Another recipe for apple pie, which is easier to prepare than usual, and flies off the plate in a matter of minutes. Grated pie with apples is called so because the dough for it is ground on a grater, and the inside contains apples. But we will also make this pastry very fragrant - we will add cinnamon to the apples, and a little vanilla to the dough. If Viennese biscuits are your thing, shredded apple pie will be your favorite addition to a cup of tea!

When finished, this pie comes out soft and slightly crumbly. Despite the fact that its base is shortbread dough, it will not be dry (as in the same Viennese cookies) - thanks to the relatively small amount of wheat flour, it remains soft and tender. The dough comes out quite sweet (you can adjust the amount of sugar to your own taste), and the juicy apple inside is simply fragrant with the smell of cinnamon. This homemade baked goods has everything in moderation, complete harmony of flavors - try it, you won’t regret it!

The recipe for this simple and delicious pie includes the following ingredients: wheat flour (I have the highest grade, but you can use the first grade), apples (better than the sweet and sour types - I have Snow White filling), butter, medium-sized chicken eggs, sweet sand , baking soda, lemon juice, ground cinnamon and a little vanilla (can be replaced with a teaspoon of vanilla sugar).

First, prepare the shortbread dough for the grated pie. Mix 340 grams of wheat flour with half a teaspoon of baking soda. Sift everything through a sieve so that there are no lumps.

The pie dough can be kneaded by hand, but the most convenient and fastest way is to use a food processor (attachment - iron knife). We combine two chicken eggs (45-50 grams each), 150 grams of sweet sand, a pinch of vanillin and 100 grams of soft butter (take it out of the refrigerator in advance and let it sit at room temperature).

Mix everything so that the products come together. After this, add the dry part - flour and soda.

Mix until a very tender, soft, sticky and one hundred percent homogeneous shortbread dough comes out. I am sure that you will be tormented by the desire to add more flour, but do not do it - otherwise the finished dough in the grated pie will not turn out tender and soft. Leave everything as it is - you won’t regret it later.

Divide the dough into 2 equal parts, flatten any piece and wrap it in a bag or cling film. Place in the freezer for an hour until the dough becomes hard and can be crushed using a large grater. Maybe you have a powerful freezer - then a little less time will be useful.

While the dough hardens in the cold, turn on the oven to heat up to 180 degrees. Let's prepare the filling for the grated pie: take 3 fairly large apples, peel them and remove the seeds. Grate the pulp on a large grater and pour lemon juice over it. This is necessary so that the apples do not darken too much and also get a pleasant light sourness.

Let's assemble our apple pie. Take a baking dish of suitable size (I have a silicone one 20x20 cm) and moderately rub one piece of chilled dough into it. There is no need to grease the pan because the dough contains a lot of butter. If you are not convinced of its shape, you can lightly grease it with refined vegetable oil or butter (in the second case, be sure to powder it with wheat flour).

We spread our apple filling onto the grated dough. If the apples are very juicy, drain the juice.

Sprinkle the apple filling with sugar and ground cinnamon to taste.

Rub the second part of the shortbread dough on top so that it lies in an even layer, covering the apple filling.

Place the grated apple pie in a preheated oven on a medium rack and cook at 180 degrees for about 35-40 minutes until beautifully golden brown.

Let the finished pie cool slightly in the mold, after which it can be cut into portions.

When finished, this pie comes out soft and slightly crumbly. Homemade apple pie made from shortcrust pastry. Common and quick to make. It can be baked with jam, jam, berries, cherries, apricots. I now have it with apples.

To make grated pie with apples, we take: butter, sugar, cinnamon sugar, egg, flour, soda and apples.

Combine soft butter with sugar.

Mix and add the chicken egg.

Add baking soda, which must be quenched with lemon juice or vinegar.

Then add two glasses of flour. One narrow glass contains 130 grams of flour.

Knead a dough that does not stick to your hands, is soft and elastic.

We divide it into two unequal parts. Place the smallest one in the freezer for 30-40 minutes.

Place a large portion in a baking dish.

