Recipes for making baked hake in the oven involve using the whole fish, filleted or cut into pieces. You can bake it on its own, with the addition of various seasonings, cheese, and lemon. Hake is savored with vegetables, cheese or in the form of a casserole, which will become a complete dinner. Hake is sold as a whole carcass without a head or as a fillet, or, less commonly, cut into portions. Choose it according to these rules:

How to cook baked hake in the oven
2. Peel the carrots and onions. Grate the carrots on a large grater. Cut the onion into small cubes. Fry in vegetable oil until soft, add chopped tomato at the end. The vegetables are ready.

Hake with lemon or potatoes in the oven
Recipe with lemon
The easiest way is to bake the hake in the oven directly on a baking sheet. To do this you will need very little time and a minimum of goods:
- fresh hake – 1 kg (3-4 carcasses);
- lemon – 1 pc.;
- vegetable oil - for greasing the baking sheet;
- mayonnaise, salt, fish seasoning - to taste.
Coat cooked hake carcasses (gutted, with cut off heads, tails and fins) with a mixture of mayonnaise, spices and seasonings. Place half a lemon slice inside each carcass. Place the fish on a baking sheet greased with vegetable oil. Place two more citrus slices on top of each carcass. Leave in this position for 40-45 minutes so that it marinates slightly. After this, the baking sheet can be sent to the oven, preheated to 200-220°C. Baking time – 20 minutes.
Potato recipe
You can cook hake directly on a baking sheet with a side dish of baked potatoes. For such a very satisfying dish baked in the oven, you need to prepare:
- fresh hake – 700-750 g (2-3 carcasses);
- potatoes – 500 g;
- onion – 1 head;
- vegetable oil - for greasing the baking sheet;
- mayonnaise or sour cream – 250 g;
- salt, mustard, fish seasoning - to taste.
Cut the hake carcasses into several portions and sprinkle with seasoning and marinate for 15 minutes. Peel the potatoes and onions, then cut into slices and half rings, respectively. In a separate bowl, mix mayonnaise/sour cream, mustard, pepper, salt and a little water. Grease a baking sheet with vegetable oil, place potatoes on it, place fish fillets on top and cover with onions. Pour the sauce over the vegetables and fish pieces, and then put them in the oven for 25-30 minutes until the potatoes are ready. Baking oven temperature 200-220°C.
Hake in the oven in foil

No matter what kind of fish comes out just fine if it is baked in foil. Heck only confirms this rule. This manufacturing method will require the following set of goods:
- fresh hake – 500 g of unblemished meat (fillet);
- carrots – 1-2 root vegetables;
- onion – 2 heads;
- sour cream – 2 tablespoons;
- salt, fish seasoning - to taste.
Sprinkle the thawed hake fillet with salt and seasonings and leave for the time it takes to prepare the vegetables. Peel the carrots and onions and cut into medium-sized pieces. Place several pieces of foil on a baking sheet. Their number must correspond to the number of pieces of fish. The edges of the foil need to be slightly raised so that it looks like boats. Place hake fillet, carrots and onions on foil, and pour sour cream on top of any. Lightly cover the fish slices with the edges of the foil. The “boats” should not be closed one hundred percent. Place the baking tray with the cooked fish in the oven, the temperature of which should be close to 180°C and leave there for three quarters of an hour.

A very tasty and juicy fish will be obtained by baking it in salt. To prepare such a dish at home, you will also need food foil. In this case you will have to purchase:
- fresh hake – 500 g of unblemished meat (fillet) or 3-4 cooked carcasses;
- salt - to taste.
Everything is completely simple here. Pour a fairly large amount of salt onto a piece of foil, place the fish on the salt layer and wrap the edges of the foil. Don't be afraid to overdo it with salt. The fish will take as much seasoning as it needs. Place the fish wrapped in foil on a baking sheet and place in the oven. The temperature should be kept at 180°C, at this temperature keep in the oven for about half an hour. The finished fish must be cleaned of excess salt before serving.
Hake in the oven with mayonnaise

You can cook hake in the oven not only on a baking sheet, but also in a baking dish. The most common method requires only three ingredients and a number of seasonings:
- fresh hake – 500 g of unblemished meat (fillet);
- onion – 1 head;
- butter – 50 g + a little for greasing the mold;
- mayonnaise – 100-150 g;
- salt, fish seasoning - to taste.
Cover the fish fillet with a mixture of salt and spices. After 15 minutes, grease the mold with butter, place the fish in it, cover with onion half rings and pour in mayonnaise. Spread the sauce more or less sparingly over the entire surface of the onion. Crumble the remaining butter on top. Cover the pan with a lid and place in the oven for 30-40 minutes. The temperature inside the oven should be about 180-200°C.

