Compote - the best recipes for hot weather from different berries and fruits
Have a nice day everyone!
The height of summer is not only a beach, a dacha, but also very, very hot. And what could be better in the heat than cold drinks. If you walk around the town, you will certainly escape with cold kvass. But if you are at home or in the country, then a homemade compote chilled in the refrigerator will certainly come in handy.
There is nothing complicated about making compotes. Here are some general tips.
You can cook a tasty compote from just one type of berry, or from several, so to speak, a mix. Not only the freshest fruits are suitable. Yes, and frozen from last year. Almost everyone does this. Part of the harvest is frozen so that it can be used later, before the freshest one arrives.
And the last one is sugar. It can be added both during cooking and after it. If you want a natural compote with sourness, then you don’t need to add sugar at all. In general, sugar is a matter of taste. Whatever sweetness you need in compote, add as much sugar. Therefore, in the recipes below there is no emphasis on sugar.
What do we make compote from? Here we can safely say - from everything. These are berries: cherries, raspberries, currants, strawberries, plums, thorns. Fruits such as pears and apples. This is what grows in everyone's garden. Well, exotic things from the market: quince, bananas, pomegranate, persimmon, cherry plum, apricot, peaches, etc.
Now, as for cooking. Soft compote ingredients are cooked for up to 10 minutes, hard ones for 10 to 20 minutes. After cooking, it is not only cooled for use, but also left for several hours so that the compote gets a rich taste.
Here, in principle, are the main tips. Now let's move on to the recipes specifically.
Apple compote
This is the most common and widespread version of compote. It is brewed from both new and frozen apples.
The compote is prepared at the rate of taking 500 g of apples per two liters of water. If the apples are unsweetened or frozen. You will need to add 200 g of sugar.
After washing the apples (if they are fresh), cut them in half and remove the core. In principle, the middle can be abandoned. Well, then whoever likes it. Either leave it in halves or cut it into slices.
Now put a pan of water on the fire, bring to a boil and add the apples. Next add sugar. But this option is for those with a sweet tooth. I usually cook until done and then taste later. If the acquired taste is satisfactory, then I do not add sugar. If it feels like there’s even a little sugar, but it’s needed, then we go to sleep.
After this, cook the compote over low heat for 15-20 minutes. Then remove from heat, let cool, then pour into jars and roll up (if for storage) or into bottles and into the refrigerator. Later we take it out for drinking.
How to cook pear compote
Another fruit beloved by virtually everyone. You can, of course, make compote only from pears, but the best combination is considered to be with apples.
If you decide to slow down only on the pears, then the following will come in handy:
- Water – 2 l.
- Pear – 500 g.
- Lemon – 1 pc.
Here we add sugar to taste. In this case, we start cooking compote by making sweet syrup. When the water boils, add the amount of sugar required for you.
Then pour the pears into the syrup, which continues to boil. Just like apples, they can be cut either in half or into slices.
Cook the compote for another 10 minutes. After the pan is removed from the heat, squeeze the juice from the lemon. Later we leave it to steep until it cools down, after which we pour it into jars and put it in the refrigerator.
Cherry compote
Perhaps the most delicious compote that will be needed constantly. And your kids, having tried it once, will ask for it all the time.
To make this compote, you will need to take 300 g of berries and 4 tablespoons of sugar per liter of water. Sugar will also come in handy here, since cherries have a sour taste. But some people like this too.
Cherry pits are not removed. Boil water, add sugar. After dissolving it, pour in the washed cherries and cook for 10 minutes. After this time, remove the compote from the heat and leave to steep for several hours.
It will turn out very tasty if, before adding the cherries, add a few chopped apples, cook for 5 minutes, and only later add the cherries themselves.
Compote of reddish and black currants
Reddish and dark currants grow in our gardens. Both of them are used for jam and compotes. But we know very well that reddish currants taste very sour, but dark ones are sweet. That’s why black currants are used more often. Although the reddish one contains even more vitamins.
To make compote from reddish currants, take:
- Water – 2 l.
- Reddish currants – 300 g.
- Sugar – 5 tbsp. l. This is the minimum, but determine the maximum according to your taste.
Pour water into the pan and add sugar. Now let's put it on fire. When it boils, remove from heat and add currants. Let it sit for three hours.
This compote, you see, is very simple to make and actually doesn’t need to be cooked.
As for dark currant compote, to make it we will take:
- Water – 2 l.
- Dark currants – 400 g.
- Sugar – 200 g.
Wash the currants, then grind them in a blender. Pour water into a saucepan, add sugar and put on fire. As soon as the water boils and the sugar dissolves, add the ground currants and cook for three minutes. After this, cool the compote, then filter it and bottle it.
If you are using frozen berries. We cook the syrup in the same way, but we throw the whole berry into the water and do not grind it in a blender. The compote is boiled for 10 minutes, then cooled and poured into jars or bottles.
You can add a few slices of orange to the currants for taste.
