Traditional recipe for apple and pear charlotte
Well, I’ll probably start with the usual recipe for a delicious pie called Charlotte with pears and apples. Why is this the traditional option? And therefore, apart from the two indicated fruits, we will not add anything else to the filling!
There are a lot of products for making this dish that you won’t need. We use what, in principle, every housewife has in stock. Naturally, except for apples and pears, because these are perishable fruits.
Ingredients:
- Greenish apples - 2 pcs.
- Pear - 1 pc.
- Flour - 250 gr
- Chicken eggs - 4 pcs
- Sugar
- Vegetable oil - 1 tbsp. l.
- Salt - a pinch
So, after we have prepared all the ingredients for cooking, let's get down to business. Let's cut the fruits in advance so that we can simply add them to the dough later.
Be sure to wash apples and pears under running water before using them.
You don’t have to peel the apple if it has a narrow skin; otherwise, it’s better to remove it so that it doesn’t spoil the taste of the pie. We dice one apple into small cubes, and cut the second into thin slices.
Next, cut the pear into cubes and set it aside with the apple. In the meantime, let's start preparing the charlotte dough.
Take two deep bowls and break the eggs into them, separating them into yolks and whites. Add salt to the first, and sugar to the second. Beat both mixtures until foamy.
Add a little flour to the yolks, mix, and then mix with the whites. Now it is best to use a mixer to thoroughly beat the dough.
Grease a baking dish with vegetable oil and lay out the apple slices. Next, pour the dough and place fruit cut into small cubes on top of it. Now we put it in an oven preheated to 180 degrees and bake for about 30-40 minutes at the same temperature.
You can check the readiness with a wooden skewer or toothpick; if, when you pierce the charlotte, no dough remains on the piece of wood, then the baking is ready! Cool it and decorate to taste.
Recipe for fluffy apple and pear charlotte with sour cream
What can give baked goods a soft and delicate texture? Well, naturally, sour cream! Therefore, hurry up to write down the recipe for a fluffy charlotte made from apples and pears with sour cream.
Try to choose the freshest sweet fruits with a thin skin and you can get a wonderful tea cake.
Ingredients:
- Pears - 1-2 pcs
- Apples - 1-2 pcs
- Sugar - 200 gr
- Wheat flour - 200 gr
- Chicken eggs - 4 pcs
- Sour cream - 3 tbsp. l.
- Butter - 20 g
- Baking powder - 1 sachet
Let's start by making the dough. Break the eggs into a deep bowl, add sugar to them, and quickly mix them using a whisk.
Now you need to add the sifted flour, having previously mixed it with baking powder. After this, use a mixer and beat the mixture. Add sour cream to it and beat again.
Wash the apples and pears under running water, dry them with a clean towel, and cut them into slices.
Grease the prepared baking dish with butter and pour in 1/2 of the dough. Next, lay out the fruit slices in any order. Fill them with the remaining dough on top. We bake all this for 40 minutes in a preheated oven at 180 degrees. After the end of time, check readiness and turn off the oven. Enjoy your tea!
Apple and pear charlotte with cinnamon cooked in the oven
You can add an unusual taste to any baked goods with a delicious seasoning - cinnamon. In this recipe for charlotte made from apples and pears, we will use it ground.
Just the smell of cinnamon can whet a wild appetite, which is why this is an ideal dish to serve to guests - fast and very tasty! There are literally no phlegmantic people left.
Ingredients:
- Apples - 2 pcs.
- Pears - 2 pcs.
- Wheat flour - 200 gr
- Chicken eggs - 5 pcs
- Baking powder - 10 g
- Cinnamon – 2 g
- Sugar - 200 gr
First, let's prepare the fruit for baking; we need to let it sit for a little while - just while we knead the dough, it will be completely satisfied.
We wash the apples and pears very well under water and cut them into cubes. Place in a deep bowl, sprinkle with sugar (100 g) and cinnamon. Mix everything well and set aside for now.
Break all the cooked eggs into a deep bowl, add sugar to them and beat until foam appears.
Sift the flour through a sieve, pour it into the sugar-egg mixture, and also add baking powder. Beat until a thick, homogeneous mixture. Next, pour a little dough into the mold in which we will bake the charlotte (so that it covers the bottom). Arrange the fruits and pour the rest of the dough on top. Place in a hot oven (180 degrees) and bake for 40-45 minutes until done.
Puffy charlotte with apples and pears on kefir without eggs and soda
This recipe for charlotte made from pears and apples is completely different from others. Firstly, we will not use eggs to make the dough, and secondly, the dough will contain a drink. Well, of course, to create a porous, fluffy structure, we will add baking soda.
The pie tastes very tender and soft, and what a smell!
Ingredients:
- Pears - 1 pc.
- Apples - 1 pc.
- Wheat flour - 2 cups
- Soda - 0.5 tsp.
- Drink - 1 glass
- Vegetable oil - 1/2 cup
- Sugar - 3/4 cup
- Vanilla sugar - 1 sachet
We start by kneading the dough - add a little flour into the drink and mix. Next, add soda, vanilla sugar and pour in the oil.
Using a whisk, bring the mixture to a homogeneous mass.
We need to add apple pieces to the finished dough. To do this, rinse it well, dry it with a cardboard towel, get rid of the skin and cut it into small cubes.
Prepare the baking dish. Because our first layer will be a pear (and it can burn in the pan), we cover the pan with baking paper. Lubricate with a few drops of vegetable oil. Wash the pear, wipe it, cut it into flat slices (you can throw in the skin). Place the dough on top and put it all in the oven at 180 degrees for about 40 minutes. When finished, the baked goods can be decorated with sweet powder or berries.
In this selection of recipes for charlotte made from apples and pears, we looked at more tasty and successful versions of the baked goods given to us. The main advantage of such charlottes is their ease of manufacture. Therefore, even if you have never baked anything, you can take on these recipes with confidence! Bon appetit!

