Strawberry juice for the winter

The problem is that almost no one in Russia prepares strawberry juice for the winter.
When our own strawberries appear, we swarm on them like locusts, and a little is left for the jam.
Where are the juices, which consume more berries and have a shorter shelf life?
It is better to eat strawberries right away and store anthocyanins directly in your own body. For the winter.

Strawberry juice is made quite occasionally for the winter for another reason - this berry has a very gentle taste and it does not always transfer into the juice obtained from it.
For example, my beloved juice cooker is unsuitable in this case. In other words, basically. Instead of strawberry juice, you get something tasteless. Strawberries work better in jam, jam, well, they are used in compote, at least. But in vain. As it turns out, when processing strawberries, most of the necessary parts are saved specifically when making juice.
(see the benefits of strawberry juice) This juice is good both as an independent drink and as an ingredient in various cocktails. If you decide to fight for any vitamin (a low-molecular organic compound of relatively simple structure, necessary for all living things) , then it is better to squeeze the juice manually, through gauze.
I heard somewhere that when it comes into contact with an alloy, the juice loses some of its own necessary parameters and oxidizes or something. I use a juicer. Naturally, I am also in favor of vitamins (a group of low-molecular organic compounds of relatively simple structure and varied chemical nature) , but within the limits of reason and taking into account the means that facilitate manual labor.
So let's get started.

For strawberry juice for the winter we will need:

– strawberries 1 kg;
– sweet sand 200 g.

Ingredients for our preparation

Crafting recipe

Carefully wash all strawberries under running water.

Remove stems and spoiled fruits from strawberries.

Pass the prepared strawberries through a juicer.

Now pass the resulting pulp through a juicer.

And again skip the strawberry pulp.

Fill no more than 1/5 of the pan with the resulting strawberry juice, because when boiling the juice will rise very much.

Place the pan with the juice over medium heat and add the required amount of sugar.

Stir in the added sugar.

Bring the juice to a strong boil.

Remove the resulting foam and the strawberry juice is ready. Experts advise heating the juice to 85 degrees, but not bringing it to a boil, because it loses its characteristics. I don’t have a thermometer, but boiling gives me peace of mind and confidence that the juice, when stored on an insulated balcony, will not turn into mash for the winter.

Wash the jar with the lid under running water.

Sterilize an unstained jar with a lid for 25 minutes

Fill the hot jar to the top with hot juice.

Roll up the hot lid using a seaming machine.

Very tasty, fragrant and natural strawberry juice is ready for the winter!

Strawberry juice for the winter - a summer drink for the winter: a recipe for making it at home

Strawberry juice is made from time to time in the summer, but it is considered unnecessary to prepare it for the winter, processing excess berries into jams and preserves. It must be said that this is in vain. After all, juice has the same amount of vitamins and essential microelements as the freshest strawberries, which means it is healthier than jam, which is filled with a lot of sugar and boiled for many hours.

Try to make strawberry juice for the winter, and you will immediately feel the breath of summer, which does not happen when tasting jam.

Sort the berries, wash them, and remove the stems. It is better to rinse in a colander so that the strawberries do not collect water while you are cleaning them.

When using a juicer, the strawberry juice usually turns out virtually inedible. It is overcooked and loses its taste and smell. Therefore, it is better to use the manual method of making strawberry juice.

Grind the berries with a blender, juicer, or meat grinder. In this case, it doesn't matter, because, in any case, it will be more like strawberry puree. Naturally, you can leave it like that, but it’s better to create two sweets at once, instead of just one.

Strain the juice through a fine sieve, or tissue (a medical system of cells and intercellular substance, united by a common origin, structure and functions) . Pour the juice into a saucepan, and make marshmallow or marmalade from the remaining pulp.

Some of the strawberry juice can be frozen, and the rest can be preserved for the winter.

Add sugar at the rate of 100 grams of sugar per 1 liter of juice and so that the juice does not turn sour, it must be pasteurized.

Heat the juice over very low heat until almost boiling, but do not let it boil. It's not creepy, but the smell of strawberry juice will disappear.

Pasteurize the juice for at least 10 minutes, then pour it into prepared, clean bottles/jars, seal the lids, and repeat pasteurization with the jars closed.

Place the sealed jars of hot juice in a wide-bottomed saucepan. Place the jars in it and put some rags so they don’t dangle. Pour hot water into the pan, up to the lids, and time it from the moment it boils. For half-liter jars, 15 minutes of pasteurization is enough; for liter jars, 20-25 minutes are needed.

Remove the jars from the pan, place them in a drawer, and cover with a warm blanket until they are completely cool.

Store strawberry juice in a cool place, and inspect your preparations from time to time. If you see that the juice has begun to ferment, digest it and make strawberry syrup. It will literally last a year or two.

How to make strawberry juice

Strawberry juice for the winter can be prepared using various methods, without losing its beneficial properties. Almost every person understands the usefulness of such a drink, and strawberry juice prepared at home will also be natural, without industrial chemical components in the form of preservatives.

