Instant skillet pizza is our favorite quick homemade snack. Only earlier I and all my relatives prepared it slightly differently: 2 tablespoons of mayonnaise, 2 tablespoons of sour cream, 4 tablespoons of flour and one egg for the watery dough and for the inside, everything that is in the refrigerator - sausage, tomatoes, cucumbers, cheese , mushrooms, greens. But some ingredients can be changed at your discretion. My mother, for example, likes it without eggs; instead of sour cream, you can use one mayonnaise in an increased proportion. But this time I came up with a slightly different recipe. It’s called when you can’t go out to the store, the kids are dozing, and you need to whip up a quick meal from what’s in the refrigerator. It turned out quite well too.

By the way, I’ll immediately outline several aspects. The frying pan must be deep, large and of good quality, preferably new and with a non-stick coating so that the pizza does not burn. And you need to add refined, flavorless vegetable oil and absolutely insignificantly, about 2-3 tablespoons and distribute it moderately throughout the entire frying pan, lightly greasing it, as for making pancakes. So that the dough does not drown in oil. Now you can start.

To make a watery dough, we need a deep bowl.

Let's prepare all the necessary ingredients: mayonnaise, flour, drink, tomato paste, processed cheese.

Next, squeeze out mayonnaise, about 5 tablespoons.

Add the drink, about 8-9 tablespoons.

Add 5-6 tablespoons of flour.

Add a pinch of salt to the dough itself.

Then take one raw chicken egg.

Let's break it into a bowl and start stirring well.

Mix well until smooth.

Now let's prepare the frying pan for production. Pour a couple of tablespoons of sunflower oil and distribute well over the entire surface of the frying pan.

Now put the finished batter on a greased frying pan.

Distribute it sparingly over the bottom of the pan.

I love tomato-based pizza, so I used homemade homemade tomato paste to make it.

Add 2-3 tablespoons of tomato paste.

Spread the tomato paste moderately over the surface of the dough.

Then we'll take care of the inside. Let's take out and cut the boiled chicken into smaller pieces. Not enough, 150-200 g.

Pour the chicken onto the dough.

Next, take 1-2 new tomatoes and cut them into thin rings as a reference. But for me it was frozen tomatoes.

Next, add salt and pepper to the pizza to taste.

After that, grate the processed cheese on a small grater. As a standard, this is a hard type of cheese, but we had a melted one, which never completely melted)))

Sprinkle grated cheese on top of the pizza.

Cover the pizza with a lid and place the pan on a very leisurely fire for 10 minutes.

After 10-15 minutes, the pizza has arrived one hundred percent, you just need to keep an eye on it from time to time so that the bottom of the pizza does not burn.

There is a minimum amount of time, ingredients and money, and the pizza comes out no worse than store-bought or ordinary homemade pizza on a baking sheet in the oven.

If you need to quickly bake a pizza, for example, before guests arrive, and to ensure it turns out delicious, it is better to cook the dough with kefir. Kneading and maturing the kefir base takes no more than half an hour. With all this, the shortbread will turn out just as soft and airy as according to the traditional recipe with yeast. You can use any filling you like, but the most important thing is that the smell of yeast, which children don’t like so much, will be absent. Kefir pizza can be baked in the oven or in a frying pan; there are universal dough recipes. And if you adhere to the principles of proper nutrition, replace the wheat flour with corn, oat or rice flour and enjoy your favorite baked goods without harming your figure.

  • drink (fresh or sour - no difference) - 1 cup;
  • wheat flour, premium – 2.5 cups. (approximately 350 g);
  • salt, soda - 0.5 tsp each;
  • sweet sand – 1 tsp;
  • large chicken egg - 1 pc.;
  • Sunflower oil, refined – 3 tbsp. l.

