We very occasionally buy different juices and waters in the store - mostly I prepare compotes at home. They are not only tasty and fragrant, but also even healthier than industrially produced drinks. And if the fruits and berries are also homemade, then the usefulness of the compote increases significantly.

I have a lot of recipes for homemade compotes in stock, but now I would like to tell you how to prepare cherry-apple compote. This is a very fragrant and tasty drink. Only one color is worth it! But for it to be useful, it must be prepared correctly.

First of all, never overcook fruits and berries - constantly put the food in boiling water, boil for almost a minute or two and leave the drink to infuse under the lid. You can sweeten compote not only with sweet sand, but also with natural honey, fructose or molasses.

The recipe for this delicious compote includes water, cherries (I used frozen), fresh apples and a little sugar (its amount directly depends on the natural sweetness of the cherries and apples).

First, put a pan of water on the fire and bring it to a boil. Wash the apple and cut it into 8 parts, removing the tail and seed box. It is better to peel store-bought apples because they are constantly treated with chemicals for best storage.

I have homemade cherries, frozen. We simply pour ice water over it (if you don’t remember whether you washed the berries before freezing).

Place the cherries in boiling water.

Then add apple slices there.

Cook over medium heat for several minutes, then add sugar (fructose, molasses) and mix. If you add natural honey, add it when the drink has cooled slightly.

Remove the pan from the heat, cover with a lid and let the drink brew for about an hour.

Nowadays, almost all housewives no longer roll up jars of compote, preferring to simply freeze berries and fruits. But I cannot deviate from the tradition given to us and every summer I try to create as many preparations for the winter as possible. Compote from a jar seems to me much tastier and more aromatic, such a drink seems to take you back to childhood.

Now I want to tell you how to make compote from apples and cherries. We will cook using the double-pouring method without any sterilization, thereby reducing the time you spend in the kitchen and preserving your strength. In addition, I can confidently guarantee that thanks to this simple method of preparation, jars of compote will be perfectly preserved until the next season; the main thing is to store it in a cool, dry place.

This fruit and berry platter will please almost everyone. I recommend trying it.

To make a tasty compote for the winter, water, cherries, apples and sweet sand are useful. The calculation of ingredients is given for a 1 liter jar.

Wash the jar well with soda or detergent, rinse and leave over steam for 5-7 minutes. Fill the lid with water and boil for 5 minutes.

Wash the cherries, remove spoiled berries and remove the seeds.

Rinse the apple under running cool water, remove the core and cut into slices.

Place the chopped apple and cherry into the prepared jar.

Boil the water for pouring, pour boiling water over the contents of the jar.

Cover with a lid and leave for 10-15 minutes.

Then pour the fruit and berry infusion into a saucepan (for convenience, it is better to use a special lid with holes), add sugar and put on fire.

Bring the syrup to a boil and simmer until the crystals are completely dissolved.

Fill the jar with hot compote to the very top.

Cover with a lid and roll up immediately.

Turn the jar upside down and wrap it in a warm blanket. In this position, let the compote cool completely.

How to prepare cherry-apple compote for the winter?

Naturally, you can make this wonderful drink with just apples or just cherries, but our family prefers assorted compotes. Even when the cherry is finished, you can easily exchange it for grapes or cherry plum (wild plum) and then you will also get a very tasty preparation.

Some people add cinnamon to the compote, and some add mint, but everyone has their own taste for these spices. But still, first I suggest you try preparing the usual version, and it’s up to you to decide whether to supplement the drink with other products or not.

Ingredients for a 3 liter jar:

  • Cherry;
  • Apples;
  • Sugar – 2 tbsp;
  • Water – 2.7 liters.

I think you saw that the ingredients do not say how many cherries and apples should be put in the compote. Everything is quite simple, it all depends on which fruits you prefer. In other words, if you like cherries, it means more of them, and if you like apples, then the opposite. The most important thing is that the jar must be filled to a third of its total volume. The rest will be filled with water and sugar.

1. We wash the jars well, then sterilize them using a method that is comfortable for you. This can be done by steaming, in the oven or in the microwave for 2-3 minutes. Soak the lids in boiling water while we prepare all the ingredients.

2. Wash the apples, cut them into 6-8 pieces, remove the core. If you have small ranets, leave them completely or divide them into half.

