It’s hard to say why Minutka cookies have such a name, but it’s literally not because of the production time - it takes a lot of time. Perhaps the fact is that the cookies are small, and just a minute of your time is enough to eat them?

The dough for Minutka cookies is so elastic, hard and unyielding that it requires considerable effort when rolling out. The thinner the layer is stretched, the better the structure. Then, instead of petrified hardness, you get a tiny, weightless, dry, and most importantly, non-stale (I guarantee three days in the bag) shell.

The inside of Minutka cookies can taste different, from sweet - fruit, chocolate, berry, but it is certainly thick, otherwise it will leak out of bounds and burn. Boiled jam, marmalade, dried fruits, steamed poppy seeds with nuts, and caramelized condensed milk are especially suitable.

We immediately heat the milk together with the butter in the microwave or on the stove - let the butter completely melt. Cool slightly until warm. You need to see that the dough for this recipe is very similar to the lean version of the so-called “Swiss”. Instead of milk, take ice water, instead of butter - vegetable oil, do not add eggs. Both types of dough are painstakingly kneaded, rolled out very thinly, so that during baking the layers separate and come out brittle and brittle. They bake bagels, tubes with insides, crackers and straws with herbs, grains, and salt. Both the 1st and 2nd dough are perfect for both sweet and savory interiors. The fundamental difference is that it is much more difficult to work with the “Minute” cookie dough, the one made with milk and butter.

Separate the white - at the moment only the yolk is useful. To prevent the yolk from curdling (or not being cooked), very hot milk and butter need to cool slightly. Then dip the yolk into the milk and whisk vigorously with a hand whisk or mixer. Pomp is not important. Enough to bring the liquid until smooth.

Add flour with a portion of baking powder. Add flour in parts. It took me exactly 350 g, maybe with a different quality of flour 300 g would be enough. You can knead by hand, in a planetary mixer or in a food processor with a “knife” attachment - with units, of course, it’s much faster and easier. Once all the flour is saturated with moisture, sticks together in crumbs, and then clumps together, transfer it to the countertop. Lightly knead with your hands.

Roll into a smooth bun, wrap in cling film (so as not to dry out on top) and leave at room temperature for 30 minutes alone.

Divide the “rested” dough for Minutka cookies into parts that are comfortable for rolling out. Using a rolling pin, we pull out almost transparent cakes - there is no need to dust the board or countertop with flour. The layers do not stick either to the rolling pin or to the work surface. The only thing, I repeat, you have to use pressure and force to pull it out very thinly. Don't be lazy at this step; the same dough with different widths will show different results. We cut the cake into small squares: with a side of approximately 5 cm. We put the illiquid edges back into use and connect them with the next lump.

In the center of each square we place a mound of some tasty jam (or other innards). Surely you saw that the dough contains no sugar, honey, or other sweets? Everything is correct, as intended. Neutral flour base, without salt, other flavor enhancers and flavorings - just a warm creamy note. The rest depends on the richness of the interior. Having distributed the jam, we connect the two opposite corners of the dough. Press tightly with your fingers; in the oven the edges may come unglued (!). Press down.

We transfer the semi-finished products to a baking sheet with oiled baking paper - you can squeeze them out, because the cookies will practically not change in size. Bake in a previously preheated oven for about 15-20 minutes at a temperature of 190-200 degrees. You can't put everything on one baking sheet - it's a big batch, it'll last forever.

For those with a sweet tooth, sprinkle “Minutka” cookies with additional sifted sweet powder. Serve with tea, coffee, along with milk and fermented milk drinks, compotes and fruit drinks - bon appetit.
