Boil about 1.5 liters of water. For the broth, I take part of a chicken carcass, and for serving, a pork steak. I boil everything together. The bones, skin, and fatty layers of the bird will saturate the broth, the pork loin will be saturated with all the odors, soften and simply separate into plates. First wash the cold cuts in cool water and place them in boiling water. Next we throw in natural flavors: garlic, about half a pod of cayenne pepper (take any hot one), spicy celery stalks, a piece of ginger root, several branches of fresh herbs. Boil again, reduce the heat, and continue cooking under the lid set slightly askew for approximately 40-50 minutes. Look at the quality of the meat. The broth should be rich.
We examine the meat for softness - pierce it with a knife or skewer. If the chicken easily separates from the bone, it means everything is normal. Still without salt/soy sauce, but already fragrant meat broth should be strained. Use a sieve with a small mesh to remove even the smallest fragments and leave the liquid cleaner. Strain once or twice. Place the boiled pork separately, remove the adhered branches of greenery.
Pour soy sauce into the strained hot liquid, mix and taste. If you wish, boil again. The dose depends on the concentration of the particular sauce and your preference.
At the same time, boil hard-boiled eggs, clean, grease and paint the whites with soy sauce - “make them beautiful.” The thick extract quickly turns yellowish-brown. According to the instructions, boil the wheat noodles, also cut the pork steak into slices and finely chop the greens. You can start assembling the Ramen soup.

Making recipe:
1. Boil hard-boiled eggs, peel off the shells.

3. Pour cool water into a saucepan and add the meat there. Close the lid and put on fire. When it boils, skim off the white foam. Season with salt, add onion, garlic and ginger. Simmer covered over low heat for 20-25 minutes.
4. Remove the meat from the broth and place it in a heated frying pan. Pour in soy sauce, add sugar. Fry, stirring constantly for 2-3 minutes.

Traditional version of making soup

Then remove the meat without draining the broth, which must be salted. Let the broth settle and get rid of impurities. Pour the purified broth into another pan.
Place cinnamon and ginger on the bottom of an unsealed pan, place pork meat on top and add a little broth. After boiling, sweeten, pour in soy sauce. Close the pan with meat tightly with the smallest lid so that it presses the meat tightly. For weighting, a weight is suitable, with the help of which the pork meat was completely in the broth. Cook in this form for another 4 hours.
Prepare a new clean noodle pot. Pour water into it, bring to a boil and add ramen noodles. It will take about 5 minutes to be ready. Drain all the water from the pan, remove the noodles and divide into 5 servings.