  1. It is convenient to knead the dough in a bowl with high sides. Pour a slightly heated drink into it, beat in an egg, dump in salt and sugar. Stir until the mixture is almost homogeneous. Required ingredients (for 2 pizzas d=25-28 cm):

  • drink (homemade or store-bought) – 200 ml;
  • butter (can be replaced with margarine or vegetable oil) – 100 g;
  • chicken egg (category C-1) – 1 pc.;
  • sugar – 1 tbsp. l.;
  • salt – 0.25 tsp;
  • baking soda – 0.5 tsp;
  • premium flour – 350-400 g.

How we will cook:

  1. Melt the butter, cool slightly. Add the drink, salt, soda and granulated sugar to it. Mix with a fork or whisk.
  2. Beat in the egg and mix again.
  3. Pour the flour into a bowl (sift it in advance) and start stirring.
  4. When the dough comes together, transfer it to the table and continue kneading by hand, greasing your palms with sunflower oil as necessary. Knead for 4-5 minutes, then put under cling film and let it rest for 5-10 minutes.
  5. Form 2 pizza crusts from the rested dough, brush with sauce, and place your chosen filling on them. Bake for 20-25 minutes at 200 degrees in a hot oven.

How to make thin pizza dough without yeast and eggs - a regular recipe

Ingredients for 2 huge pizzas:

  • drink – 300 ml;
  • salt - a couple of pinches;
  • soda – 0.5 tsp;
  • vegetable oil – 3 tbsp. l.;
  • high-grade flour - 2 cups.

Manufacturing method step by step:

  1. Place the drink on the stove and heat it slightly, stirring so that it does not have time to curdle. Add salt, soda, mix well with a fork. Place half of the sifted flour into a bowl.
  2. Mix the mixture with a spoon or fork, add unscented butter.
  3. Add the second part of the flour evenly and knead into a loose, elastic dough. Round the lump and wrap it with film. Leave for 40-60 minutes at room temperature. This dough can be prepared for future use, in which case it must be stored in the refrigerator (up to 3 days).

After about an hour, you can preheat the oven and begin shaping and baking the pizza.

Easy recipe for kefir yeast dough with dry yeast for baking in the oven

List of components:

  • drink (natural yogurt, matsoni, etc.) 200 ml;
  • flour – 3-3.5 cups;
  • water (milk) – 50 ml;
  • chicken egg (large) – 1 pc.;
  • dry (instant) yeast – 8 g (1 tsp without a slide);
  • salt – 0.5 tsp;
  • sugar – 1 tbsp. l.;
  • soda - a pinch;
  • vegetable oil (can be replaced with margarine) – 50 g.

How to create - a step-by-step recipe:

  1. Mix yeast with water and sugar. The liquid does not have to be either hot or cool. The standard is 25-37 degrees. Let the yeast mixture sit for 7-10 minutes until it begins to play. In the meantime, mix the slightly warm drink with soda and salt and stir. The mixture will begin to foam slightly. Thanks to the soda, the pizza will not have a sour kefir taste. Beat in the egg and whisk with a fork until smooth. Sift the flour into a bowl with the kefir mass, pour in the yeast that has begun to play.
  2. Pour out the oil. You can use vegetable oil or melt butter. You can also cook with margarine.
  3. Knead the dough by hand or using a kitchen machine. It will not be very tight, soft, pleasant to the touch. Grease its surface with oil, cover with a napkin or film and leave in a warm place to rise.
  4. After 1-1.5 hours it will greatly increase in volume. It needs to be kneaded down, and you can then cook the pizza. It is also excellent for baking pies and pies.

What we will cook from:

  • drink (2.5% fat content) – 450 ml;
  • soda – 1 tsp;
  • chicken eggs, large – 2 pcs.;
  • salt – 1 tsp;
  • sweet sand - 1 tbsp. l.;
  • deodorized oil – 2 tbsp. l.

Cooking procedure:

  1. Since the dough is made very quickly, it is better to start making pizza from the inside. And when it is one hundred percent ready, start kneading. Warm the drink to room temperature, add soda. Stir and leave on the table for 10 minutes to complete the quenching reaction.
  2. In the meantime, in a separate bowl, mix the eggs with sugar and salt with a whisk until the grains dissolve.
  3. Pour in the oil and stir again.
  4. The kefir-soda mixture will become foamy in 10 minutes. Pour the eggs into it and mix.
  5. Add flour, adjusting the amount along the way. The mass should turn out approximately like pancakes; in thickness it will resemble rich sour cream.
  6. Place a thick-bottomed frying pan over low heat and grease with a thin layer of oil. When it warms up, pour in a portion of the dough (not more than 2 cm high) and add the filling. Bake covered on low heat until done.

