Cottage cheese casserole with milk and semolina

Cottage cheese casserole with milk and semolina

Description of the dish.

Hello, dear readers. I am pleased to present to you the first recipe sent for a role in our spring competition.

This is another variation of making a good dish from cottage cheese - casseroles with milk and semolina.

As the creator of the recipe, Irena, wrote to us, this wonderful culinary product was to the taste of not only her, but also her husband.

From my own experience, I will say that men occasionally enjoy eating dishes that do not have a meat component, so I think that even if our reader’s husband is ecstatic about this pastry, then the children and the female half are bound to like it.

I invite everyone to try making cottage cheese casserole with milk and semolina according to the detailed step-by-step recipe presented below, and also appreciate the creator of the recipe...

Nutritional value of the dish per 100 grams.

Production time: 50-60 min.

Number of servings: 3-4 servings (900 g).

Ingredients of the dish.

  • Cottage cheese - 0.5 kg.
  • Egg - 2 pcs.
  • Semolina - 40-80 g (2-4 tbsp).
  • Sugar - 50-75 g (2-3 tbsp).
  • Milk - 50-75 ml (3-5 tbsp).
  • Raisins - 100 g optional.
  • Sour cream - 20 g (1 tbsp) optional.
  • Salt - 2 g (pinch).
  • Butter - 5 g for greasing the mold.

Recipe of dish.

Sour cream and butter are not shown in the photo because they are used as needed.

If you prefer a golden brown crust on the surface of the product, then it is better not to abuse these products and add them to the curd casserole with milk and semolina.

Cottage cheese and other milk products can be consumed in any fat content, but it is better to give preference to homemade country products. Because purchased cottage cheese, especially in packs, will have the most watery density and to compensate for this, it will be necessary to introduce more semolina, which can have a bad effect on the taste and dietary qualities of the final dish.

Those who do not like dried fruits in baking can avoid using them.

We wash the raisins and soak them in hot water.

Pour 2 tbsp of semolina (1 tbsp is left for processing the mold) with milk (3 tbsp). Set aside for swelling.

Turn on the oven preheat to 180-200 C.

At this time, in a deep bowl with a mixer, beat eggs (2 pcs), a pinch of salt (1-2 g) and sugar (3 tbsp) until foam forms.

Grind the curd grains using a mortar or rub through a sieve.

Drain the water from the raisins and dry them with a towel. Add dried fruit, egg-sugar mixture and swollen semolina to the bowl with cottage cheese.

Combine all ingredients into a homogeneous mass. It should turn out not very watery (a mixture of thick sour cream); if necessary, you can add more semolina, mix and leave for 10-15 minutes so that the cereal swells in the cottage cheese.

Grease the mold with butter and lightly sprinkle with semolina (either flour or breadcrumbs). If your cookware has a non-stick surface, it does not need to be processed at all. By placing baking paper on the bottom of the baking sheet, you can also further protect yourself from the casserole sticking to it and thereby make it easier to remove the product from the mold.

Place the resulting mixture in the prepared baking dish.

On top, if desired, grease the workpiece with sour cream, just a little, to then form an appetizing golden-brown surface.

Place the baking sheet in an oven preheated to 180-200 C.

Bake for 40 minutes. The dish may take a little longer to prepare, or, on the contrary, much faster, depending on the capabilities of your stove and the height of the casserole.

We take the finished dish out of the oven (whether it’s baked or not, we can tell by a dry toothpick), and let it “rest” a little right in the pan.

Cut the cooled dessert into portions; if desired, the dish can be lightly sprinkled with sweet powder. Then we go to drink fragrant tea with a wonderful casserole together with your loved ones.

Recipe for “Cottage cheese casserole “The Warmest””:

1. Prepare ordinary, in fact, semolina porridge: add sugar, salt, vanillin to milk and bring to a boil evenly.
Then, stirring constantly so that no lumps appear, pour semolina into the milk. And in almost a few minutes the porridge will be ready - it will thicken (don’t forget to stir it often until it’s completely ready). 2. Set aside the porridge so that it cools slightly.
Beat the eggs and pour them evenly into the prepared porridge (there is a possibility that if the porridge is very hot, the eggs will curl). 3. And now add cottage cheese to the resulting mass and stir well until smooth.
4. According to your taste, you can add lemon zest, nuts, raisins or dried apricots to the casserole - use your imagination here.
But I recommend trying this casserole for the first time without any additives, I love it just the way it is. 5. Grease the baking dish with butter and distribute the prepared mass over it sparingly.
And put in an oven preheated to 180 *C for about 30 minutes. You can check for readiness using a wooden stick, such as a toothpick. Carefully pierce the casserole; if there is no dough left on the stick, the casserole is ready.

You can serve the casserole hot, sprinkled with powder or sprinkled with honey.
It is also very tasty when chilled (even the next day). Bon appetit!
