Cook the sweet syrup at a low simmer for 5 minutes, then remove from heat. 4. Carefully lower the prepared plums into the syrup, cover the pan with gauze or a clean towel and leave for 2 - 3 hours so that they give juice. Then bring the contents of the pan to a boil over medium heat and turn off. Leave for 8 – 10 hours or overnight (that is, in the dark) , covered with gauze.
5. After the time has passed, bring the jam to a boil again, boil for 2 - 3 minutes, removing the resulting foam, then turn off and leave for 8 - 10 hours. Repeat this function 1 more time.
