Salad “Capital”

Now, dear chefs and readers of the russianfood website, we are preparing the recognizable salad “Stolichny” or, as it is also called, “Olivier”. I think everyone knows the salad, and I would like to share my recipe with you.

Products
Potatoes – 4 pcs.
Carrots – 1 pc.
Chicken fillet – 1 pc.
Chicken eggs – 5 pcs.
Pickled cucumbers – 4 pcs.
Fresh cucumber – 1 pc.
Mayonnaise - to taste
Salt - to taste

Boil the potatoes and carrots until fully cooked in salted water (about 25 minutes, check the softness of the vegetables with a knife or fork).

We also boil the chicken fillet until tender in salted water (approximately 30 minutes, until soft).

Place the eggs in a saucepan, add water and cook until hard (10 minutes).

Peel the boiled carrots and cut them into cubes.

Let's do the same with potatoes - peel and cut.

Cool the chicken fillet and cut into cubes.

Cut the pickled cucumber, observing the proportion of all ingredients.

Well, the last ingredient is eggs. We will peel them and cut them too.

Place all the ingredients in a plate, add mayonnaise and mix everything well.

Like its close relative, Olivier salad, Stolichny is prepared with a different composition and set of goods. In other words, you can completely find recipes for Stolichny salad with chicken or pork, beef or sausage, even with fish and other seafood. In general, the most traditional version began with a single version - with chicken.

In the canteens of the middle of the last century they called it “Russian Olivier”. Its creator was a certain Ivan Ivanov, the chef of the Moscow restaurant in the capital. After the emergence of canned green peas in the country (which, along with a huge number of other products of the food industry, were produced using South American technologies on their own equipment), Ivanov in 1930 compiled a recipe for Stolichny.

It contained boiled chicken, green peas, crab meat, and mayonnaise. There were no onions or carrots. Later, when the food situation in the country changed for the worse, some things were added to the salad recipe, others were changed, or completely removed. As a result, only one mayonnaise remained in the salad from the Ivanovo classic. Instead of chicken, they began to put boiled sausage, eliminated crabs, and added the ubiquitous onions and carrots, pickled or pickled cucumbers.

Almost all Russian manufacturers produce it ready-made in plastic packaging. Some cook according to their own recipes. The same composition in them can be reproduced in different proportions, which gives the dish a new taste.

Stolichny salad - traditional recipe with photos, how to prepare original Stolichny salad

This traditional salad can safely be called the Russian interpretation of the well-known “Olivier”. In Russian times, it was the real pride of any housewife, who happily treated guests to it at a variety of holidays. Even at the moment, when there is a huge number of different exotic salad recipes, we can safely say that the table will simply not be full if the Stolichny salad is not on it.

In fact, this dish has undergone countless changes, which is why there are many different options for making the capital’s salad.

Delicacy products were added to the Capital salad, such as boiled tongue, hazel grouse meat and peeled bellies of boiled freshwater crayfish, which are commonly called crayfish necks. The salad was dressed with a complex dressing with the addition of tomato sauce.

When almost all products disappeared from the shelves of markets and stores, the salad recipe was adapted to those ingredients that were most accessible to the entire population.

Traditional salad “Stolichny” with photo

The traditional salad recipe is perfect for those who consider boiled sausage to be perishable and not entirely healthy. You can prepare the salad for the New Year's table, as a candidate for the usual Olivier.

Ingredients

  • boiled chicken meat without bones: 0.5 kg;
  • pickled cucumbers: 100 g;
  • boiled eggs: 4-5 pcs;
  • fresh cucumbers: 100 g;
  • peas: 100 g;
  • boiled carrots: 80 g;
  • boiled potato tubers: 300 g;
  • mayonnaise: 150 g;
  • ground pepper: to taste

{Instructions} manufacturing

Remove the boiled chicken meat from the bones and cut it into small square pieces.

Cucumbers, fresh and salted, also cut into cubes.

Finely chop the eggs with a knife.

Carefully cut the carrots into cubes.

Cut the potatoes into cubes.

Place all chopped products in a large bowl. Add peas and mayonnaise.

Mix the ingredients of the fresh and pickled cucumber and chicken salad well.

There is no need to salt it, because salt is already in canned peas, pickles and mayonnaise.

And pepper can be added to taste and desire.

Salad with boiled beef

Beef itself is a languid meat, so it turns out satisfying. This is why the freshest tomatoes are used, which add juiciness to the salad.

  • lean beef – 400 g;
  • onion – 50 g;
  • testicle – 3 pcs.;
  • tomato – 200 g;
  • canned peas – 400 g;
  • carrots – 150 g;
  • green onions – 20 g;
  • mayonnaise – 250 g;
  • salt, ground pepper.

