Greek fish in the oven - 3 traditional recipes

Do you like fish? I treat this product with trepidation, so I collect recipes and store them carefully. I suggest you prepare Greek fish, cooked in the oven, which you won’t be ashamed to put even on a formal table - it will decorate and amuse you with its excellent taste.

I don’t understand whether it’s true or not, but they say that the dish has nothing to do with Greece, and the culinary specialists of this country will be very surprised if they find out that this dish is attributed to it. What happens! And what’s even more fascinating is that the fish, prepared under a vegetable pillow and a cheese crust, is the state dish of Polish cuisine. What’s even funnier is that the famous Polish fish, the recipe for which I already introduced you to, is not considered popular among the Poles; they have no idea about such a dish. This is such a metamorphosis, friends!

How to cook Greek fish in the oven

A fragrant and appetizing dish, few calories, despite the fact that one of the ingredients is cheese - but there are a lot of vegetables that balance the nutritional value.

As always, I will not leave you without advice, so that when you prepare a delicious dish for the first time, you will not be disappointed:

  • Sea fish with a snow-white fillet, which has few bones, will go unsurpassed. In addition, it mixes better with vegetables. These are cod, tilapia, perch.
  • If the fillet pieces do not fit on the baking sheet, make a two-layer dish.
  • Do not overcook the fillet in the oven - the best cooking time is 25 minutes
  • Do not replace sour cream with mayonnaise, it will add calories; in addition, in this dish, sour cream will better emphasize the taste of the fish.
  • For spicy lovers, I advise you to increase the amount of garlic, but don’t get too carried away. The most striking taste will be given to the dish by tomato or cream sauce.

Potatoes and rice are an excellent side dish. But, by the way, when cool and without any side dish, Greek fillet is also amazingly tasty.

What vegetables can you add:

To enhance the vegetable component, I advise you to add corn, sweet peppers, cauliflower, and broccoli to the tomatoes. But a more common addition is carrots.

An omelet is a good addition to a Greek dish - fry it thinly, cut into small pieces and place on a baking sheet along with other products.

Greek fish - traditional recipe

The recipe is considered a classic, but if you think that there are not enough vegetables, read the recipe below. If you want the dish to come out with a golden brown crust, before baking, lightly sprinkle the top with breadcrumbs, although they are not provided for in the recipe.

  • Fillet – 500 gr.
  • Sour cream – 150 gr.
  • Tomatoes – 2 pcs.
  • Hard cheese – 200 gr.
  • Garlic – 3 cloves.
  • Onion – 1 pc.
  • Lemon – ½ part.
  • Greens, favorite spices.
  1. Cut the fish, separate the fillets and make several portioned pieces, not very small - 4 - 5 cm.
  2. Sprinkle with lemon, season with spices: I usually have different types of pepper, I don’t add the rest so as not to overwhelm the taste of the fish itself. Leave to stand for 10 minutes and then fry a little.
  3. Set aside and work on the vegetable pad.
  4. Chop the tomatoes, garlic (it’s better to squeeze it in a garlic press) and herbs, grate the cheese. Chop the onion and fry it slightly. Stir everything (put only half of the cheese, the rest will go on top), add sour cream.
  5. Divide the vegetable pad into two parts. Place one on a baking sheet, then place the fillet and place the second part of the vegetables on top.
  6. Sprinkle with remaining cheese and breadcrumbs for a delicious crust and place in the oven for 25 minutes.

You can’t necessarily create a Greek delicacy in the oven; from time to time I simply cook it in a frying pan; in this case, the dish must be covered with a lid and simmered for 5–7 minutes.

Fish with carrots and onions

It can be created according to a traditional recipe by adding huge carrots and onions. If you want even more vegetables, add cauliflower, broccoli, corn, and bell peppers.

Roast your favorite vegetables and add to the pad.

Greek fish marinated with carrots and onions - traditional recipe

Fish marinated with carrots and onions according to the traditional recipe is indescribably delicious. This recipe with vegetables is distinguished by its incredibly balanced taste, speed of preparation and juiciness of the finished dish.

This dish also has another name: “In Greek”. It is this method that has the status of traditional.

It should be noted that nowadays it is not so common to cook fish with marinade in Greek. But in vain, in my opinion - this dish is worth preparing more often. Fragrant, tasty, warm - there are not all the adjectives to describe this dish. It's worth experiencing once rather than hearing a lot.

The uniqueness of this dish is that it is delicious either hot or cold. Therefore, you can cook it more and not be embarrassed. After all, having eaten it hot, it is necessary that it remains for the second day. Differently. when you try it cold.

Methods for preparing this dish may vary slightly among different sources. But this does not change the essence. The dish always comes out very appetizing and tasty.

I will outline for you the recipe with the full composition of ingredients, as expected. But if suddenly there are no tomatoes, replace them with salted ones or tomato paste. Experiment, maybe you will get your own recipe, even tastier.

Greek fish with marinade

  • fillet of any sea fish 700-800 gr.
  • onions 4-6 pcs.
  • carrots 4-5 pcs.
  • tomatoes 3-4 pcs.
  • tomato paste -2 tbsp. spoons
  • snow-white dry wine -0.5 tbsp.
  • sugar - 0.5 tsp.
  • vegetable oil
  • salt, reddish pepper, ground dark pepper.
  • rosemary, thyme, bay leaf.
  • flour 2-3 tbsp. spoons.

Cooking vegetables in marinade

  1. Cut the onion into thin half rings. We grate the carrots using a Korean carrot grater, just not coarsely. Why I don’t recommend grating carrots on an ordinary grater. Yes, everything is quite simple, the appearance of the finished dish looks much more aesthetically pleasing. Pour boiling water over the tomatoes, remove the skin and cut into cubes.
  2. Heat the oil in a frying pan for 4-5 seconds. spoons We send the onion there and simmer it until golden brown.
  3. In a separate frying pan, fry the tomato paste in a small amount of oil, add half a teaspoon of sugar to it. Stir constantly, making sure it doesn't burn. Then add chopped tomatoes to the pasta and wait until it boils. Place on a very low heat and let the tomatoes simmer. But don't forget to stir.
  4. Also don't forget to stir the onion. When the onion turns golden, add grated carrots to it.
  5. Fry and simmer quickly until the carrots become limp.
  6. You can also add salt, pepper, spices and herbs.
  7. We transfer the prepared tomatoes to the vegetables, add a piece of reddish capsicum and a bay leaf, and pour in the wine. And simmer for another 5-7 minutes.

Making marinated fish

  • Cut the fish fillet into portions, add salt and pepper.
  • Heat oil in a frying pan. Dip the fish pieces in flour and fry over high heat until golden brown. We just need to fry it, we don’t need to bring it to readiness. When ready, place the fish on a paper towel to drain excess oil.
  • In the meantime, prepare a form where we will place the fish and marinade. A frying pan with high sides or a cauldron will do.
  • Spread half of the marinade on the bottom. We lay out the fish in a second layer and cover it with marinade. If the shape is small, then the layers can be repeated. But the bottom and top layers should be marinade.
  • Heat over low heat, covering with a lid. After you notice that it has boiled (or even gurgled faster), simmer for 15 minutes. Let all the products come together as one.
  • Now turn off the gas and let the dish stand for 10 minutes and rest.

Well, that’s all, our fish with Greek marinade is ready. The only thing left to create is to eat our dish. If you want to eat the dish hot, start immediately. If you want it cool, wait until it cools down and is saturated with juices.