Plum compote
Plum berries are quite sweet, so don’t overdo it with sugar. Although, as they say, everyone loves in their own way.
To make compote, take:
- Water - 2 l.
- Plum - 1 kg.
- Sugar - 200 g.
First, wash the plum and remove the pits.
Now pour water into the pan, add the plums and bring to a boil. After the water boils, cook for 15 minutes, then remove from heat and add sugar. After this, let the compote cool and you can drink it.
So, these were our garden fruit and berry compotes. But there are also several fruits and berries that make compotes no less tasty and healthy.
Apricot compote
The fruits themselves are very tasty, and the compote and, especially, the jam made from apricots are simply delicious.
To make such a compote you will need:
- Water – 1 l.
- Apricots – 1 kg.
- Sugar – 1.5 cups.
Wash the apricots, cut them in half and remove the pits (similar to making them from plums).
Place apricots in a saucepan, pour sugar on top, then pour water. Now put the pan on the fire. After the water just starts to boil, turn down the heat slightly and cook in this way for about three minutes. Then the compote is infused for about an hour. After this, it is ready for use.
Peach compote
Also a product loved by almost everyone. As soon as cheap peaches appear in stores, we rush to buy them. And at the market or in the same store, the poor quality of compotes is rapidly being dismantled.
For this compote, let's take
- Water – 3 l.
- Peaches – 1 kg.
- Sugar – 200 g.
Peaches are washed and cut into slices. You can cook them whole if they are small. Pour water into a saucepan, add sugar and put on fire. As soon as the water boils, add the peaches. Cook for a few minutes, then remove from heat and leave for 15 minutes. After this, pour into jars and set aside to cool.
These are the main, so to speak, typical compotes. You can combine different ingredients together in three or even four or five components. The taste can be quite unexpected. And in the end, a compote of dried fruits, which can be purchased at any market.
Dried fruits compote
What’s so good about this compote is that you can cook it at any time, just have dried fruits on hand or a market nearby where you can buy them.
Another good thing about this compote is that you don’t have to add any sugar at all. For the hot period it will be even better.
What's useful here:
- Water - 3 l
- Prunes - 200 g.
- Dried apricots - 200 g.
- Raisins - 100 g.
- Apple – 100 g.
If you decide to add sugar, then 2 tbsp will be useful for this amount. spoons. Wash and sort all the ingredients you have found. If you don’t have dry apples, you can replace them with a couple of new ones. But then they need to be washed, cut, cored and cut into slices.
Pour water into a saucepan and set to boil. As soon as the water boils, add the apple and prunes for 15 minutes. After this, add all the other dried fruits and cook for another 5 minutes. At the end of cooking, leave it to cool and infuse, after which you can drink it.

More about compote
The French word “kompote” replaced the Russian “brew” from the language, which also meant a drink or dessert made from the consistency of berries and fruits. Back in the 18th century, the French knew how to prepare compote; only then did it look like fruit puree, which, by the way, is still sold today.
Compote is a very tasty and necessary drink. A cold homemade compote perfectly relieves thirst in the heat, and a hot one quickly warms and invigorates in the cool season. No store-bought drinks will bring you as much benefit as a regular, easy-to-make compote can provide.
Almost all children really love drinking homemade compote. And it’s not in vain that, properly prepared, a sweet decoction of fruits or berries is not only incredibly refreshing and tonic, but also very tasty and necessary. In adults, compotes also evoke warm emotions (Emotions are distinguished from other types of emotional processes: affects, feelings and moods) - after all, we all drank them as children in kindergarten or at our grandmother’s house.
These days, almost every housewife not only understands how to cook compote, but also has her own signature recipe. Thanks to the abundance of fruits and berries, it is impossible to cook homemade compote with the same taste twice. There are a huge number of recipes in cooking, thanks to which you can cook a delicious compote from apples, pears, plums, apricots or berries.
If you still don’t understand how to cook compote correctly, remember one piece of advice.
In order for the compote to be tasty and retain maximum of the necessary parameters, it must be cooked without overcooking the fruit. The most useful is compote, which is not boiled, but simply poured with boiling water and infused. Quite often, compotes are canned in order to be able to drink a glass of a healthy drink at any time of the year. The fruits are washed, placed in sterilized jars and filled with boiled water. Then the jars are hermetically sealed and stored in a black, cool place. Canned compotes can be stored for years, but it is better to use them as early as possible.
When the freshest fruits are gone, you can add dried fruit compote to your home menu. It perfectly relieves thirst, refreshes, and replenishes vitamins. In winter, you can amuse your family with apple compote or create a drink using frozen fruit.
If you don’t understand how to create a compote with an unusual, new taste, add spices to your own drink. Vanilla, cloves, cinnamon, mint or ginger are perfect for this. A similar solution will probably amuse you and your loved ones with new taste sensations.
Experiment with flavors, because compotes are a good alternative to regular coffee and tea.