Manufacturing:

  1. The beef is boiled in salted water and later cut into cubes.
  2. Potatoes and carrots are boiled in their skins, after which they should be cooled and peeled.
  3. Vegetables are cut into cubes.
  4. Boiled eggs, tomatoes and onions are chopped.
  5. The freshest onion trunks are cut using scissors.
  6. Layer the salad.
  7. The first is beef, which is smeared with mayonnaise very generously.
  8. Then come onions, potatoes, carrots, eggs, fresh onions, reddish tomatoes and canned peas.
  9. Any of the layers is also painstakingly coated with quite fatty mayonnaise.
  10. The top of the Stolichny can be decorated with various chopped herbs or halves of olives.

How to cook Stolichny with fresh cucumbers

The cucumber in this salad gives it some lightness, and since chicken is used as protein here, the salad is suitable for those who do not want to gain extra pounds. Mayonnaise is replaced here with the lowest calorie sour cream.

  • cucumber – 1 pc.;
  • carrots – 100 g;
  • potatoes – 250 g;
  • testicle – 2 pcs.;
  • peas – 200 g;
  • dill and parsley – 1 bunch;
  • sour cream 10% - 100 g;
  • chicken fillet – 150 g;
  • salt.

Development:

  1. First, wash the dill and parsley well under running water.
  2. Dry it with a cardboard towel and chop it finely with a knife.
  3. Vegetables need to be thoroughly washed and boiled in the “skin”.
  4. Already cooked, cooled carrots need to be carefully cut into cubes.
  5. Potatoes are cut literally the same way as carrots.
  6. While the vegetables are cooking, boil the eggs.
  7. Hard-boiled eggs are peeled and finely chopped.
  8. Chicken fillet is quickly boiled and cut into pieces.
  9. The freshest cucumber is washed, and later both edges are cut off.
  10. Check that the cucumber is not bitter; in the latter case, remove the skin.
  11. It should also be cut into cubes.
  12. At the very end, mix the salad in a bowl and add green peas.
  13. Taste the salad and add salt or pepper as needed.
  14. Sour cream will serve as a dressing.
  15. After adding it, stir everything well.

Salad with sausage

If you add boiled sausage to the Stolichny salad, it will transform into Olivier. But this recipe also has differences, since it includes yellowish peppers and herbs.

  • Crimean onion – 1 pc.;
  • potatoes – 180 g;
  • pickled cucumbers – 100 g;
  • testicle – 2 pcs.;
  • peas – 200 g;
  • carrots – 70 g;
  • yellowish pepper – 50 g;
  • mayonnaise – 150 g;
  • salt pepper.

Manufacturing:

  1. First you should boil the vegetables, which are boiled and cut into cubes.
  2. The sausage is cut into similar pieces; the same cut should be used on pickled cucumbers, boiled eggs, Crimean onions and peppers.
  3. The ingredients must be moved into one bowl, and then the peas must be dumped.
  4. Everything is dressed with rich mayonnaise.
  5. If you wish, you can use sour cream, but then you will need to thoroughly salt and pepper the salad, otherwise it will be too bland.
  6. The finished Stolichny salad is placed in a salad bowl and then decorated with the freshest chopped herbs.

“Stolichny” salad with meat

In this salad, lean pork serves as the protein, so the salad is satisfyingly average between beef and chicken salads.

  • pickled cucumber – 2 pcs.;
  • pork – 150 g;
  • potatoes – 100 g;
  • testicle – 2 pcs.;
  • green peas in a jar – 70 g;
  • parsley and dill - a small bunch;
  • salt pepper.

Manufacturing:

  1. The pork is cleaned of all fat and boiled in salted water.
  2. Cool the meat and cut into fairly small cubes.
  3. Boiled potatoes are cut into pieces.
  4. The cucumber is chopped into thin slices.
  5. The eggs are hard-boiled and then finely chopped.
  6. After all the ingredients are prepared, they should be combined and peas added to them.
  7. Everything is seasoned with mayonnaise and mixed.
  8. Top the salad with herbs.

Manufacturing secrets

The main weak point in making this salad is the vegetables. They need to be constantly cooked with the skins on in previously salted water until cooked. Before cutting vegetables into similar cubes, they must be cooled. But with all this, you should not let them stagnate, otherwise they will quickly darken and become weathered. To get beautiful cubes, you can use different grinders.

Stolichny itself in its traditional recipe is quite high in calories - 352 Kcal per 100 g of finished product. Namely, this is what is affected by the mayonnaise dressing, which must be very plentiful, otherwise the salad will turn out dry.
