Cook the glaze in a slow cooker, combining 100 ml. milk, 4 tablespoons of cocoa and sweet sand and 50 grams of butter, and setting the “Stew” mode for 10 minutes. The resulting glaze is cooled to 40 degrees so that it thickens but spreads well. Fudge is poured over the coconut cake. Use a silicone spatula to spread it moderately so that the cake comes out beautiful.

Coconut flakes – 100 g
Sugar – 100 g

Cream 15% – 200 ml

Prepare all the necessary ingredients to make a coconut pie with kefir and cream.
You can use cream of any fat content.
Turn on the oven to preheat to 180 degrees.

Pour the drink into a bowl, add the egg.

Add sugar, salt and vanillin (or vanilla sugar).

Stir with a whisk.

Add sifted flour and baking powder into the egg-kefir mixture.

Knead into a homogeneous dough.

Pour the dough into the mold. I used a silicone rectangular mold measuring 24 by 19 cm.

Combine coconut flakes with sugar.

Spread the coconut and sugar sparingly over the entire surface of the dough. Cover the pie with baking parchment to avoid excess browning of the coconut layer.

Bake the coconut pie in the oven, previously preheated to 180 degrees, for 30 minutes.

Remove the finished coconut kefir pie from the oven and immediately soak it in cream, pouring it over the entire surface with a spoon. The pie, like a sponge, will instantly absorb the cream.

Creamy coconut pie is ready! This pie is good both warm and already cooled.

Cut the delicious coconut pie into portions and serve.

At the moment I will be baking a fragrant, delicious coconut cake. Ordered by my daughter :-) I would like to share the recipe with you. And a story about why the pie might not work out. As annoying as it may sound, not everything depends on the recipe and our hands.

Dough:
1 egg
3/4 cup sugar
pinch of salt
1 cup kefir or yogurt (you can also use 10% sour cream)
3/4 teaspoon baking soda (or baking powder)
1.5 cups flour

Topping:
100g coconut flakes
0.5 cups sugar

For filling:
1 cup 20% cream

The dough is made almost instantly, therefore, having prepared the mold, you can immediately start making the dough and turn on the oven at 180-200C. While you make the dough, the oven will warm up.

Grease a 22 cm mold with vegetable oil (I have a detachable mold, it is easier to remove the cake from it, it is very gentle).

Using a whisk (no mixer needed*), beat the egg with sugar and salt (a pinch). Add the drink and beat again. Add slaked soda and sifted flour. Mix the dough well with a whisk. The mixture is like pancakes. Or a little thinner. But I would still recommend the thickness of pancakes, not thinner. That is, if it’s a little liquid, I add another half a glass of flour.

Mix coconut flakes with sugar.

Pour the dough into the mold, smooth it out. Sprinkle a mixture of coconut and sugar on top sparingly.

Place the pan in the preheated oven on the middle shelf. The pie is baked for about 30 minutes. After 10 minutes, when the surface becomes golden, you need to cover the top with foil, otherwise the sugar will start to burn.

After half an hour, take out the mold and pour cream over the hot pie (I heat it up). Let it stand.

Carefully transfer the cake from the pan to a tray.

It tastes better when it's cooled. Very tender, just melts in your mouth!

Did I describe the process incorrectly? But two more people baked this pie. He's out! This means the description is correct.

Is it the oven's fault? No, they say that all the heating elements of the oven work perfectly.

Blame the drink on the wrong fat content? No, the pie was made from kefir of varying fat content.

So gradually we came to the “culprit of the tragedy.” The torment was to blame. I remembered how my friend, a professional baker, talked about the trouble with buns. They baked a batch of buns. The buns did not rise and were dense. It turned out that they were delivered unripened flour - without gluten. For the life of me, baking with such flour will not work. As annoying as it may sound, flour without gluten cannot be distinguished from flour with gluten by its appearance.

*Wished to direct your attention. In this recipe, the dough is not kneaded with a mixer! Otherwise it will become dense and will not rise high. Well, that’s the highlight of it.

How to cook “Coconut Pie” step by step with photos at home

To make this coconut pie you will need a minimum of ingredients: coconut flakes (not bad quality!), eggs, sugar, cream, vanillin and baking powder. And from the dishes we need scales, 1 bowl, whisk, spoon and a mold with a diameter of 22 cm.

Break 3 eggs into a bowl and whisk with sugar until the sugar dissolves. No need to beat the eggs!

Add coconut flakes to the egg mixture and mix thoroughly, ideally with a wooden spoon.

Pour in the cream and add vanilla. Mix again.

Now it’s important! Place the bowl of coconut dough in a cold space (refrigerator, balcony) for 20 minutes! This is important because the coconut should swell slightly! In the meantime, turn on the oven to preheat at 170°C.

After 20 minutes, add baking powder to the dough and mix. Lightly grease the mold, sprinkle with flour (or put baking paper) and lay out the dough. Bake in a preheated oven on medium rack for 30-40 minutes (watch your own oven). Check the readiness of the pie with a wooden skewer!

Let the finished cake stand in the pan for 20 minutes, and then cool completely on a wire rack. Before serving, sprinkle with sweet powder, or you can top with chocolate glaze! Help yourself!))
