In order to prepare a regular jelly cake, you will need fresh or frozen fruits, cookies, gelatin, yogurt and dry jelly mass. From all this you can quickly and easily prepare a delicious cake that you will happily feed not only your family, but also your guests.

You can buy blackberries and raspberries if you are not able to pick them yourself. But instead of these berries you can add bananas, kiwi, oranges, strawberries and so on. Choose the fruit that suits your taste buds more.

And I remember very well how my mother carried the jelly mass into the cellar to harden. At the same time, the setting time was even shorter than in modern refrigerators (I think the properties of gelatin were better then).

History of jelly

Until the beginning of the 19th century, no one could even think about recipes for jelly cake, because then jelly could only be made from certain fruits that contain pectin, but this whole mass froze very poorly and was more like jelly. Pectin is something like fruit gelatin (polysaccharides that are found in all higher plants and in some fruits: quince, peach, plum, apple).

But in 1845, a certain Peter Cooper managed to extract gelatin from meat waste without realizing how to use it. But half a hundred years later, pharmacist Waite added dyes and flavorings to gelatin. After this, there was a wave of advertising for the newest product, which sank into the soul of almost all housewives from all over the world. By the middle of the twentieth century, about 2.2 thousand recipes for making jelly were understood.

How to make a jelly cake at home

To make a jelly cake with cookies (without baking), you will need to spend a minimum of ingredients and effort. In fact, the layers of the cake will freeze one by one in the refrigerator all day long, but this has never caused me any huge headaches. One layer of jelly is poured for two or three minutes, and then after about 3 hours it hardens, and at this time you can go about your business.

So, we will divide the process of making a cake from cookies and jelly into stages. Each step will take you no more than 10-15 minutes.

1st step: pouring the first layer of jelly

  1. First, choose a plate. It should fit 3 cups of jelly mass, fruit, 0.5 liters of yogurt and 200 grams of cookies.
  2. After this, place cling film on the bottom of the plate, preferably in two layers. I do this all the time so that the cake does not stick to the bottom of the dish.
  3. Next, dilute the contents of the bag with the dry jelly mass in a glass of water and mix well. Later, pour the resulting liquid into a plate with film.
  4. This is how the first layer of our homemade jelly cake comes out. The bowl of liquid must be placed in the refrigerator until completely solidified. This may take about 3 hours. At this time, dilute 20 grams of gelatin with cool boiled water and leave to swell for 30 minutes. The purchased liquid will be useful for transforming yogurt into a jelly mass.

2nd step: pouring the second layer of jelly and adding fruit

  1. After the first layer of jelly has hardened, start mixing the second bag of jelly. Pour the resulting mixture over the first layer and leave it to harden.
  2. After about 3 hours you can add fruit. What specific fruits you take and how you decorate the cake with them depends only on your imagination.

In the summer, you can add the freshest cherries, plums, apples, raspberries, strawberries, blackberries, apricots, etc. In winter, I like to decorate the cake with bananas and kiwi. My friend is a big fan of oranges; she beautifully decorates the cake with pieces of peaches and oranges. By the way, it turns out to be quite a tasty and unusual dessert.

Step 3: pouring the third layer of jelly

Now that your delicacy is decorated with fruit, you need to cover it with another layer of jelly syrup. Pour the 3rd layer and leave it to harden in the refrigerator. After 3 hours, all three layers will be one hundred percent frozen and separated. And in the middle of them the fruits will shine through beautifully.

4th step: pouring yogurt and adding cookies

Now you understand how to create a beautiful three-layer jelly for a cake. This is very easy to learn if you follow the instructions provided. Next you need to add another layer of yogurt to the cake.

  1. Pour the yogurt into a plate and evenly add gelatin to it, while stirring the whole mass.
  2. Stir everything well and pour the resulting liquid over the three-layer jelly.
  3. Now the cake needs to be put in the refrigerator again. Because gelatin hardens faster than jelly from bags, yogurt will need 30-40 minutes to completely harden.
  4. Once everything has set, start covering the entire area of ​​the cake with cookies. And only after this can it be turned.
  5. As a result, you get a wonderful and delicious dessert.

How to perfectly decorate and serve a jelly cake

To decorate the cake, you can thinly slice strawberries and kiwis and place them on the top layer of jelly. My mother loved to decorate a similar delicacy with several sprigs of mint or lemon balm and 2-3 slices of lemon.

And my friend often draws some inscriptions or figures on top of the cake. She does this with a culinary syringe filled with cream.

I’ll say right away that dry jelly mass, which is diluted in water, does not harden well from time to time. This often depends on how much water you add per packet of contents. As a result, the cake may fall apart. That's why I always add a little gelatin to the jelly from the bag (approximately 5 g of gelatin per jelly bag). But we can deal with this problem in another way: dilute two bags of jelly with similar flavors into one and a half glasses of water, rather than one bag per glass of water.

Now you understand how to pour the cake so that the jelly does not disintegrate. But my mother once made jelly herself - from compote and edible gelatin. For such a cake you only need 1 liter of compote and 50 g of gelatin. And the product will be 100% natural.

Also, I would not recommend using yogurt with less than 15% fat content, otherwise it may not harden well. By the way, my friend uses sour cream instead of yogurt, and it turns out quite tasty.

If you are decorating a cake with oranges or grapefruits with skin, then first you need to scald them with water at 80ºC. This way the skin will lose its bitterness, and the fruit will release more pectin.

First you need to prepare the jelly, each in its own plate, it is only recommended to take slightly less water than indicated in the instructions. If you decide to make a cake from canned peaches, then you need to drain the water from the jar into a cup and add 20 g of gelatin to it, let it swell for half an hour. If you are using fresh peaches, you can use peach juice instead of water.

After the jelly has hardened, remove it from the molds and cut it randomly. Peaches also need to be cut and added to the jelly. Add yogurt to the same mixture, and at the end gelatin with water or peach juice, slightly simmered in a water bath and mix everything.