Pizza can also be cooked in the oven at 180 degrees. The dough should be distributed in an even layer on a baking sheet lined with baking parchment, and the insides should be distributed on top. Bake for 20-30 minutes.

Probably each of us has our own favorite recipe for making pizza dough and a delicious, juicy interior. I will share an easy recipe for dough with kefir and mayonnaise. The finished dough comes out soft and fragrant. But you can choose the filling to your own taste.

To make pizza with kefir and mayonnaise, take the following products.

To knead the dough, take an acidic drink, then the finished pizza will be the most airy. You can take a low-fat or 1 percent drink. Pour it into a deep mixing bowl. Pour in baking soda. Stir and let rest for 5-7 minutes so that the soda reacts with sour kefir.

Add mayonnaise. I used it with a fat content of 30 percent. Stir.

Add salt and herbes de Provence. You can experiment and add other spices. Stir.

Add sifted flour.

Ingredients (for 4 huge pizzas):

  • drink (or milk) – 300 ml;
  • mayonnaise – 150 g;
  • chicken egg – 3 pcs.;
  • vegetable oil (preferably olive) – 150 ml;
  • sugar – 150 g;
  • salt – 1 tsp;
  • flour – 700 g;
  • dry yeast – 1 tbsp. l.​

Knead the dough in a bread machine (without dough). I remember the generally accepted rule: watery ingredients are added first, dry ingredients later.

Pizza making sequence

1. Roll out the dough, place it on a baking sheet, greased with oil (option: sprinkle with a thin (!) layer of flour). The thickness of the dough is at your discretion.

2. Lightly brush the surface of the dough with olive oil (don't overdo it!) and prick it in several places with a fork.

3. Spread with tomato sauce (store-bought or homemade).

4. You can additionally grease the surface with mayonnaise or another sauce, for example, snow-white Bechamel sauce.

5. Place a small layer of grated cheese on the sauce. This layer in the finished pizza will stretch (unlike the top layer of cheese, on which an appetizing crust appears). If there isn’t a hell of a lot of cheese, then we leave it all for the “cap”. Next comes the interior.

2. With chicken: ketchup, mayonnaise, onion, pickled cucumber, mushrooms, smoked chicken fillet, hard cheese.

3. “Four cheeses” (non-classic version): ketchup, mayonnaise, mushrooms, Mozzarella cheese, Provolone cheese, Adygei cheese, Parmesan cheese.

4. With seafood: Sirtaki cheese, reddish onion, crab sticks, olives, seafood cocktail, hard cheese.

Baking pizza

It is better to use a narrow pizza pan or a narrow baking sheet, this way the dough will bake faster and the top layer of cheese will not have time to dry out into a tasteless crust.

The oven must be preheated to the maximum possible. Industrial pizza ovens reach temperatures of up to 500°C, so don't worry about overdoing it. If you are still afraid of very high temperatures, set it to 220 °C. The main thing is to pull out the finished pizza just in time) The signal is the “gurgling” of the top layer of cheese. On average, pizza bakes for 10-15 minutes.

Pizza making mistakes

  • Do not pour too much sauce - the base will become soggy;
  • It is not allowed to put a very thick layer of the inside - the base will not be baked and remains damp;
  • You should not put pizza in a cool oven - the base will have time to absorb a lot of sauce (even if it was used in moderation) and will become soggy;
  • It is not allowed to keep pizza in the oven for a long time;
  • You are not allowed to eat only pizza all the time, even if you cook it luxuriously and understand a thousand recipes - you risk receiving the title “Miss (Mrs.) Donut” or “Mr. Fat.” Everything is great in moderation!
