It is difficult to remember the precise composition of the products used in the traditional version. Although it is easy to imagine that the sour cream recipe should not be complicated, very ordinary, without any special frills and must certainly contain natural sour cream. In reality, sour cream pie is prepared quite quickly, and if desired, it can even be baked in a slow cooker, which does not in any way affect the quality of the baked goods, appearance or taste.

How to make sour cream pie

There are two manufacturing options: 1st is a jellied pie, where all the ingredients are mixed into one. And 2nd - an open pie like a cheesecake, the dough and inside are prepared separately. We will cook using the first method, the most common and frisky.

In a deep bowl, beat the eggs, add a pinch of salt and evenly add sweet sand, carefully grind into the egg mixture until the sugar crystals are completely dissolved.

Then add grated lemon zest, pour in one glass of sour cream and stir the mixture until the mixture is even.

Next, add the flour, stirring with a pinch of soda and the same amount of salt. Using a tablespoon or a mixer, knead the dough until smooth.

Place parchment paper on the bottom of the mold, grease the sides of the mold with vegetable oil and pour the prepared semi-liquid dough into it.

Preheat the oven to 180 degrees in advance, place the pan and bake the sour cream for 25-30 minutes without opening the oven lid.

The readiness of the shortbread can be determined by inserting a toothpick into the surface. If the toothpick comes out dry, it means the cake is ready.

There is a legend that long before the invention of sour cream, in order not to let the sour cream go to waste and not to throw away the goodness, it was mixed into the dough and round cakes were baked like a pie, which came out surprisingly airy and tenderly melting in the mouth. Maybe this is exactly how the recipe for sour cream was invented, which, to our great chagrin, people rarely remember these days.

Tips for the recipe: what you need to know when making sour cream

– It is not recommended to add all the flour at once, add it in parts and do not knead a very thick dough. It would be more accurate to let the dough sit for a little while, as a result of which the mass thickens and acquires a more even and smooth consistency.

– If there is no special mold, the shortcakes can be baked in a thick-walled metal frying pan.

– During baking, try not to open the oven door, otherwise the dough may settle.

– When buying sour cream, choose the freshest and thickest product, with the highest percentage of fat content.

– To avoid separation of sour cream when whipping, you should cool it beforehand.

A simple sour cream pie recipe that can be served with tea or used as the basis for a homemade cake. Savory and fragrant, tender and not dry at all. Add your favorite berries, pieces of fruit, dried fruits or nuts to the sour cream dough - every time you will have a new pastry.

I use the highest grade wheat flour, although the first grade is completely fine. Fundamentally: depending on the manufacturer and moisture content of the flour, its quantity may differ significantly from that indicated in the recipe!

I don’t recommend reducing the amount of sugar, but you can add any amount of sour cream (in my case, 20%). Naturally, the fattier it is, the tastier and juicier the finished pie. The chicken eggs in the recipe are quite large - about 60-65 grams each. If you purchased smaller ones, put not three, but four pieces.

To make this simple and delicious pie, we need the following ingredients: wheat flour, sugar, sour cream, chicken eggs, baking powder, salt and unflavoured vegetable oil. All products should be at room temperature.

Because the dough is made quickly, turn on the oven to warm up (180 degrees). In a separate bowl, pour 270 grams of wheat flour, one tablespoon of baking powder and a pinch of small salt. Mix everything well and sift it through a sieve to remove possible debris and additionally saturate the dry mixture with oxygen.

Pour 200 grams of sweet sand into another bowl and break three chicken eggs.

Beat with a mixer at high speed until the mass turns white and grows in volume. The sugar crystals should be almost completely dissolved.

Add 160 grams of sour cream of any fat content (the fattier it is, the tastier and more tender the finished baked goods are). Stir sour cream into egg mixture.

All that remains is to pour in the flour mixture from step 2 and quickly stir it into the prepared base.

The dough ready for baking must be homogeneous, without lumps, and not watery or very thick. It doesn't hold its shape well and actually spills right away.

Grease a baking dish (I have a round one, 23 centimeters in diameter) with sides with unflavored vegetable oil. Almost one teaspoon will be completely enough. If you wish, brush with a teaspoon of butter, but in this case sprinkle the surface with additional wheat flour, shaking off any excess. This technique is called the “French shirt”.

Transfer the dough into the prepared pan.

It is necessary to bake such a pie with sour cream in an oven preheated to 180 degrees at an average level for about 30 minutes. This is the time my gas oven with bottom heat (no convection) requires. The top doesn't brown very much, so at the end of baking I switch the oven to top heat for almost 5-7 minutes. If you have an electric oven, be sure to be guided by its individual characteristics - the time will differ from that indicated in the recipe. It is important not to dry out the cake so that it remains juicy. Inspect the readiness with a wooden toothpick - the dough comes out dry, which means the dough is baked.

But I would like to suggest you bake an apple pie with sour cream, which is even tastier, because the dough in it is so tender!

I have three of my favorite oven recipes for you. I won’t say that it’s easier to cook than charlotte, but it’s also quite simple, except that the baking process takes a long time.

And, of course, there are still quite a lot of other recipes; we still have a selection of fascinating, ordinary and very tasty options for making apple pies, sometimes even extraordinary ones.

