Now we will prepare a cupcake with cherries, the recipe for which is very simple, so even novice housewives can handle it without any problems.

Tender, soft and sweetish cake dough in this homemade cake mixes perfectly with the pleasant, slightly tart sourness of cherries. For me personally, this is a 100% harmony of tastes. By the way, you don’t have to take the freshest cherries - frozen seedless berries are also excellent. If you wish, you can sprinkle the finished cherry cupcake with sweet powder or decorate it with any other decor.

Making a dish step by step:

To make the most delicious cherry cake, take wheat flour (I have the highest grade, but you can use the first grade), cherries, butter, sweet sand, chicken eggs, milk (any fat content), baking powder and a pinch of vanillin (or a teaspoon of vanilla sugar ) for smell.

First you need to prepare the berries - using any convenient method to remove the seeds. I use this ancient device, but you can use a pin, a hairpin, a teaspoon, or just your fingers. As a result, you should get 250 grams of pitted cherries. In winter, you can make this kind of cake with frozen berries - it won’t turn out any worse. True, when you completely defrost the cherries, be sure to drain the juice from it (just drink it). As an option, you can use unfrozen berries - then put them in the dough directly like ice.

Turn on the oven to heat up to 190 degrees. Now let's start making the cake dough. Place 150 grams of soft butter (take it out of the refrigerator in advance) in a bowl, add 170 grams of sugar and vanilla (if you like its smell).

Carefully grind the butter and sugar until a relatively homogeneous mass emerges. After this, add 3 chicken eggs one at a time - when one is completely mixed into the oil, add the next one.

As a result, you should end up with a warm oil mixture that is fairly homogeneous. I beat everything with a mixer (whisk attachment) at high speed for about 5 minutes. Add 80 ml of milk at room temperature and mix it into the mixture.

After this, add 270 grams of wheat flour and 2 teaspoons (without a slide, in other words, under the knife) of baking powder. We mixed them in advance and sifted them through a sieve.

Mix all the ingredients to form a smooth and shiny cake batter. Of course, cake dough is usually not kneaded for a long time so that the crumb of the finished product does not come out dense and clogged, but there is quite a significant amount of baking powder, so the cake will be very tender and airy. Based on the mixture, the dough will not be very thick, but at the same time it will hold its shape perfectly - I collected it with a spatula towards the center and it did not spill.

All that remains is to form the cupcake with cherries. We take a mold of a suitable size (not necessarily a round one with a hole like mine) and grease it with vegetable or butter (in the second case, be sure to sprinkle with flour so that the dough does not stick). We begin to pour the dough into the mold in several stages.

Alternate dough and berries. Naturally, you can immediately stir cherries into the dough, but I don’t like it that way - the berries will give juice and the dough will already be colored before it even starts baking.

So fill the entire form with dough and cherries, leveling everything with a spoon or spatula.

Bake the cherry cupcake in a preheated oven at 190 degrees on medium level for about 50 minutes. We check readiness not only visually (the top of the cupcake will become a pleasant golden color), but also with a dry splinter. To do this, take a wooden skewer or toothpick and stick it into the highest space of the cupcake. If the stick comes out dry, the cherry cake is ready.

Let the finished baked goods rest in the pan for about 5 minutes, after which you can remove the cake with cherries. I cool the baked goods on a wire mesh so that the bottom does not get wet from condensation.
