You can either purchase ready-made salmon or salt it yourself using recipes from the website: reddish salted fish, reddish fish with juniper, etc.

Ingredients:

  • Milk – 500 ml
  • Chicken egg – 3 pcs.
  • Sugar – 1 tbsp.
  • Wheat flour – 100 g
  • Potato starch – 4 tbsp. no slide
  • Salt – pinch(s)
  • Vegetable oil – 1 tbsp.
  • Cucumber – 2 pcs.
  • Salmon – 300 g
  • Cream cheese – 300 g
  • Greens - optional

Manufacturing:

Pancakes for rolls made from pancakes with salmon and cream cheese are best prepared with the addition of starch - they are the most elastic and are perfect for wrapping the insides.

First you need to mix the eggs with sugar and salt using a hand whisk (you can just whisk everything with a fork).

Pour half the total volume of warm milk into the egg mixture and stir.

Sift the flour and potato starch separately and evenly, in small portions, add the dry mixture to the watery mass, stirring well each time with a whisk.

When the dough is homogeneous, without lumps or flour residues, pour in the remaining milk and mix again.

Add vegetable oil to the batter and leave to rest for 10 minutes at room temperature.

Grease a pancake pan with a thin layer of vegetable oil and bake thin pancakes. They bake very quickly, and due to the starch they simply turn over and do not tear.

Spread the pancake with cream cheese. If you use processed cheese and it is difficult to spread it on a pancake, then you can dilute it with sour cream.

Sprinkle the cheese with chopped herbs (I used dill).

Place strips of cucumber and fish closer to the edge of the pancake. If the cucumber is shorter than the pancake, then add another strip of cucumber so that the inside is along the entire width of the pancake.
