Despite the fact that for production you need to use the same round rice, provided with starch, the dish comes out very tender, weightless, without any hint of viscosity. Real rice pudding is somewhat reminiscent of souffle at its best - it is just as airy.

Rice pudding becomes airy thanks to several manufacturing secrets. So, at the very beginning, the rice is fried in butter, which creates the effect of “sealing” the starch. Thanks to this, the rice becomes tender, but not sticky. In addition to this, eggs are introduced into the pudding in stages: first, the yolks, whipped with sugar into a fluffy mass, are added to the hot rice mass, which are brewed under the influence of temperature in a similar way to crème anglaise. The whites are whipped separately into a fluffy foam and carefully introduced in parts to greatly enrich the pudding with air.

Rice Pudding Ingredients

  • 1 glass full fat milk
  • 60 g round rice
  • 25 g butter
  • 20 g raisins
  • 2 testicles
  • 1 tbsp. spoon of sugar

Manufacturing

Pour a small amount of warm water over the raisins and set aside – they should soften slightly.
Melt the butter in a small saucepan or saucepan and add the rice.

Fry the rice until it is slightly browned.

Then pour milk into the pan and let the rice boil for 5-7 minutes. During this period of time it will swell, but will not become viscous.

Separate the whites from the yolks. Add sugar to the yolks.

Beat the yolks with sugar into a fluffy light mass.

Remove the rice and milk from the heat, quickly add the beaten yolks and vigorously stir the mixture. It should thicken slightly and become creamy.

Drain the water from the raisins, squeeze them well and add them to the rice base.

Beat the whites until very fluffy.

Add the whites a tablespoon at a time to the base, folding them in gently to maintain airiness. In this way, enter the entire size of the proteins.

Grease a baking dish with butter and place the pudding there.

Bake the dessert for 20-30 minutes at 170 degrees. The pudding can be baked in both large and small pans. Please note that it will take more time to make the pudding in a larger form, so focus on the color of the crust of the dish - it should turn a pleasant golden-orange.
