To reduce the number of calories, you need to try to get rid of excess oil. To do this, after frying, the pancakes can be placed on paper towels and absorbed the fat.

Thanks to the additives, there are a lot of pancakes, approximately 18-20 pieces, depending on the size. So it’s enough for a huge family. They store well, so they can be kept in the refrigerator for a long time, heating them in the microwave or in a frying pan as needed.

Peel and wash the onion. Cut it into 6 parts and place it in a blender bowl. Chop the onion. Instead of a blender, you can use a meat grinder with a small mesh.

Let's prepare the meat. Wash the chicken fillet, remove membranes and cut into cubes. Just like the onion, grind the meat into homogeneous minced meat.

In a deep, dry bowl, combine the ingredients crushed in a blender.

Beat two eggs into a separate bowl. Pour in milk at room temperature. Using a whisk, combine the ingredients into a homogeneous mixture.

Pour the milk-egg mixture into the minced meat with onions. Mix the dough thoroughly with a spoon.

Then add sifted wheat flour, salt and spices. If desired, you can use dried herbs, for example, basil or thyme. I add a prepared chicken spice mixture.

Mix until smooth. Grate the cheese coarsely so that it can be felt in the finished pancakes. Let's add it to the dough.

Let's mix everything again.

We will place the finished dough by the tablespoon into a frying pan with perfectly heated sunflower oil. Naturally, it must be cleaned so as not to spoil the taste of the dish.

When the chicken pancakes are golden on one side, turn them over to the other, using a spatula or fork to help.

Place the finished products on a plate with napkins.

You can serve chicken pancakes with any side dish. I prefer mashed potatoes or peas, boiled rice or couscous. I think the dish would go well with pasta or a salad of new seasonal vegetables. And just with a slice of fresh bread and sour cream it’s very tasty and satisfying!

Step-by-step recipe description

First you need to prepare the pancakes. For any kind of insides, they must be thin and elastic.

In a deep bowl, beat the eggs with a whisk until light foam forms. You can use the mixer at low speed.

Pour in some of the milk (about 100 ml) and begin to add flour in small portions, stirring constantly so that there are no lumps.

Sift the flour for pancakes so that they are as airy, elastic and soft as possible.

Knead the dough until smooth.

Pour the remaining milk into the bowl. Add warm water and oil.

Leave the dough for 10 minutes at room temperature to make it as homogeneous as possible.

Mix the pancake batter again.

The mixture resembles watery sour cream. If the dough is thick, you need to add a little more water.

Bake thin pancakes in a hot frying pan. There is no need to grease the pan with oil, because it is in the dough.

One pancake takes approximately 2-3 tbsp. test.

Let's start making the insides for the pancakes.

Wash chicken fillet well under running water.

Boil the fillet in boiling water with the addition of a small amount of salt. Let cool.

Cut the meat into small cubes. You can divide it into thin fibers with your hands and then cut it.

Peel the onion and cut it very finely. If you wish, so as not to sting your eyes, you can briefly soak the peeled onions in cool water.

Place butter in a frying pan and fry the onion until golden brown, stirring constantly so that it browns on all sides and does not burn. The onion should become soft.

Grate hard cheese on a large grater or cut into small strips.

Mix chicken and fried onions.

Pass 1 clove of garlic through a garlic press or chop it finely and add it to the pan.

To make the inside juicy, add light sour cream and grated cheese. Mix all ingredients well.
