How to make cherry puff pastries

Remove the puff pastry from the freezer and remove the frozen layers from the packaging. We lay them out on a surface lightly sprinkled with starch or flour, cover them with something on top to prevent them from drying out, and leave them to defrost at room temperature.

Immediately turn on the oven to warm up at 180-200 degrees.

At the same time, we begin to prepare the inside, for which we take out cherries, sugar, starch and vanillin.

Wash the cherries, tear off the stems and remove the pits. If you have a pitting machine, you can use it. I took out the seeds with a knife and my hands, simply cutting the berries in half. Frozen cherries just need to be thawed and freed from water, throwing the berries in a colander. Sprinkle the prepared berries with 2 tbsp. l. sugar and leave for 10 minutes so that the berries release their juice.

After the designated time, drain the juice from the berries and cover them with the remaining sugar.

Following the sugar, immediately add 1.5 tbsp. l. starch, the rest will be used to sprinkle the working surface when forming the puffs. There is no need to add more starch, as it can give the insides a starchy, sour taste.

Mix the berries and add vanillin.

Knead the filling one more time and it is ready, you can start forming the puffs. Don’t be alarmed, the inside will give off a little juice, but we won’t hide it in puff pastries, we’ll leave it in a bowl.

Now take a layer of puff pastry, roll it out to approximately 3-4 mm wide (don’t forget to powder the surface with starch!) and cut it into small rectangles. I had only 2 layers in the package, any of which I rolled out and cut into 6 squares.

Next, on one side of the rectangle, stepping back about 1 cm from the edge, we make 3-4 small cuts, up to 2-2.5 cm wide (depending on the size of the rectangular workpiece).

Spread the cherry filling onto one whole half of the dough. We moisten the edges with water, cover the filling with the cut side of the dough, pinch the edges with our fingers, then for the most painstaking gluing, go over them with a fork. If the edges are poorly secured, the puff pastries will certainly open up during baking, which, in general, is not so bad, since only the starch juice will “escape”, and the berries will remain in place. Only the external appearance of the puff pastry will suffer from this; the taste of the “escape” will not be affected.

Place the formed puff pastries on a baking sheet lined with paper, brush with egg white and bake for about 20 minutes. until golden brown.

Sprinkle the finished puff pastries with powder and serve, allowing them to cool slightly.
