Step-by-step production

Step 1:

I had a frozen clam, so I let it defrost.

Step 2:

And she put the water to boil and started preparing the remaining ingredients. I peeled the garlic and chopped it into thin slices. They will give a special taste, and, when thoroughly fried, they will add color.

Step 3:

Then I peeled the onion, washed it, dried it and cut it into rings. This way everything will look harmonious. After all, I didn’t take snow-white onions, which in the dish will match the color of the squid, but Crimean ones.

Step 4:

My water has already boiled. And I sprinkled boiling water all over the squid. Everything that covered it instantly gathered into some small pimples that amazingly lagged behind as soon as you touched them with a knife.

Step 5:

Having cut off the tail part of the carcass, I cleaned the insides - everything inside must be clean.

Step 6:

You need to wash it later very painstakingly, because the squid has a lot of contaminants inside. When the carcass was ready, I cut it into rings about 0.5 cm wide.

Step 7:

To make the dish have the most special taste, I seasoned the rings with the consistency of peppers and spices.

Step 8:

While the clam is marinating, put the frying pan on gas and add oil. When it sizzles, let's fry the onion in bubbling oil. This will take about 3 minutes, because... I cut it thin.

Step 9:

I had a lot of space in the pan, so at the same time I fried garlic, chopped into thin petals.

Step 10:

Now fry the squid side by side, lightly breading them (or sprinkling them directly in the frying pan with onions) in breadcrumbs (or flour).

Step 11:

Fry for 3-4 minutes, not more, because we have already poured boiling water over the clam. If you want a crunchy effect, fry until crisp.

Step 12:

At the end, when I had already turned off the gas, I did not cover it all with a lid, as I could have done. It turned out delicious, tender and at the same time slightly fried.

Do not keep squids in boiling water for a long time - quickly dip them and start cleaning them right away. It’s better to spray it with boiling water again later.

You can also cut the tail part, not forgetting to process it using the same method.

If you want a crispy crust, fry the squid along with the onion in the same pan, but previously bread them in flour or breadcrumbs.

Do not overheat the squids, otherwise they will resemble onions in batter.

For frying, take larger carcasses.

Try to choose fresh specimens without damage.

When frying, arrange the squid rings so that they do not touch. If there are a lot of goods, fry in several stages.

You can top them with melted butter before serving.

Before serving, you can add a piece of butter.

Cooking Tips

  1. When purchasing seafood, you should pay attention to the condition of the carcasses. They don't have to look shabby, just peel off from each other. If they are tightly and tightly glued, this means that they have been defrosted more than once. The meat of such squid in the dish will taste bitter and it is possible that during cooking they will fall apart and turn into porridge;
  2. The top film covering the carcass may be purple, pink or grayish, but the meat itself is only snow-white. If it has different colors, the product is obviously stale;
  3. If you are afraid of undercooking or overcooking seafood, use the following production method - steam blanching for three to four minutes;
  4. To obtain the most tender meat, it is recommended to lightly beat the carcass with a hammer. Just don't overdo it;
  5. It’s very easy to experiment with squid, so don’t be afraid to substitute and add ingredients. Know that this product will become even more valuable if it is prepared with tomatoes, fresh herbs, cucumbers and apples, and lettuce. The listed products will perfectly complement the main value of seafood - proteins;
  6. The preparation time for this product depends on the other components of the dish; it varies from 3 to 10 minutes. The longest preparation is stewing in creamy or sour cream sauce. Here you don't have to worry about stiffness.

Squid makes a good interior for baked pies, but it is better to eat such a delicacy not only freshly cooked, but the next day, when the seafood is saturated with other ingredients, and the taste is simply divine.

Squid can be fried in a frying pan, baked in an electric oven, or cooked on a barbecue. To do this, it is enough to marinate whole carcasses and baste them with the remaining marinade during production.
