Pea soup is the first dish that almost all of us love to enjoy. The main ingredient of the soup is dried peas, which during the cooking process become soft, softened and give the first dish a unique taste and smell. Pea soup can be quite high in calories. It all depends on the choice of goods for production. But its usefulness is very great, and you shouldn’t shy away from a plate of delicious, hearty pea soup with smoked sausage, which we are about to prepare.

Take these products.

First you need to cook the peas. You can take dry peas of any variety. In my case - green, not whole peas.

Rinse thoroughly under running water until the water becomes clear. Rub the peas directly between your fingers. To speed up the process of making peas, you need to fill them with cool water for several hours. It is most convenient to create this function at night (that is, in the dark) . If you have a pressure cooker in your kitchen, then you don’t have to soak the peas in water. In a pressure cooker it cooks well and turns into puree.

Add the cooked peas to the cooking pot, pour in water and put on fire, as high as possible. Bring to a boil and reduce heat. During the cooking process, remove the foam. Cook the peas until soft for 30 to 50 minutes over moderate heat. In this recipe, the peas are not mashed into a puree.

In the meantime, let's prepare the other ingredients. Wash the potatoes, remove the skins. Cut into random small pieces.

Cut the smoked sausage into cubes or strips, at your discretion.

To fry, cut the onion into small pieces, grate the carrots on a large grater. Fry in sunflower oil until soft, 5-7 minutes, over low heat.

When the peas are boiled, add the chopped potatoes. Cook until the potatoes are ready.

We have the main ingredients ready. Add fried vegetables and chopped sausage. Season with salt, ground black pepper, bay leaf. Bring to a boil. Boil over low heat for 10 minutes.

Add chopped dill or other herbs, boil for a minute and turn off the heat. Pea soup with smoked sausage is ready. Serve with snow-white croutons.

The only event that you need to remember about in order to cook the soup for a short time is soaking the peas. You can create this during the day so that you can come home from work in the evening and cook. The peas should be split, ripe. After soaking, it cooks on average for about an hour. So, we take previously washed peas, soaked for 6-7 hours, and rinse them well again. Place in a saucepan and add water. Add bay leaf. Cook over low heat for 30-40 minutes. At this time, prepare other ingredients.

Peel the potatoes and cut them into small cubes. In my opinion, finely chopped potatoes look the most harmonious and cook faster.

Cut the smoked sausage into small cubes. I like it when it’s not very greasy, but you can put it as is, it will still be tasty.

Cut the onions and carrots into strips and sauté them in vegetable oil in a frying pan. I add another spoonful of chopped sausage to improve the taste.

Place potatoes, sauteed vegetables and sausage in a saucepan with peas. Add salt and pepper to taste. Cook until the potatoes are ready. The soup is ready. Finely chop the greens. I like fresh greens, so I add them directly to my plates.

Recipe for Pea Soup with Smoked Sausage:

For soup you need to take dry peas in halves. to soak it overnight (that is, in the dark) .
This will remove all the beneficial substances from the peas. First, wash the peas well until the water runs clear.

Take away all the bad peas. Now pour 400 grams of boiling water over the washed peas.

To speed up the process of softening the peas, add half a teaspoon of soda to the water. To add a spicy flavor to the soup, add a bay leaf to the peas. It will give a unique smell to the finished dish and will not overpower the delicate pea taste. Leave the peas to soften and swell for 1-2 hours.

After time has passed, strain the peas.
It will become larger and brighter. Remove the bay leaf.

Pea soup requires meat broth.
It will prevent starch from spoiling the taste of the finished dish. Almost everyone recommends using full-fat broth, but I use chicken broth. It is dietary and most fragrant. Place the broth on the stove and bring to a boil. Add peas and a teaspoon of sugar. Specifically, it will not allow the soup to “grey” and you will get a very colorful, wonderful dish.

Cook the soup for at least an hour. When the peas are cooked, add the chopped potatoes. Salt and pepper the soup.

While the soup is cooking, fry it. Chop the onion, grate the carrots on a small grater, and grate the daikon on a large grater. Fry the vegetables until soft.

When the vegetables are almost ready, add the chopped sausage. Simmer everything together for a couple of minutes to release the smell and taste of the sausage.

Season the soup with frying. For color and unique smell, add half a teaspoon each of turmeric and paprika.

I also added a dry herb mixture. But this is not necessary.

Boil everything together for about 5 minutes. And voila, the most delicious soup is ready! Bon appetit!

Let's prepare the usual and indescribably tasty pea soup with smoked sausage. According to this recipe, it turns out to be nourishing and special, the main thing is to choose a tasty sausage. If you prefer the thickest soup, then cook the peas a little longer and add less water.

You can cook peas using 2 methods: soak the peas for 4-6 hours in cool water, wash and cover with clean water and cook until tender, or add soda to the washed peas with water, half a teaspoon per 2 liters of water, and cook until the peas will be cooked.   • Onions – 1 pc.

  • Salt – 1 tsp.
  • Dark ground pepper – 0.25 tsp.
  • Bay leaf – 2 pcs.
  • Garlic – 2 cloves
  • Greens – 2 sprigs

How to make pea soup with smoked sausage

Soak 250 g of dry split peas in cool water for 4-6 hours, then rinse well under running water, fill with clean water (2-2.5 liters) and cook until tender. My peas took 30-40 minutes to cook.

Peel two medium-sized potatoes and cut into small cubes.

Add potatoes to almost cooked peas and cook for 10 minutes.

Peel one medium onion and cut into small cubes.

Peel and grate two small carrots.

Cut 250 g of smoked sausage into cubes or circles.

In a frying pan in 2 tablespoons of vegetable oil, fry the onions and carrots until soft.

Add the sausage and cook for another 4-5 minutes, stirring.

Add a couple of chopped garlic cloves to the vegetables and sausage in the pan and cook for 1 minute.

Add the roast to the pan with the prepared peas and potatoes. Add bay leaf, salt, pepper and cook over low heat for 5-7 minutes.

Pea soup with smoked sausage is ready, let it brew and serve with chopped herbs.
