7 quince pie recipes

Quince pie is a delicious autumn pastry option. These fruits have a wonderful smell and a special mixture, because they are extremely suitable for making pies and bagels.

Basic recipe for savory baked goods

Quince sponge cake comes out surprisingly fragrant and tasty.

  • flour – 130 g;
  • sugar – ¾ tbsp.;
  • eggs – 3 pcs.;
  • quince – 4 medium-sized fruits;
  • baking powder – 1 tsp;
  • lemon juice, cinnamon - at personal discretion.
  1. Divide the fruits into slices, having previously cleared them of their thick skin. Cut into small pieces and sprinkle with a little lemon juice to prevent darkening.
  2. Beat eggs with sugar until fluffy.
  3. Sift flour with baking powder and cinnamon into it. Mix.
  4. Stir in the fruit pieces.
  5. Pour into a greased pan and bake for about 30-35 minutes until golden brown on top.

Let the charlotte cool for 10 minutes in the switched off oven, then a few more minutes on the table. All that remains is to place the product on a plate and sprinkle with sweet powder.

Hungarian quince pie

The pie looks so delicious that it’s hard to wait for it to cool.

  • quince – 300 g;
  • flour - half a kilo;
  • margarine – 250 g;
  • sugar – 200 g;
  • eggs – 3 pcs.;
  • salt.
  1. Grind the yolks with sugar (half the full amount) and margarine until white.
  2. Add salt and flour, vanilla if desired. Knead the dough.
  3. Grease the mold with oil and place the dough in it, forming sides on the sides. Place in a preheated oven for a third of an hour.
  4. Grind the fruits on a large grater.
  5. Beat the whites with the remaining sugar until stiff foam.
  6. Place the grated mixture and whipped egg whites on the crust. Place back in the oven and bake until golden brown.

Remove, let cool and cut into portions.

With added cottage cheese

Adding cottage cheese makes any baked goods especially tender and appetizing.

  • semolina – 4 tbsp. l.;
  • sugar – 6 tbsp. l. (halve quince and dough);
  • quince – 2 fruits;
  • cottage cheese – 0.6 kg;
  • sour cream – 100 g;
  • eggs – 2 pcs.;
  • baking powder – 2 sachets;
  • butter - a small piece;
  • cinnamon.
  1. Remove the skin and core the fruit. Cut into half rings.
  2. Melt the butter and simmer the quince slices in a frying pan, sprinkling them with sugar and cinnamon. This will take a quarter of an hour.
  3. Combine cottage cheese with eggs, sour cream, sugar and baking powder. Add semolina and leave for at least 10 minutes.
  4. Place the quince in the mold and pour in the dough.

Cook for approximately 40-45 minutes. Cool and only later carefully remove from the mold.

How to bake with kefir

Baking with kefir is considered the most economical.

  • semolina, sugar and drink - 1 tbsp each;
  • quince – 1 large fruit;
  • eggs – 3 pcs.;
  • flour – 0.5 tbsp;
  • baking powder – 10 g;
  • sunflower oil – 100 ml;
  • vanillin and salt.
  1. Beat the egg-sugar mixture, add vanillin and salt.
  2. Pour in the drink with oil. Stir and add semolina.
  3. Mix flour with baking powder and add to dough. Mix everything and let it sit for about a third of an hour so that the semolina grains swell.
  4. Grate the fruit on a large grater. Stir into the dough.
  5. Pour it into a greased mold.

Bake until golden brown. If the wood stick remains dry when checking, it is time to remove the product from the oven. Quince pie with kefir is ready!

Frisky quince pie in a slow cooker

The slow cooker recipe is very simple.

  • flour – 220 g;
  • honey – 200 g (can be replaced with sugar);
  • eggs – 2 pcs.;
  • butter – 60 g;
  • quince - about 350 g;
  • baking powder – 5 g;
  • vanillin and salt - to taste.
  1. Beat the eggs with salt until foam forms.
  2. Add honey and vanilla evenly.
  3. Combine flour with baking powder.
  4. Melt the butter and pour into the egg mixture. Add flour and stir.
  5. Cut the fruit into slices and place them in the greased bowl of the device. Fill with dough.
  6. Run the “Baking” program for 40-50 minutes.

