    Apart from the speed of production, such express jam has at least one fundamental advantage: it requires relatively little sugar, just 60% of the weight of the berries. Since sugar is not boiled, the berries retain a very pure, fresh taste, completely without the aftertaste of caramel that characterizes even slightly overcooked jam.
