Rice soup with meatballs comes out very fragrant. This soup is suitable for baby food, especially if it is prepared not with broth, but with water, and the minced meatballs are made from lean meat (chicken fillet or beef, but it will also be very good with pork). You can use any variety of rice for soup, from wild rice to the round-grained Krasnodar type. I absolutely love this kind of soup with basmati rice, but this time I used regular steamed rice. Otherwise everything is as usual :)
Let's get started! Prepare water, potatoes, onions, carrots, ground beef, rice, vegetable oil, salt, bay leaf, dried or fresh herbs and a pinch of ground pepper.
Boil the potatoes (small cubes) in water until almost done, add salt to the water and place the washed rice in the pan.
Cook the soup until the potatoes are soft and the rice is half cooked.
Form small meatballs from ground beef with salt and a pinch of ground pepper and place them in the soup.
Bring the soup to a boil - the meatballs will float to the surface. Continue cooking it for another 5 minutes over low heat under the lid.
While the meatballs are cooking in the soup, fry the onion (diced) and carrots (small grater) in vegetable oil and transfer the frying to the soup.
Cook the soup for another 5 minutes, add dried parsley (or fresh herbs), half a bay leaf and turn off the stove.
After 5-10 minutes, when the soup is sufficiently infused, it can be served

The most delicious recipe for soup with meatballs and rice
To prepare the most delicious soup in the world from early youth, you will need a small amount of goods. There are a huge number of the above recipes, and they all differ only in the set of ingredients.
Some people cook the soup with rice, while others prefer to add homemade noodles and more vegetables to it. We will prepare the dish according to the traditional recipe.
- minced meat (pork-beef, pork, beef) – 250 g;
- potatoes - 3 pieces;
- carrots (large) – 1 piece;
- onion - 1 piece;
- round rice – 2 s. l;
- salt – 2 tsp;
- ground dark pepper – 2 pinches;
- vegetable oil – 4 tbsp. l;
- bay leaf – 2 pieces;
- untainted water – 2-2.5 liters.
You can add washed and perfectly dried favorite greens to the finished dish. The traditional recipe contains half a bunch of parsley, green onions, and dill.
Peel the onion. Divide the onion into two halves. Grind half with a blender until mushy.
Place the minced pork and beef into a deep bowl. Combine the onion mass with the minced meat.
Add pepper and salt to the resulting mixture. Mix all ingredients thoroughly with washed hands, lightly massaging the mass. To ensure the density and uniformity of the acquired mass, you need to take the minced meat in your hands and crush it, like plasticine.
We form round uniform balls - meatballs using a teaspoon and place them on a flat plate at a certain distance from each other.
In order to get even balls of minced meat, you need to take a small amount of mass into a teaspoon and roll with wet hands. Place the hand-rolled balls on a flat plate and gently flatten them.
Pour clean water into the pan. Salt and pepper it and bring it to a boil.
Peel the potatoes and wash them. Cut the tuber in half.
Cut the peeled potatoes into similar cubes. Place the chopped vegetables on a plate and set aside.
Chop half of the onion into cubes.
Wash and peel large carrots. Grate the carrots on a large grater.
Finely chop well-washed parsley, dill, and green onions.
After the water boils, carefully transfer the meatballs into boiling water. Cook for approximately 7-10 minutes. Remove any meat foam that appears.
After the meatballs are cooked, they will need to be removed from the boiling water using a slotted spoon and placed on a plate.
After cooking the meatballs, add diced potatoes to the broth.
Wash the round rice and put it in boiling water.
Bring the soup to a boil and cook for 10 minutes.
Pour vegetable oil into a deep frying pan. Place carrots and onions in hot vegetable oil.
Stir the vegetables and fry for 3-5 minutes until golden brown. Add fried carrots and onions to the future soup.
Stir and return the meatballs.
Add bay leaf. Boil for 10 minutes, stirring constantly.
Add greens. Check the soup for salt and pepper; if it tastes bland, add a few more spices. Pour the rich soup with meatballs into bowls.
Experienced chefs talk about various subtleties in making such a rich soup. If it is served to people who are on a diet, do not fry the vegetables in vegetable oil. In this case, it is best to put the carrots and onions in the broth raw.
If you want to get a very fatty and rich soup, at the end of cooking, grated processed cheese is dipped into it. True gourmets strongly recommend adding 2 tablespoons of tomato paste and 2 teaspoons of sugar at the end of cooking the soup.

