The most necessary recipe for first courses in our country is cabbage soup made from fresh cabbage with pork. And after a string of holidays, it is doubly needed. The body, sluggish from culinary masterpieces and complex food combinations, asks for something familiar, understandable, ordinary and satisfying. Each housewife has her own recipe. Cabbage soup is prepared not only with meat, but also with vegetable broth. Cabbage soup made with pork turns out to be very rich. Pork bones are an absolutely perfect choice for broth. What will we need for cabbage soup?

  • pork (ribs) – 700 g;
  • water – 2.5 l;
  • onions – 1 pc.;
  • carrots – 2 pcs.;
  • fresh cabbage – 350 g;
  • sunflower oil – 2 tbsp. l.;
  • potatoes – 2 pcs.;
  • dark peppercorns – 5 pcs.;
  • aromatic peppercorns – 5 pcs.;
  • bay leaf – 3 pcs.;
  • salt, dill - to taste.

How to cook cabbage soup with fresh cabbage on pork

  1. We wash the pork bones in cool running water. Place them in a saucepan and fill with 3 liters of water. Place on fire and bring to a boil.
  2. Stir the broth, try to turn the pork over - the more foam rises to the top, the easier it is to collect it. Reduce the fire. We watch the broth and don’t let it boil violently.
  3. While it's cooking, let's take care of the vegetables. Peel the onions and carrots. Cut the onion into small pieces, grate the carrots on a medium grater.
  4. Simmer onions and carrots in a frying pan with sunflower oil until soft. When stewed, they give off a very tasty, fresh smell, and the dressing will give the cabbage soup not only a wonderful color, but also a unique smell.
  5. We chop the white cabbage into narrow strips, not very long - we cut them into the smallest pieces so that they do not slip off the spoon.
  6. The vegetables are prepared, the meat is cooked, it just falls off the bone. Remove pork bones from the broth.
  7. Separate the meat from the bone and cut into small pieces.
  8. Peel the potatoes, chop them as desired, and place them in the pan. Cook until half cooked.
  9. The potatoes have become softer, but are not yet cooked – it’s time to throw in the stewed onions and carrots.
  10. Next we add shredded fresh cabbage and pieces of pork. Stir our soup, add salt and pepper, add bay leaf.
  11. Cook over low heat until done. Let's try - if the potatoes are cooked, you can turn off the heat. Even if the cabbage is a little hard, when the cabbage is steeped, it will reach a suitable condition, but it will not turn into rags, which are very easy to obtain by digesting the freshest cabbage.
  12. Wash the greens, parsley, dill. Blot with a napkin. Chop finely and transfer to a saucepan. Cover with a lid and let it brew.

Cabbage soup with pork is a more popular recipe, although with other types of meat this soup always comes out tasty, fragrant and rich. Pork ribs are excellent for cabbage soup; they provide a good broth, and there is enough meat for soup. Making cabbage soup is not as difficult as it might seem to novice cooks. So, for example, for me the most difficult thing about this is shredding cabbage.

So, to make cabbage soup with pork, prepare: pork (I took the top part of pork ribs, from which the loin was partially cut), potatoes, water, salt, white cabbage, carrots, onions, sunflower oil, tomato paste, garlic, bay leaf, ground black pepper.

Cut the pork into portions, place it in a saucepan, cover with cool water and place on the stove. Remove the foam that forms during the boiling process, let the water boil, then add salt to the broth and cook the meat for about 20 minutes. Meanwhile, peel the potatoes and cut into cubes.

Add the potatoes to the pan and cook the broth until the potatoes are completely cooked. Chop the white cabbage as thinly as possible.

Fry onions (small cubes) and carrots (large grater) in sunflower oil, add tomato paste and fry everything together for a few more minutes. Place the cabbage in a saucepan and let the broth boil.

Boil the cabbage soup until the cabbage is soft (5-6 minutes is enough, although it all depends on the cabbage itself), then transfer the tomato sauce into the pan.

Let the cabbage soup boil again. Boil them for about 5 more minutes, add chopped garlic, bay leaf, ground pepper. After a minute, turn off the stove - the cabbage soup and pork are ready!

Serve cabbage soup with pork or herbs, or sour cream, or both - whatever you like.

In recipes they write about parsley root, but personally, I most often forget about it or it is simply not available. I love preparing delicious cabbage soup from fresh cabbage with meat, potatoes and tomatoes, and I will write about this version of the cabbage soup recipe.

How to cook cabbage soup from fresh cabbage with pork and tomatoes

  • Ingredients for 3 liters of water:
  • meat with bones - 500 gr.,
  • cabbage - 200 gr.,
  • 1 medium sized carrot
  • 1 medium onion,
  • potatoes - 2 pcs. medium or 4-5 small,
  • half or 3rd part of bell pepper,
  • tomatoes - 2 pcs. medium (you can put frozen tomatoes or 1 tablespoon of tomato paste),
  • salt, black pepper to taste (preferably freshly ground),
  • bay leaf - 2-4 leaves,
  • dried or fresh parsley and dill, if available (you can use cilantro, basil or hop-suneli seasoning).