Apple pie with sour cream filling - tastier than charlotte

From the time I found out about this recipe, I fell in love with it more than others - it is an indescribable, very tasty apple pie with sour cream filling. It is simple to prepare - apples are placed on the dough laid out in a mold and filled with sour cream filling. The filling sets and becomes like a thick cream, like apple slices are baked in, it just has a magical taste!

The dough in it is prepared with sour cream without eggs.

I have prepared a step-by-step recipe with photos for you.

By the way, in this way you can bake pies with other insides; I tried them with pears and quince, I really liked them all.

  • sour cream – 150 gr
  • butter – 150 g
  • flour – 250 gr
  • a pinch of salt
  • 1 tsp. baking powder
  • sugar – 2 spoons
  • apples – 4 pieces (half a kilo)
  • sour cream – 200 gr
  • 1 testicle
  • sugar – 150 gr
  • flour – 2 tbsp.

It is better to take sweet and sour apples; their sour taste is even more pleasant in a pie. But if you still have sweet apples, you don’t have to put sugar at all in the pie dough.

I take sour cream with 20-25% fat content, natural butter is also of good quality.

How to cook
  1. I sift the flour into a cup (not all at once, it is better to add more at the end of kneading the dough so that it is not very thick).
  2. I pour baking powder into the flour. If you don’t have it, you can take half a teaspoon of soda and quench it in a spoonful of vinegar.
  3. Add softened butter, sugar, pour half a glass of sour cream and carefully knead the dough, but without fanaticism. It should be soft and even slightly stick to your hands.

Tip: it’s better to first grind the butter with sugar and combine with sour cream, and then add this mixture to the flour.

  1. We put the dough in a bag or cover it with film and put it in the refrigerator while we prepare the filling and filling.
  2. First I do the filling. I combine a glass of sugar with 2 heaped spoons of flour.

One spoon of flour can be replaced with a spoon of starch.

  1. I pour sour cream into the sugar and break one egg.
  2. I beat the filling with a whisk.
  3. The last thing I do is make the insides so that the sliced ​​apples don’t have time to darken.
    If the apples have thick skin, it is better to peel them.
    If the skin is soft, then I usually don’t peel it, but immediately cut it into thin slices, immediately removing the core and seeds.
  4. We take a detachable or any other form, it doesn’t matter here, we lay it out with parchment.
  5. Use your hands to spread the dough evenly over the pan, forming small sides.
  6. Pour the filling onto the dough, adjusting so that there is an even surface.
  7. Carefully pour in the sour cream filling, helping it with a spoon to fill all the voids between the slices. The filling should lightly cover all the apples. There shouldn’t be very protruding pieces, otherwise they will simply burn.
  8. Place our pie in an oven preheated to 180-200 degrees for approximately 50 minutes.
  9. We check readiness as always with a skewer. Let it cool and remove from the mold.

This ordinary sour cream pie is also very beautiful and no less tasty - I would call it festive and traditional, because it is decorated with a mesh of dough. And it has a particularly catchy, rich apple taste, because the slices lie on the surface and a wonderful smell emanates from them. I used to bake this kind of pie all the time, when I didn’t know about charlotte.

By the way, my best pie dough is made using a quick recipe by immersion in water.

Recipe for apple pie with sour cream:

  • apples – 4-6 pieces
  • flour – 400 gr
  • butter – 100 g
  • sour cream – 100 gr
  • sugar – 2 tbsp. spoon
  • soda – ½ teaspoon
  • salt - less than half a spoon
  • eggs – 2 pieces.
How to cook
  1. In this recipe, I make the filling first. I cut the apples into fine strips and simmer them in a small amount of water with the addition of a spoonful of sugar. You don’t need to simmer for long, until the apples lose their elasticity and become soft, but do not overcook them!
  2. Let them cool and we'll make the dough. First, I combine the dry ingredients: flour, soda, salt.
  3. Beat the eggs with the remaining sugar (spoon) and pour into the flour.
  4. Add sour cream and softened butter, knead the dough. You can keep it in the refrigerator for half an hour.
  5. Next, divide the dough into two parts: roll one out and place it in a mold or on a baking sheet.
  6. Cut strips from the second part of the dough.
  7. We put the filling on the dough, decorate the surface with a grid of stripes, if you know how, you can also put a braid along the edge, it will be absolutely super beautiful!
  8. Grease with egg and bake until golden brown at 200 degrees.
  9. Sprinkle the cooled pie with powder.

Delicious apple pie with sour cream and butter that melts in your mouth

And another delicious apple pie with sour cream and butter, the recipe for which I recently saw on the Internet. When making the dough, the yolks and whites are separately beaten and combined, and this procedure always makes the sponge cake especially tender and airy. Shall we try?

  • apples - half a kilo
  • butter – 220 gr
  • sugar – 150 gr
  • sour cream - half a glass
  • eggs – 3 pcs.
  • flour – 250 gr
  • vanillin, baking powder.
How to cook
  1. Separate the yolks from the whites and mix. For now we send the whites to the cold.
  2. Melt the butter, add sugar and vanillin.
  3. Whisking constantly, add sour cream and yolks.
  4. Lastly, add flour and baking powder.
  5. Now you should beat the whites to stable peaks.
  6. Carefully mix them into the main dough.
  7. The dough comes out watery and you can’t roll it out. Pour into the mold.
  8. Place apple slices in a circle and sprinkle with sugar.
  9. Bake for 50 minutes.
  10. The finished pie can be sprinkled with cinnamon powder.
