Surely, it is difficult to find a person who would not adore dumplings. But if you don’t have time to make regular dumplings with entrails, try making the so-called “lazy” dumplings. Most often they are made with cottage cheese. The recipe for lazy dumplings with cottage cheese involves the same products as regular ones. But in this case, the cottage cheese does not act as the inside, but is included in the dough. As a result, the process of producing dumplings is greatly simplified.

How to cook lazy dumplings with cottage cheese - step-by-step recipe with photos

Prepare ingredients for lazy dumplings

Pour sugar, a little salt into the cottage cheese and grind well. Beat in the egg and add the drink (if the cottage cheese is low-fat and watery, then you don’t need to add the drink), stir everything well.

Add melted butter to a homogeneous curd mass without lumps and evenly pour flour, which is better to sift in advance. Knead the dough first with a spoon, and later with your hands, doing this on a board or on a table sprinkled with flour. The dough doesn't have to stick to your hands very much. If necessary, add more flour.

Now you can pour water into the pan (it’s better to fill a little more than half the pan with water), add a little salt and put it on fire.

It's time to start making the lazy dumplings themselves. To do this, the curd dough needs to be cut in half. From each part, roll a sausage with a diameter of about 2-3 cm and cut it crosswise into pieces of uniform size (approximately 1 cm wide). They can be laid out on a plate or on a board sprinkled with flour.

When the water boils, carefully lower some of the dumplings into it. It’s better not to add a lot right away, because during the cooking process they will increase in size. How long to cook lazy dumplings with cottage cheese? Usually, after the dumplings float out, they are cooked for about 2 more minutes. But it all depends on the size of the pieces: if your dumplings are plump, then you need to cook them a little longer, about 3-4 minutes.

Remove the dumplings from the pan with a slotted spoon and pour over the butter.

When serving, dumplings can be sprinkled with sugar and sour cream. Lazy dumplings can be eaten in this form, but you can make them much tastier and more appetizing if you also fry the cooked dumplings in butter in a frying pan. To do this, place them in a perfectly heated frying pan with oil and fry over medium heat until golden brown on each side. This will take approximately three minutes on each side. It is literally recommended to do the same if you need to reheat cooled dumplings.

So lazy dumplings with cottage cheese are ready! The step-by-step photo recipe outlined above will make the process of making them easier.

For lunch and dessert - kefir dumplings

The abundance of recipes for dumplings with kefir lies in the huge number of entrails, but the dough actually always remains the same. The choice of “filler” is limited only by the owner’s imagination. Potatoes, cabbage, mushrooms, meat, fruits, berries... For sweet insides, sugar is added to the dough. You can prepare it for future use and freeze it. Or make dumplings and freeze them. Dumplings are cooked in water or steamed, in a slow cooker or microwave.

The dough is prepared from available common ingredients:

  • any drink is suitable, from low-fat to full-fat;
  • flour - take more than indicated in the recipe, since you need to dust the table on which you will roll out the dough;
  • testicles - from time to time they do without them;
  • salt;
  • soda or baking powder;
  • sugar - optional.

Dumplings made with kefir are usually prepared with boiled or stewed potatoes, cabbage, meat, and mushrooms. Raw entrails will require approximately double the cooking time, but these will no longer be “perfect” dumplings. By the way, if you take raw minced meat, the purchased dish will be called dumplings. Take fresh or frozen fruits and berries.

  4. Roll out the dough into a layer 3-5 mm wide.
  5. Cut out circles, place the filling in the middle, fold in half and pinch well.
  6. Boil salted water, place dumplings in it and stir immediately.
  7. After floating, cook for 5 minutes.
  8. Remove with a slotted spoon, season, and serve!

Set it on high power for one minute, then at half power for about eight minutes. If frozen dumplings are used, the cooking time should be increased.

Galushki (Ukrainian galushki, Slovak haluky, Ingush hyaltamash, Chech galnash) is a dish of Eastern European (Hungary, Slovakia, Czech Republic, Poland, Ukraine) and partly North Caucasian (Chechnya, Ingushetia, Balkaria) cuisines, which is boiled in pieces of dough in boiling water. Ukrainian dumplings are served as a separate dish (with butter or sour cream) or soup is cooked with dumplings. In Ingushetia, there are two types of dumplings - zhur-khaltamash (Chechen akhar galnash) (made from corn flour) and khyor-khaltamash (made from wheat flour). Both types are certainly served as a side dish along with wild garlic or garlic sauce for meat. In Chechen, Ingush and Balkar cuisines, boiled meat with dumplings is often prepared. Baked, fried or charcoal-grilled meat is less often prepared. In all types, dumplings with sauce are added to the meat.[1]

There is also a variety of them (as a separate dish) called “Lazy dumplings” - usually served with sweet gravy (condensed milk with melted butter, or something similar).