In winter, the human body especially needs vitamins and necessary substances. The freshest fruits are already out of reach at this time of year, so almost everyone prepares them in the summer. The recipes for this drink are very diverse; anyone can choose the production formula to suit their own taste and desires. Often mothers try to make low-sugar nectars from this healthy berry for their babies. When preparing a dish without the help of others, they have the opportunity to monitor the presence of one or another ingredient in the juice.

The value of these berries lies in their composition, enriched with vitamins and microelements. It is recommended to drink strawberry juice for people suffering from hypertension, cancer, anemia and heart failure. It is worth saying that the drink has the same beneficial qualities as the freshest fruits.

Juicing Methods

Housewives from time to time are interested in how to prepare strawberry juice so that it is tasty and healthy right away. In addition, there are various methods for its creation, and you can only choose in this case if you know what the final product will taste like and be of quality. Of course, no one wants to take risks and spoil the fruit, so it’s worth carefully familiarizing yourself with the technological and culinary features of making a drink from strawberries for the winter and studying all the recipes.

The most common method, which our grandmothers used, is grinding the berries or cold squeezing them. A kitchen utensil used was a sieve, into which the peeled fruits were placed, then they were crushed with a spoon until completely crushed. Cool pressing is a subsequent function: ripe berries were placed in a gauze bag and the juice was squeezed out of them using a press. Then it was collected and boiled, the pulp could be boiled in the form of jam for the inside of pies.

The 2nd method is the most modern and involves the use of a juicer. Using this kitchen appliance you can quickly prepare juice from all types of berries and fruits. Using a juicer, you can process quite a huge amount of ripe fruits without much effort. Often, recipes require the initial collection of a berry drink using this device.

The third method of making juice at home is to use a juicer. For most housewives, this option has become a true godsend, because it allows you to collect berry nectar that has already been heat-treated. In a juice cooker, such dishes are prepared quite quickly and without any effort or trouble for the hostess. The unit itself is a system of 3 compartments. The bottom container contains ordinary water, the juice flows into the middle one, and the berries are collected in the top container. Under the influence of steam, the fruits begin to release liquid, which flows into the middle container.

In extreme times, almost everyone prefers frozen drinks and berries. Frozen strawberry juice, the usefulness of which lies in the complete preservation of its necessary properties, can be used in the winter to make various dishes.

Any housewife chooses one or another method of preparing preparations for the winter, the main thing is that no matter how this wonderful drink is prepared, it will bring benefit and pleasure to loved ones.

Recipes for making strawberry drink

If you need to prepare a very small amount of nectar, then it is completely possible to do without electronic devices.

You will need 3-5 kg of berries and 2 tbsp. l. sugar per 1 liter of water. The fruits need to be sorted, cleaned of greens, washed and dried. Next, they need to be folded into a fabric bag, tightly closed and placed in an enamel bowl, after which a rather heavy load is placed on top. The berries are kept under pressure until all the juice has flowed out. After that, the collected liquid is brought to a boil and combined with sugar. It is enough for the drink to boil once, then you can pour it into sterilized jars and roll it up.

Step-by-step recipe with photos

Strawberry juice prepared for the winter comes out tasty, fragrant, and even capricious children drink it with pleasure. That is why I prepare it in small containers of 0.25 and 0.3 liters. By the way, depending on its ability, such juice can be mixed with others, for example: apricot, apple, grape, etc. Previously, such juices in jars were always on sale in stores; at the moment they are only in square packages, but they cannot even be compared in taste to those made at home! I advise you to stock up on such valuable preserves, especially if you have children.

The only disadvantage of making juice is that you need a lot of berries, but not enough juice comes out, but the end result is worth it! Buy strawberries during their harvesting season - in June-July, when prices for berries are absolutely incredible. I caught the second wave of strawberry ripening in September and I would like to say that the price has tripled compared to the summer one.

So, prepare the necessary ingredients and let's start cooking!

Peel the strawberries from the stems, pour them into a deep container and wash them in water, washing away dust and dirt, cutting out damaged areas on the berries.

Because I don’t have a juicer, I use a blender to make juices. Place the washed berries into a blender bowl.

Grind everything for 3-4 minutes, including the pulsation mode, so that all the berries are pureed.

After this, rub the strawberry puree through a strainer with small meshes, separate the cake and eat it or use it to make other dishes.

Pour the juice into a saucepan or saucepan.

Pour in the sweet sand and place the container on the stove.

Bring the juice to a boil over high heat, then simmer for about 5 minutes until the sugar is completely dissolved. You can remove the foam if you wish.

Sterilize the jar and lid, pour the bubbling juice into it and immediately seal it using the thread or key.

Strawberry juice is completely ready for the winter, let it cool at room temperature and store it in the pantry. It is better to store it at low temperature.