Because the bowl of the device is quite deep, it is not so easy to pull out the product. It is recommended to use a braided wire for cooking vegetables and carefully turn the bowl of pie over. Then you will be able to remove the product outside without damaging it.

Puff pastries

Puff pastry pie is prepared in no time if you use a semi-finished product. The process of making such a base takes a lot of time and effort, so not everyone has the opportunity to do this. In the latter case, you can take the time to make a huge batch of puff pastry and freeze it in portions. Then there will always be a base for any baking in the freezer. But the easiest way is to purchase a package of ready-made puff pastry.

  • puff pastry – packaging;
  • quince – 3 fruits;
  • testicle – 1 pc.;
  • sugar – 2 tbsp. l.;
  • water – insignificant.
  1. Peel the fruit and cut into cubes.
  2. Create a syrup from sugar and water and boil pieces of fruit in it until soft. Drain in a colander and cool.
  3. Roll out the dough, place in a mold, form sides. Add the filling.
  4. Create strips from the remaining dough and place them on top in the form of a grid.
  5. Brush with beaten egg.

Bake until golden. Cool and dust with powder (if necessary).

Cooking with apples

The sweet and dense structure of quince is very well balanced by sour apples. This pie is for those who don't really like flour. There is not a lot of dough in this pastry, the main emphasis is on fruit, however, the pie comes out quite fluffy and airy.

  • flour – 180 g;
  • sugar – 200 g;
  • quince – 0.6 kg;
  • apples – 0.6 kg;
  • eggs – 4 pcs.;
  • baking powder – 5 g;
  • butter - a piece.
  1. Prepare and cut fruit.
  2. Beat the eggs with sugar until the mixture turns white and triples its size.
  3. Add flour with baking powder. You don’t have to add baking powder to this dough, but since the recipe calls for a lot of fruit inside, it’s better to play it safe.
  4. Add fruit and stir. The test here is minor, but that’s how it’s intended.
  5. Grease the mold with butter, sprinkle with sugar and pour the dough with fruit into it.
  6. Bake for approximately an hour. Then pierce with a toothpick. If the cake is still a little wet, wait 10-15 minutes.

Quince pie - a simple and delicious recipe

I baked such a fragrant and delicious quince pie last weekend that I wanted to share the recipe for making it with you.

My friend sent me this recipe not long ago, but only as a recipe for a delicious apple pie.

And since this year I have a large quince harvest, I decided to bake a pie with it

The result simply shocked me; I had never eaten such delicious food!

The usual recipe for a savory quince pie

The pie is made from sour cream dough and filled with sour cream filling, everything is quite simple.

So, for production we will need:

  • flour - 2 cups and 2 spoons
  • sour cream – 400 gr
  • margarine (or butter) - 150 g
  • baking powder – 1 teaspoon (or ½ teaspoon of slaked soda)
  • sugar – 1 glass
  • egg – 1 piece
  • quince - 4 pieces.

Preparing the dough

Melt margarine and cool.

Add ½ cup of sour cream to margarine and stir. I usually stir with a fork, it’s even more convenient and easier than stirring the dough with a spoon.

Sift 2 cups of flour and mix with baking powder.

Pour the flour into the watery mixture, stir and knead into a dough. The dough comes out soft and elastic. It rolls out quite simply.

Fruit preparation

Wash the quince, cut out the core and cut into slices.

Sour cream filling

Carefully mix a glass of sugar with 2 heaped tablespoons of flour, pour in a glass of sour cream and 1 lightly beaten egg. Mix everything well.

Forming a pie

Grease the mold with vegetable oil and line it with parchment (instead of parchment, I use whatever paper I have on hand and grease it with vegetable oil).

Roll out the dough into a round cake and place it in a mold, forming the sides.

Pour chopped quince onto the dough and smooth it out.

Pour the sour cream mixture onto the quince.

Bake the quince pie in a previously preheated oven at a temperature of 200-220 degrees.

Since the filling is watery, the cake takes quite a long time to bake; mine spent 1 hour and 10 minutes in the oven. And it was eaten...virtually instantly.

Remove the finished pie from the oven, let it cool, and then remove it from the mold.

It looks like a very ordinary homemade pie. And the taste is magical! Such a fragrant quince pie and the taste is simply wonderful!

I also like to bake a Pancho cake with quince. This is something fabulously delicious! And quince jam is the most delicious in the world!
