When cooking, put them only in boiling water, otherwise all the valuable substances and vitamins (a group of low-molecular organic compounds of relatively simple structure and varied chemical nature) will go into the broth, unless, of course, you plan to cook shrimp soup. To improve the taste, spices and herbs are added to the shrimp. It is not recommended to subject them to long-term heat treatment, because with all this they become hard and rubbery. You can peel the shrimp both before and after - when they have cooled down. By the way, shrimp with brown heads are not spoiled or unhealthy, but pregnant - their meat has a special nutritional value.
Boiled shrimp: sophisticated and simple
Properly cooked shrimp are a delicacy that can be served with any sauce and side dish. Wash frozen or fresh shrimp in a colander under running water - warm or cool, but not hot. Pour 2.5–3 times more water into the pan than the approximate size of the shrimp; they should float freely in the pan. Salt the water, bring it to a boil, add bay leaf and any spices, such as peppercorns, cloves, paprika and allspice, squeeze the juice of half a lemon and place the shrimp in the pan. The cooking time depends on their size and degree of readiness, because shrimp are sold in the store raw or boiled, the former are grayish in color, and the latter are pink in color. Keep cooked shrimp on the stove for 1–3 minutes (depending on size), and frozen ones for about 5–7 minutes. Do not overcook them, otherwise the meat will be hard as rubber. The finished shrimp float to the surface, and you just need to throw them in a colander to drain the water. Later, you can peel the shrimp, although some chefs do this before heat treatment. It is also recommended to keep the shrimp in the broth for 15 minutes after cooking to make them juicier, but this is not for everyone. Salads with shrimp, soups, and second courses for which seafood is previously boiled are also delicious.
Healthy steamed shrimp
Sprinkle the washed, unpeeled shrimp with seafood seasoning and leave for a couple of minutes so that they are saturated with the smell of spices and aromatic herbs.