Vegetables for cabbage soup

Let the broth simmer, placing the meat and bones in cool water. The meat must be cooked for at least 45 minutes to 1 hour over low heat. Place bay leaves in a saucepan with water and a level dessert spoon of salt. We remove the foam after boiling or do not remove it - it doesn’t matter. We wash and clean the vegetables. From a fork of cabbage we cut off a piece of 200 grams. We begin to add vegetables to the pan with broth when the meat has been cooked for at least half an hour, but it is more convenient to remove the cooked meat after an hour of cooking, and then add the vegetables later. But this is also not important.

Cut the potatoes into cubes or thin slices and add them to the broth. Chop the carrots with a knife into long, thin slices or in any other way, as you like. It is convenient to use the shredding device. Cut the onion into 4 parts and slice thinly. We also cut the bell pepper.

Saute the carrots and onions or lightly fry them in sunflower or melted butter (you can also use any animal fat). Add bell pepper to the pan and simmer everything together. If we use the freshest tomatoes, cut them into small slices and add them there. Instead of tomatoes, add tomato paste to the frying pan and heat everything together.

In the winter, I have frozen tomatoes; I take them out of the freezer when I start cooking the broth. It is better to defrost frozen tomatoes in a frying pan separately; in principle, they can be thrown into the pan undefrosted, but only when the potatoes are cooked.

Shred the cabbage using any method you like, as long as thin, not very long pieces come out, throw it into the pan and bring to a boil. Next, add the stewed onions, carrots and bell peppers, ground black pepper, dry dill, parsley or other seasonings to the pan. Or first add a dressing of onions, carrots, peppers and tomatoes into the pan, and then cabbage. After adding the cabbage, cook for another 10 minutes or a little more.

Separate the cooked meat from the bones and cut into small pieces.
Place the meat into the pan, stir with a ladle and bring to a boil. Alternatively, the meat can be cut into portions and later placed on each plate. Chop the garlic and just before the end of cooking, add it to the cabbage soup, mix again with a ladle and bring to a boil.

That's it, the delicious cabbage soup is cooked.
Turn off the heat and leave the cabbage soup in the pan for 10 minutes, or eat it right away if you really want to. Bon appetit!

Ingredients for 3 liters of borscht:

  • Pork (fillet) – 300 g;
  • Young white cabbage – 300 g;
  • Potatoes – 4 pieces;
  • Onions (large) – 1 piece;
  • Carrots (large) – 1 piece;
  • Dill – 4 sprigs;
  • Ketchup – 3 tablespoons;
  • Bay leaf – 1 piece;
  • Vegetable oil – 6 tablespoons;
  • Ground pepper and salt - to taste.

Time to make cabbage soup: 1 hour 15 minutes.

How to cook cabbage soup from fresh cabbage with potatoes and pork

1. Wash the pork pulp (shoulder), place in boiling water (2-2.3 liters), add bay leaf, salt (1 level tablespoon) and cook, skimming the foam from time to time, for 40 minutes. If the liquid boils away too much, add water. Pork can be taken on the bone, but the cooking time will increase to 1 hour.

2. While cooking the meat, peel the vegetables. Cut the cooked potatoes into cubes, finely grate the onion, and coarsely grate the carrots.

3. Place the finished meat on a plate, add the potatoes to the fragrant broth and cook over low heat for 8-9 minutes.

4. While we cook the potatoes, add the cooked onion to the oil and fry for 3-4 minutes, stirring, until it becomes soft. If we use fatty pork for production, then the amount of oil can be reduced to 4 tablespoons.

5. Cut the young cabbage into strips, but not very narrow. The leaves are very tender and cook quickly.

6. Add the prepared grated carrots to the onion and fry, stirring for 3-4 minutes. Add ketchup to the vegetables, stir and heat for a few minutes. You can use whatever ketchup you like, or replace it with tomato paste (1 tbsp). It will add sourness to the cabbage soup, and it will not be bland.

7. Once the potatoes become soft, add the cabbage to the broth.

8. Immediately put the fried vegetables into the pan. After boiling, cook for 12-15 minutes over low heat until the straws become soft. Let's taste for salt.

9. Cut the boiled pork into cubes or divide it into pieces along the fibers, place in fragrant cabbage soup, add finely chopped dill and ground pepper. Bring the soup to a boil and remove from heat. The meat can be added immediately to the pan or in small portions into plates when serving.

10. Pour the most delicious cabbage soup from fresh young cabbage with pork into bowls, add herbs, sour cream or mayonnaise if desired, and serve immediately with the freshest rye bread.

Tips for making cabbage soup:

  • Vegetables can be added to the broth with meat 20 minutes after the start of production and cook everything together. We remove the pieces of pork from the prepared cabbage soup and chop them before serving. It is better to cook meat on the bone separately, as per the recipe, because it will be difficult to control the thickness of the soup.
  • Using this method, you can prepare soup with the hardest cabbage (winter varieties). Add it immediately with potatoes and cook for 30 minutes.
  • You can add more greens to the cabbage soup and vary it with parsley and green onions.