manufacturing method
1. Turn on the oven at 180 degrees Celsius.
2. Break the chicken eggs into a bowl and add sugar. Beat the resulting mass well with a mixer at medium power until fluffy snow-white foam. Then add sour cream and mix again.
3. In a separate container, sift premium white wheat flour through a fine sieve. Add baking powder to make the baked goods fluffy and airy. Thoroughly mix all the ingredients together.
4. In small portions, a little at a time, pour the sifted wheat flour with baking powder into the sugar-egg mixture directly under the mixer blades, constantly beating the resulting dough at medium power. Mix the dough thoroughly, avoiding flour lumps. The dough should turn out watery, the mixture reminiscent of thick, fatty sour cream.
5. Wash ripe sweet fruits well under running water and dry with cardboard towels. Then peel the apples and pears and cut into medium-sized cubes.
6. Grease the bottom and sides of the baking dish with a piece of butter.
7. Pour half of the dough into the baking dish and moderately distribute the apple and pear filling over the entire area of the mold. Then pour the rest of the batter on top of the fruit interior. Lightly twist the pan from side to side so that the batter fills all the gaps.
8. Place the charlotte in the preheated oven and bake for about half an hour until the top is deliciously golden brown. You can check the readiness of the pie using a toothpick or wooden skewer by piercing the very core of the charlotte.
9. Let the finished charlotte cool slightly, then carefully remove it from the baking dish, turning it over onto a large plate. Once the pie has cooled, sprinkle the top with sweet powder and you are ready to serve.

Step-by-step recipe with photos
Take ingredients for making charlotte with apples and pears. They should be at room temperature. Sift flour through a fine sieve. The weight of the fruit is indicated as a whole.
Peel the apples and pears, remove the seeds, and cut the pulp into small cubes. Pour lemon juice over the resulting tenderloin to prevent the fruit pieces from darkening.
Beat chicken eggs into a dry large bowl and add sweet sand. If desired, you can also add a teaspoon of vanilla sugar or vanilla on the tip of a knife. It will give the baked goods a pleasant smell.
Using a mixer, beat the mixture until fluffy and light; some of the sweet crystals should dissolve. It is better to start whipping at low speeds, gradually moving to the highest speed. The whipping time will depend on the power of your equipment.
Add sifted wheat flour and baking powder into the egg-sugar mixture.
Use a silicone spatula to gently stir from bottom to top to keep the dough airy.
Add apple and pear slices to the dough.
Stir again so that the inside is moderately distributed, and transfer the dough to a pan lined with parchment. I cover only the bottom of the mold, leaving the sides dry.
Bake charlotte with apples and pears in a preheated oven for 30-35 minutes at 180 degrees. Be guided by your own oven. The baked goods should acquire a uniform golden brown color. Check readiness with a wooden skewer so that there are no traces of raw dough left on it.
Cool the finished charlotte on an iron rack, cut into portions and serve.
The inside of the pastry is soft and porous, and on top it is golden brown, slightly crispy, with a sweet crust.

Manufacturing characteristics in a multicooker:

Recipe for “Charlotte with apple and pear in a slow cooker”:
Peel the apples and pears (optional) and chop them. Turn the multicooker on to the “Baking” program, melt the butter, add a tablespoon of sugar and cinnamon, stir, add apples and pears, stir again, turn off the multicooker.
Using a mixer, beat the eggs, sugar, and vanillin until the mixture becomes a dense, snow-white mass. Next, I dilute a few grains of citric acid in a small amount of water and extinguish the soda. I pour it into the beaten eggs, mix, add a little flour, beat everything with a mixer.
Pour the dough into a saucepan over the fruit.
Production time depends on the multicooker model. I have a Panasonic multicooker, I put the charlotte on the “Baking” program for 1 hour and 20 minutes. At first I set the program for 60 minutes, and after turning it off for another 20 minutes. In the end we have such beauty!))
