taste
  1. Place the cooked brisket pieces into a baking bag. Create the marinade as follows: In a small bowl, combine lemon juice, oil, vinegar, oregano, garlic and pepper. Throw a small portion, about two tablespoons, as salad dressing. Pour the marinade into the bag with the chicken. Seal the bag and turn it over a couple of times so that the marinade covers the chicken one hundred percent. Marinate in the refrigerator for 4 to 24 hours, turning the bag in different directions from time to time.
  2. Meanwhile, in a deep bowl, mix cucumbers, tomatoes and reddish onions.

3. Drain the marinade from the bag with the chicken, then place it in the center on the bottom grid in the oven so that the swollen top of the baking bag does not touch its hot parts. Preheat the oven to 200 degrees and bake for 30 minutes. Remove the finished chicken and leave to cool.

4. On a cutting board, cut the chicken breasts into small pieces. Pour into a bowl with the remaining ingredients. If desired, decorate with greenery. Pour the sauce over the salad, sprinkle with feta cheese and olives. Salad ready.
