Dietary does not mean tasteless. There are dozens of dishes that are beneficial for our body, while being very tasty and fragrant. These include beetroot salad with apples and walnuts “Health”, the recipe for which I bring to your attention.

Beetroot salad with apple and walnuts without mayonnaise, seasoned with aromatic sunflower oil and lemon juice. The dish is good for digestion, light and nutritious right away.

Ingredients

  • beets – 1 pc. (120 g)
  • apple – 1/2 pcs. (50 g)
  • lemon juice – 1 tbsp. l.
  • salt – 1-2 chips.
  • sugar – 1 chip.
  • chopped walnuts – 1 tbsp. l.
  • sunflower oil – 1 tbsp. l.

Manufacturing

Boil or bake the beets in advance. I chose the 2nd method - wrapped the root vegetable in foil and baked at 180 degrees for 1 hour. If you cook, fill with cool water and add 1 spoon of vinegar, bring to a boil, cover with a lid and cook until tender. Cool and peel off the skin.

The cooked beets must be chopped into narrow strips using a Korean carrot grater.

Wash, peel and chop the apple into strips.

Season with salt, sugar, lemon juice and sunflower oil - for this salad it is best to use unrefined salad oil, which smells delicious of roasted sunflower seeds.

Add nuts - they need to be dried in a dry frying pan, and then cut into large pieces or beaten with a rolling pin. Mix the salad.

Place the beetroot salad in a heap on a plate, garnish with nuts and a slice of lemon.

Making salad

First you need to boil the beets. It is better to create this in advance, as the process takes 1-2 hours. Carefully wash the beets, place them in a saucepan, fill with cool water and bring to a boil.

Cover the pan with a lid and reduce the heat to low. Cook for about an hour, maybe more if the beets are large.

We check readiness with a fork; if the beets are simply pierced, they are ready. Remove the beets and cool under running water. Peel the cooled beets and cut them into thin bars, strips or cubes.

Wash and core the apples; you can discard the skins. We cut the apples in the same way as the beets. Mix the chopped ingredients in a deep bowl.

You don’t need to soak the raisins for the beetroot and apple salad in advance, but be sure to thoroughly wash them under running water and dry them with a towel or napkin.

Add raisins to the already prepared fruit and vegetable mixture. By the way, instead of raisins, you can use any dried fruits that you like: dried apricots, prunes - before adding them to the salad, they must be finely chopped.

Prepare the salad dressing: In a separate bowl, mix olive oil with apple cider vinegar, salt and pepper. For those who like it spicy, you can add a few cloves of chopped garlic or a pinch of chili pepper. Mix thoroughly and season the salad with the acquired consistency.

It is recommended to serve this salad immediately after preparation. You can complement the dish with the freshest bread, lightly fried on each side.

  1. Boil the beets until half cooked, cool, peel and grate.
  2. We wash the apples, peel and core them and also grate them.
  3. We do the same with carrots.
  4. Place the grated products in a deep saucepan, add salt, oil and water.
  5. Mix everything thoroughly and bring to a boil, then reduce the heat and cook for about 15 minutes.

Place the finished salad in sterile jars and roll up the lids.

Introduce beetroot salads from new or boiled vegetables into your daily diet, and in return you are guaranteed to feel good and cheerful. Their production does not take much time, but their usefulness is enormous.