After 30 minutes, peel the apples and grate them. Place it on the dough.

Sprinkle with cinnamon and sugar.

Take the dough out of the freezer. Three on an apple grater.

Bake the pie in the oven at 170 degrees for 35-40 minutes until golden brown.

Grated apple pie is ready. Cool the pie and cut into portions. Serve with tea.

for the inside:

  • sweet and sour apples – 4 pcs. (larger);
  • ground cinnamon – 0.5-0.75 tsp. (optional);
  • sweet sand - 3 tbsp. l.;
  • potato starch - as needed.

How to make grated apple pie

Cut the butter into small cubes. It is not necessary to soften it; you can immediately begin making the dough. The butter in this recipe can be replaced with margarine of good quality.

Place the butter cubes in a bowl and add sugar.

Grind with a mixer or spatula until the ingredients are completely mixed.

Introduce eggs alternately. First, beat in one, beat until smooth and repeat the function.

The mixture will turn out to be quite heterogeneous due to the different density and temperature of the goods, but this will only benefit the shortbread dough, which is the basis of the grated pie.

Add baking powder to flour, mix. Sift 1 cup into the dough, beat with a mixer with a hook attachment or stir by hand.

Then add another glass of flour and knead the dough again. If it is very sticky, add the remaining half of the glass little by little.

From the resulting soft, flexible, buttery dough, roll into an elongated “bar” and wrap it in food-grade cellophane. This way the dough will cool faster than in a ball shape. Place the dough in the refrigerator for at least 1 hour. If there is little time to make the pie, put the dough in the freezer for 20-30 minutes. It is important that it hardens perfectly, so it is much easier and faster to grate it.

While the dough is chilling, prepare the apple filling. Remove the peel from the apples, but if it is narrow, you can throw it in; you won’t feel it in the finished pie. Cut the apples into 2-4 parts, remove the core. Grate any piece on a large grater.

Add sugar and cinnamon to the grated apples. The latter can be replaced with vanilla.

You can also add steamed and chopped dried fruits and crushed nut kernels to the filling. Stir the apples and let them sit for 10 minutes.

The inside of the apple will release juice. It can be drained or thickened with a tablespoon of starch.

Prepare a baking pan: line the bottom with baking parchment, grease the sides with a thin layer of butter. Pull out the dough and separate about half. Grate on a large grater and spread in an even layer along the bottom of a heat-resistant dish.

Place grated apples on top and smooth the top.

Grate the remaining dough and cover the filling with it. Bake in a preheated oven for 35-40 minutes at 180-200 degrees (the temperature depends on the characteristics of the oven!).

The finished pie will be ruddy and light brown. It’s not enough to cool the baked goods right in the pan, take them out and cut them into portions. You can serve. If desired, sprinkle with sweet powder and/or garnish with fresh mint leaves.

  • COOKING METHOD:

    1. In order to prepare grated apple pie, separate the egg yolks from the whites and mix with sugar.

    2. Beat the yolks with sugar using a mixer or a regular whisk into a thick snow-white mass.
    3. Add cool oil, grated on a large grater, and mix everything lightly.
    4. Add the flour sifted with baking powder and knead into a tight dough with your hands or in a food processor with the dough hook attachment.
    5. Divide the dough into 3 parts - two similar larger ones and one much smaller one, roll them into balls, wrap them in cling film and put them in the freezer for 20 minutes.
    6. Meanwhile, let's start making the inside for the grated pie. To do this, peel and seed the apples, cut them into small thin slices and mix with sugar.


    7. Beat chilled egg whites with sweet powder at high mixer speeds into a dense, stable mass.

    8. Now you can start assembling the shredded apple pie. To do this, grease a baking dish with butter and grate one huge piece of dough into it on a large grater.


    9. Place the chopped apples on the dough and lightly compact them with your hands.
    10. Grate the second large ball of dough onto the apples and distribute it moderately.

Therefore, you need to cover the pie with foil and throw it in the turned off oven for 2 - 3 hours or overnight (that is, in the dark) , and during this period of time it will be one hundred percent ready.