Ingredients:
- Rice – 80 g
- Water – 1.6 l or broth
- Minced meat – 300 g
- Carrots – 100 g
- Leek – 70 g
- Onion – 50 g
- Garlic – 2 teeth.
- Greens – 2 tbsp.
- Seasoning – 1 tsp. dry herb mixture
- Bay leaf – 1 pc.
- Allspice – 3 pcs.
- Potatoes – 2 pcs. small
- Milk – 40 g or water
- Sour cream – optional for serving
- Butter – 15 g for frying
- Salt - to taste
- Dark pepper - to taste
Manufacturing:
Ground meat. I constantly say and will not tire of repeating - do not buy ready-made minced meat, take a piece of meat and twist it yourself. Naturally, I don’t want to get involved with some three hundred grams of meat, because... think about cutlets along with soup for lunch and buy both at once, as I always do. To be more precise, when I use meat for cutlets, I always make soup with meatballs. Or another option: again take more, mix everything and simply freeze the excess.
I always use two types of minced meat: pork and beef. More often than not there is more of the former.
Peel the onions.
I take a huge onion and 2 cloves of garlic for 700 grams of minced meat. For 300 grams - approximately 50 grams of onion and 1 clove of garlic. I don’t add any loaves (specifically to the meatballs) - I like it when the meatballs consist simply of seasoned minced meat. If you want the minced meat more tender, grind it through a meat grinder not once, but twice. If you want it to become completely soft, then add a loaf soaked in milk or water (soak 1 piece in the indicated 40 grams of milk or water) or 1 tablespoon of ground crackers.
Pass the meat, onions and garlic through a meat grinder, add salt, dark pepper and seasonings. I use a mixture of basil, marjoram, oregano and thyme - I love everything natural, I don’t use any powders or vegetables.
So, stir everything well and, better yet, beat our minced meat a little - for greater homogeneity. The quantities of all ingredients are given for 300 grams of meat. If you did more, separate and mix everything with the indicated ingredients: 40-50 grams of milk or water, onion, garlic, a teaspoon of dried herbs, salt, dark pepper, if desired, soak a piece of loaf in milk or water or add a tablespoon of crackers.
With wet hands, form small meatballs.
Wash the rice well.
Pour water or broth into a saucepan (I have 5050) and put it on fire, add rice and cook after boiling for about 10 minutes, until half cooked.
In the meantime, the water is boiling and the rice is cooking, it’s time to prepare our vegetables.
Wash, peel and cut the potatoes into small cubes. Next, wash and cut the leeks into half rings (you can replace them with regular onions), peel and grate or cut the carrots into small cubes. Absolutely, according to technology, if you have already started cutting something into cubes or strips, then you need to continue in the same spirit. But, fortunately, this does not affect the taste in any way and, if you feel comfortable grating carrots and not cutting them, then grate them for yourself, let’s not think about standards.
Melt the butter in a frying pan and add the carrots and leeks.
Fry over medium heat for about 2-3 minutes. Naturally, butter is completely replaced with vegetable or olive oil.
After cooking the rice for 10 minutes, add potatoes and vegetables from the pan to the pan. Let the water boil and add the meatballs. At this point, you can salt everything, add bay leaf, aromatic pepper and cook for about 10 minutes until the meatballs, rice and vegetables are ready. Close the lid and turn the heat to low.
By the way, if I make this soup during the vegetable season, then I certainly add finely grated zucchini. In this case, I reduce the amount of rice to 60 grams, and the soup turns out to be the most vegetable and light. You can also add a little grated pumpkin. This soup also loves tomatoes, which are best skinned if cut into cubes. You don’t have to make any unnecessary movements, but simply puree the tomatoes in a blender. In any case, it is better to fry them a little along with carrots and onions.
Peel the remaining garlic clove and pass through a press. Or simply crush it with the flat side of a knife blade and chop it. We will also need fresh or freshly frozen herbs, in my case parsley and dill frozen from the summer.
Almost 30 seconds before the end of cooking, add all the greens to the pan along with chopped garlic, close the lid, turn off and let stand for another 10 minutes - all the ingredients will become related and the smells will become stronger. Taste and adjust the taste. I don’t add dark pepper, since everyone takes as much as they want for themselves (kids without pepper).
Serve, for example, with sour cream. A very ordinary and tasty soup. Try it and bon appetit!

- Combine minced meat with several types of meat, for example pork and beef, so your meatballs will only turn out tastier and will not be very fatty and dry.
- Take round-grain rice and soak it for 20 minutes beforehand, and then wash it with running water so that your soup does not turn out cloudy.
- Do not fry the onions and carrots too much, but simmer only a little over medium heat.
- Rice 0.5 cups;
- Minced pork and beef 200 grams;

- Snow white bread;
- Egg 1 piece;
- Vegetable oil 2 tablespoons.
1. We will need a couple of pieces of snow-white bread without crust; they need to be soaked in cool water. Also soak the rice in cool water in advance.
2. Put 2-2.5 liters of water on the fire to heat. Add bay leaf.
3. Next you need to create minced meat, grind the meat well in a meat grinder, add bread crumb and a slightly beaten egg to it and mix everything thoroughly. Form meatballs the size of a walnut.
4. Peel the potatoes, cut them into small pieces and throw them into boiling water.
5. Next, finely chop the onion and carrots and simmer over low heat for 2-3 minutes.
6. Add carrots and onions, stewed in vegetable oil, to our soup. Add rice.
7. Place the formed meatballs into the pan and let them simmer for 10 minutes. Salt and pepper to taste.
8. Before serving, sprinkle with finely chopped herbs.
