  1. Let's prepare pumpkin puree: take 400 grams of pumpkin, cut into pieces (do not cut off the skin). Then place the pieces on a baking sheet and put them in the oven for baking. Bake at 200 degrees until the pumpkin is soft.
  2. Let the baked pumpkin cool slightly and remove the skin from it, then create a puree using a blender. If you don’t have a blender, then mash the pulp well with a fork.
  3. Place the finished puree in a thick-bottomed saucepan, add milk, sugar, vanilla sugar, a little salt and mix everything well. Place on high heat and bring the mixture to a boil.
  4. After boiling, reduce the heat to low and cook for 35 - 40 minutes, stirring occasionally.
  5. When the pumpkin mixture has boiled down well and begins to caramelize, you need to stir constantly so as not to burn. The mass will be ready when it looks like marmalade and just lags behind the bottom of the saucepan.
  6. Remove the saucepan from the heat, add butter, a third of the ground nuts, ginger and cinnamon, mix everything well until smooth.
  7. Transfer the candy mixture into a bowl, let it cool and put it in the refrigerator for two hours.
  8. Mix crushed nuts with cocoa.
  9. We form balls from the cooled candy mass - one teaspoon is one piece of candy. Roll any ball perfectly in a mixture of cocoa and nuts.

Place the finished candies on a dish and store in the refrigerator.

Pumpkin candies “Sweet tooth”

  • Pumpkin pulp - 200 g;
  • butter - 50 g;
  • cookies (you can take any) - 150 g;
  • one orange, 50 grams of walnuts;
  • natural honey - three tablespoons;
  • coconut flakes - 50 g;
  • cinnamon - optional;
  • cognac - 30 g; if you are preparing sweets for children, do not add alcohol.
  1. Peel the pumpkin, wash and cut into pieces. Pour water into them in a saucepan and boil until tender, so that they are soft.
  2. Drain all the water from the finished pumpkin, let it cool slightly and make puree using a blender or masher. You can rub the boiled pumpkin through a sieve.
  3. Grind oatmeal in a coffee grinder to flour. You can use oat bran or oat flour instead of cereal.
  4. Grind the cookies into small crumbs. Instead of cookies, you can use waffles, sponge cake, vanilla crackers or regular gingerbread cookies.
  5. Add the crushed oatmeal to the cooled pumpkin puree and mix everything well. Leave for 30 minutes so that the oatmeal swells and absorbs the pumpkin juice.
  6. After this, add the cookie crumbs and mix well.
  7. Then add honey to the candy mass. If you are allergic to honey, you can replace it with condensed milk or maple syrup. You can also use linden honey because it is hypoallergenic.
  8. Then add perfectly softened butter and cognac, which can be replaced with whiskey, rum or gin. If the dessert is being prepared for a children's table, then alcohol should be excluded from the recipe.
  9. Stir the mixture until smooth and add the crushed walnuts into small pieces.
  10. Mix everything well again and add the zest of 1 orange, grated on a medium grater.
  11. Again, mix the candy mass well and put it in the freezer for half an hour, while you need to stir it for every 10 minutes. This is necessary so that the mass hardens so that candies - balls - can be formed from it. If the mixture seems very thick to you, you can dilute it a little with orange juice.

  2. Place the water and sugar on low heat and cook the syrup.
  3. Place the pumpkin pieces in the hot syrup and boil for 5 minutes.
  4. Then remove the pumpkin from the syrup using a slotted spoon and cool to room temperature.
  5. Add sliced ​​orange, cinnamon and cloves to the syrup, bring it to a boil again, put pumpkin cubes in it and boil for another 5 minutes.
  6. Then remove the pumpkin from the syrup, cool it and boil it in the syrup again. We repeat this function 4 times so that we get translucent blanks for candied fruits.
  7. At the end of the cooking process, remove the pumpkin pieces from the pan, let cool and place them on a baking sheet previously lined with baking paper.

I can’t believe that it wasn’t that long ago that my family didn’t love pumpkin! The final milestone on the path to recognition of this plant was specifically candies. To be honest, I came up with the recipe myself. More precisely, I was hooked by one recipe, but my family rejected the final result. Later, I tried a different method to create candy from pumpkin. And again there is trouble. The family refused to even try: the sweets smelled so much like pumpkin. But I don't want to give up! And because both the first and second methods of making sweets had their own aspects, I decided to combine them. What came of it? Simply amazing sweets that taste just as good as oriental ones. And what a beauty.

Ingredients:

  • Pumpkin – 650g;
  • Sugar - from 1/2 to 2/3 cup (depending on what you like best);
  • Juice of half a lemon;
  • Coriander – 1 tbsp;
  • Cloves – 2 pcs.

In addition, some other ingredients will be useful. But this is up to taste or looking at the availability of suitable goods at home. As the recipe progresses, I’ll tell you what you can use.

We clean the pumpkin from seeds and veins, remove the skin.

Cut the cooked pumpkin into pieces.

Extract juice from lemon. The most convenient way is not to squeeze the juice with your hands, but to create it using a juicer: you will get quite a lot of juice.

Add coriander and freshly ground cloves.

Fill the pumpkin with water and put it on fire. cook for about half an hour until the pumpkin becomes soft.

We puree the roast pumpkin in a blender.

Let's taste the pumpkin. if there is not enough sugar in it, add it. Sugar should be added to the pumpkin puree in parts. Stir and let the sugar melt into the warm puree. And later check the product again for sweetness. Need more sugar? Let's add! If you are happy with the result, it is better to slow down. The fact is that in the process of evaporating the water, the mass will automatically become even sweeter.

Place the saucepan on the fire and constantly stirring the mass, evaporate all the liquid from it. As a result, the result should be a compacted mass so that it is almost like jam.

I evaporated the pumpkin puree for 2 hours and did it in 3 batches. And look what a thick mass I came out with: I swiped it with a spatula, but the mass did not fill the “path”, it remained there.

We cover the mold with parchment and distribute the mass over the entire width of the mold, the layer thickness is about 1-1.5 cm. Let the mixture sit for about 6 hours.

It so happened that my mass stood for almost 12 hours. During this period of time, the mass compacted and froze. If I had let it sit a little longer, I would have had a churchkhela (although the layer of mass would have needed to be created thinner).

And now here is what I was talking about. Sprinkle the mixture with nuts or chocolate chips on top. If you have coconut or sesame seeds at home, that’s great too. You can even sprinkle with chopped raisins or sprinkle with sweet powder.

We cut the mass into 2 halves to make it easier to work with. Roll one half into a roll.

We cut this roll into pieces and envelop each part in chocolate chips. If you don’t have chocolate at home, you can use everything from the list that I mentioned above: coconut flakes, ground nuts, sesame seeds, sugar or sweet sand.