If you want more vivid flavors, then the previous recipe can be slightly modernized by adding to the listed ingredients 300 grams of sliced champignons and 100 grams of grated cheese. The mushrooms should be placed directly on the fish, and the cheese should be placed on a layer of onions. Everything else is done literally the same as in the previous case.
Hake in the oven in a baking sleeve
To prepare luxurious baked hake, you can also use such a kitchen device as a baking sleeve. The products you will need for this are:
- fresh hake – 1 kg (3-4 carcasses);
- onion – 2 heads;
- testicle – 1 pc.;
- mayonnaise and ketchup – 100 and 50 g, respectively;
- vegetable oil - a tablespoon;
- salt, fish seasoning - to taste.
Mix sauces, vegetable oil, salt and spices in a deep plate. Drive an egg into the resulting mixture. Cut the onion into half rings. Cut the cooked hake carcasses into portions. Dip any piece of fish into the sauce mixture and place in a baking bag. Place the onion there too. Leave the food prepared in this way for 15 minutes. Then secure the bag with paper clips or special clips, make several small holes in it and put it in the oven for 35-40 minutes. The fish must be baked at a temperature of 200-220°C.
Hake in the oven with vegetables in foil
Vegetables are a good side dish for fish. And no one forbids you to cook them right away, and in foil. For fish with vegetables you will have to bribe:
- fresh hake – 1 kg (3-4 carcasses);
- carrots – 1-2 root vegetables;
- tomatoes - 2-3 fruits;
- onion – 2-3 heads;
- cheese – 150 g;
- mayonnaise – 100 g;
- vegetable oil - approximately a tablespoon;
- salt, fish seasoning - to taste.
Cut the hake into portions. Obviously, carcasses must be thawed and prepared in advance. Coat the fish pieces generously with mayonnaise. Place onion slices into halves of rings, then shredded carrots and pieces of fish onto pieces of foil. Cover with tomato slices on top. They need to be salted, lightly peppered and sprinkled with vegetable oil. Wrap the foil, place the purchased ramekins with fish and vegetables on a baking sheet and bake at a temperature of 180-200°C. Keep the hake in the oven for about 25 minutes. Then take out a baking sheet, carefully unfold the foil and sprinkle the almost finished dish with cheese grated on a medium grater. Place the pan back into the oven for another 5 minutes. When the cheese has melted, you can remove the dish from the oven and bring it to the table.
Hake baked in the oven
Hake is an oceanic fish, and therefore it can only be purchased in its freshest form if you live near the ocean. That’s why it arrives on store shelves frozen – in the form of fillets or a whole carcass.
Among all the abundance of fish, hake is famous for its tender meat and small number of bones.
If we compare hake with cod, with which they are related, we can note that hake has the fattest meat and the least fatty liver.
After cooking, the hake meat is simply separated from the backbone, which makes this fish suitable for baking.
Subtleties of making hake baked in the oven
Hake is baked according to the same principle as cod. It can be baked with vegetables, in sour cream, with any other sauce, with cheese.
When baked, hake comes out juicy, but still it should not be kept in the oven for a long time. It only takes 25 minutes to get a completely finished dish. Taking into account the speed of preparation of this fish, do not add to it products that take a long time to cook.
If you bake hake with potatoes, choose potatoes that boil well. Cut it into thin slices and place it in the first layer (under the fish). Then the potatoes will be saturated with fish juice, and the hake itself will be covered with an appetizing crust during baking.
Hake can be baked completely (if the oven size allows), cut into steaks or fillets.
To make the fish juicy, use foil. Thanks to it, the fish juice will not leak out anywhere and the fish will turn out very tasty.
Hake in sour cream, baked in the oven
- hake – 600 g;
- sour cream – 210 g;
- onion – 180 g;
- flour – 60 g;
- margarine – 45 g;
- salt;
- black pepper.
- Cut the cooked hake crosswise into portions. Sprinkle with salt and pepper and leave on the counter to marinate for 15 minutes.
- Dip any piece in flour, fry in margarine on both sides until golden brown.
- Place in a mold greased with margarine.
- Sauté finely chopped onion in the remaining fat. Place it over the fried fish.
- Pour in lightly salted sour cream.
- Place in the oven. Bake for 17-20 minutes at 200°. Serve with fresh vegetables, salad or fried potatoes.
Hake baked with cream sauce
- hake – 4 portioned steaks, 200 g each;
- champignons – 50 g;
- bay leaf – 1 pc.;
- starch – 40 g;
- ground crackers;
- butter – 60 g;
- onion – 120 g;
- milk – 400 ml;
- salt and pepper.
- Cut the cooked hake crosswise into wide slices. Sprinkle with salt and pepper. Leave for 10 minutes. Place in a greased pan.
