Our family, like most of the residents of Arkhangelsk, cannot imagine their own diet without cod - a healthy and tasty sea fish. Boiled cod in milk, poached in tomato sauce with mushrooms, cod fish soup and cod liver, cod stewed with cabbage, baked with cottage cheese or sour cream sauce with mushrooms, fish soup, etc. Cod has snow-white, flaky meat. This fish should not be subjected to long-term heat treatment, otherwise it will become rubbery.

Cod is usually baked with vegetables or ready-made cereals, pouring cream or sour cream over them. In this combination, the dish perfectly complements the cheese. I suggest baking cod with potatoes in cream in the oven. As a result, both fish and potatoes are soaked in cream, which gives them a delicate creamy taste. Naturally, you can add spices or herbs, but, for my taste, rather dark ground pepper.

To make cod baked with potatoes in the oven, I prepare products according to the indicated list.

I wash the fillet and cut it into small pieces. If I use a whole cod carcass, I clean it of scales and entrails and cut it into pieces.

Place the pieces of fish in a bowl, salt and pepper to taste. I leave the fish to salt while the potatoes are cooked.

I peel and wash the potatoes.

I cut the potatoes into circles 3-4 mm wide, boil them just a little bit until cooked, so that the circles retain their shape.

In our country, cod and potatoes are often baked in portioned clay or metal forms. I use a small cast iron frying pan and a clay pan and grease them with vegetable oil.

I put boiled potatoes in the molds.

I salt it and sprinkle with ground black pepper to taste.

  • The taste of cod is very gentle, so it’s very easy to add spices to it. For this fish, garlic, dark and snow-white pepper are ideal.
  • The presence of lemon is not essential for this recipe, but if you use it in moderation, it will only emphasize the delicate taste of cod with potatoes.
  • For baking, it is better to use clay or cast iron dishes. Iron utensils can adversely affect the color of the finished dish and also reduce the amount of vitamins and other necessary substances in it.