- Cut the onion into small cubes, cut the mushrooms into thin slices. Place in a frying pan with oil and simmer for 5 minutes. Transfer to the pan with the fish. Add bay leaf.
- For the sauce, dilute the starch with a small amount of milk. Heat the remaining milk to a boil. Pour diluted starch into it in a narrow stream. Boil over low heat for 1 minute. Add salt to taste.
- Pour cream sauce over fish. Cover the pan with foil. Place in the oven and bake for 10 minutes at 200°.
- Remove the foil, sprinkle the fish with ground breadcrumbs, bake for another 15 minutes.
Hake with raisins and nuts, baked in the oven
- hake – 800 g;
- raisins – 50 g;
- salt;
- vegetable oil – 70 g;
- walnuts and almonds – 100 g;
- tomatoes – 500 g;
- pepper;
- greenery.
- Clean the hake and cut into medium-sized pieces. Sprinkle with spices.
- Heat vegetable oil in a frying pan and quickly fry the fish on both sides until light brown.
- Place in a greased pan. Place in the oven and bake for 15-20 minutes at 200°.
- Pour boiling water over the tomatoes and let stand for 2 minutes. Rinse with cool water and remove the skin. Cut into small cubes. Place in a separate frying pan and simmer until pureed. Add salt and pepper.
- Lightly fry almonds and raisins, chop walnuts.
- Place the fish on a plate, pour over tomato sauce, sprinkle with nuts and raisins. Decorate with greens.
Hake baked with potatoes in the oven
- hake – 700 g;
- potatoes – 450 g;
- sour cream – 220 g;
- seasoning for fish – 6 g;
- salt and pepper;
- vegetable oil – 35 g;
- onion – 120 g;
- mustard – 3 g.
- Cut the cooked hake into portions. Sprinkle with fish seasoning. Leave for 10 minutes.
- Cut the potatoes into thin slices. Cut the onion into strips.
- In a cup, mix sour cream, mustard, salt and pepper. Dilute slightly with water.
- Grease a baking tray with oil. Place potatoes in one layer. Place the fish on it. Cover it with onions.
- Fill with sour cream.
- Place in the oven and bake at 200° until the potatoes are done.
Hake baked in the oven in foil on a vegetable pillow
- hake – 800 g;
- onion – 180 g;
- tomatoes – 150 g;
- mayonnaise – 90 g;
- salt pepper;
- vegetable oil – 25 g;
- cheese – 180 g;
- carrots – 120 g.
- Cut the cooked hake into portions. Coat with mayonnaise on all sides.
- Cut the tomatoes into circles, the onions into half rings, and chop the carrots into strips.
- Place the onion on the foil. Place carrots on it. Place a portion of fish on top of the carrots. Cover the fish with tomato slices. Lightly salt and pepper. Drizzle with oil. Wrap the foil into an envelope.
- Place on a baking sheet. Place in preheated oven and bake for 25 minutes.
- Open the foil. Place slices of cheese on the fish. Let it melt in the oven.
Hake baked with apples in the oven
- hake – 800 g;
- sweet and sour apples – 2 pcs.;
- lemon – 1 pc.;
- parsley - 2-3 sprigs;
- thyme, dill;
- salt pepper;
- olive oil – 60 g;
- orange juice – 100 ml;
- soy sauce – 1 tsp.
- First prepare the marinade. To do this, mix orange juice, salt, pepper, soy sauce, and olive oil in a bowl.
- Brush the cooked fish on all sides with marinade. Place in the refrigerator for one hour.
- Cut the apples into quarters and remove the core. Sprinkle the slices with juice squeezed from lemon.
- Remove the fish from the refrigerator. Place a few slices of lemon, dill, thyme and parsley inside.
- Place the fish on a greased baking sheet. Bake for 15 minutes at 200°.
- Place apples next to the fish and pour the remaining marinade over them. Place the pan in the oven for another 20 minutes.
Hake baked with lemon in the oven
- hake – 2 pcs.;
- lemon – 1 pc.;
- salt;
- white pepper;
- hops-suneli – 3 g;
- vegetable oil – 25 g.
- Clean the hake carcass and wash it. Trim the fins and tail. Make several shallow transverse cuts on both sides of the carcass.
- Mix salt, suneli hops and pepper. Rub the mixture over the carcass.
- Place the fish on a piece of foil. Sprinkle it generously with lemon juice. Place one or two lemon slices inside. Drizzle with oil. Wrap the hake tightly in foil.
- Place on a baking sheet. Place in the oven preheated to 200°. Bake for 15 minutes.
- Open the foil, making sides so that the juice does not leak out. Bake the fish for another 15 minutes until golden brown.
- Sprinkle with herbs.
Advice. Once you open the foil, sprinkle the fish with grated cheese. Place the baking sheet in the oven and bake for 15 minutes until the cheese is completely melted and acquires a beautiful yellow color.
Note to the hostess
Knowing the principle of baking fish, you can change the ratio of ingredients and replace one product with another. For example, if you like spicy dishes, replace black pepper with reddish pepper and replace the sour cream with tomato paste. But in this case, add a little sugar and coriander to the sauce. The fish will acquire a special taste and spicy smell.
If you fry fish in a pan before baking, be sure to marinate it in a consistency of salt and pepper. Such fish will not fall apart during frying and will not stick to the dishes.