3. We wash the cherries through a sieve. There is no need to get rid of the seeds. We need all the berries.

4. Fill the sterilized jars with fruit to a third of the total volume.

5. In this step, put water on the stove and, when it boils, fill the jars. Cover them with a lid (no need to tighten them) and leave for 20 minutes for heat treatment. There is no need to fill the jars to the very brim, because we will add sugar and there will be more water.

Carefully! The water is hot and the container may burst. Therefore, start pouring it slowly so that the jar and fruit get used to the heat.

6. Because we make a lot of compote, after heat treatment of the fruit we pour all the liquid into the pan (there is no need to dump cherries and apples).

7. Pour sugar into the drained water and bring to a boil; during this period of time it will completely dissolve.

The sugar calculation is based on how many jars you make. For one three-liter glass, take two glasses, this is completely enough for the compote to come out not cloying and very tasty.

8. Pour the boiled water with sugar back into the jars and roll up the compote with steel lids using a seaming machine.

9. Then we turn the jars upside down and cover them with a warm blanket until they cool completely. Once the compote with apples and cherries has cooled, we lower it into the cellar for next storage. This drink stores very well.

This method allows you to preserve the value of the fruit and the natural taste. The average production time for all this will be 20 minutes. When sterilizing, it is worth considering that the duration of the procedure does not have to be more than 40 minutes, otherwise the apples will lose their shape and turn into puree.

The drink can be prepared from new or frozen berries, but the first option is almost always chosen, because it allows you to get a much-needed drink.

Sugar calculations are made taking into account the sweetness of fruits and berries. It is worth considering that apples quickly darken after cutting, so you should not delay processing. More comfortable containers are 3 liter jars.

How to choose the right fruit for compote of cherries and apples

A drink made from new berries and apples comes out with the richest taste and color. A small number of treatments allows you to preserve useful characteristics. For the drink, choose 100% ripe apples; varieties like Snow White filling are considered more suitable. Greenish fruits with a dense structure are not capable of imparting a rich taste to the compote, but they do not become overcooked during production. Cherries are harvested when they are fully ripe; the Vladimirsky or Hungarian variety is excellent. The berries are dark in color and give the compote a wonderful color.

The material for the compote is selected without signs of rottenness or flaws; otherwise, it will not be possible to preserve the drink during the winter, and it will become moldy. The raw materials are carefully washed, all debris and stems are removed. It is not necessary to remove the skins and cores of apples, but if you want to get “untainted” material, this function is performed.

The usual recipe for the winter

The recipe proportions are given taking into account the production of 1 jar. To make compote you will need:

  • cherry - 300 g;
  • apples - 500 g;
  • water - 3.5 l;
  • sweet sand - 500 g.

Processed and cut into 4 pieces apples are placed in a colander and kept in a pan of bubbling water for 15 minutes, then doused with cool water. In a separate container, prepare the syrup by mixing sugar with water until completely dissolved. Processed apples and cherries are placed in a jar, then filled with bubbling syrup. Within 30 min. it is necessary to pasteurize the containers, then seal them and wait for them to cool, first turning the jars over and covering them with a blanket.

Apple-cherry compote with mint

You can cook compote with the addition of additional ingredients. Mint goes well with cherries and apples, adding freshness and flavor to the drink.

To make it you will need the following ingredients:

  • apples - 5 pcs.;
  • cherry - 300 g;
  • sweet sand - 4 full tbsp. l.;
  • water - 3 l;
  • mint - 2 sprigs.

The apples are cut into small slices and, together with the berries, are placed in boiling water for 10 minutes. During boiling, you should watch the action and at the first signs of boiling, the fire should be reduced. Sweet sand and mint are added before turning off, after which some time is given for the greens to saturate the liquid with taste and smell.

Compote of apples and cherries in a slow cooker

Preparing compote in a slow cooker is the easiest way because it requires a minimum of time and effort. For the recipe you will need:

  • apples - 1 kg;
  • cherry - 500 g;
  • sweet sand - 300 g;
  • water - 2 l.

Cherries and apples are washed and cleared of debris, defective fruits are removed. When peeling apples, you should not throw it away, because it can be used when making syrup. To make it, pour water into the multicooker, place fruit peels, if any, and set the mode to 160 C. After boiling, pour sugar into the liquid and leave for 5 minutes.

Syrup is poured into sterilized and dried jars with fruits, filled to ½ capacity.

Leave the compote in this form for several minutes. After this, the liquid is poured into a multicooker, brought to a boil again and poured into a jar. You need to leave at least 2 cm of open space to the top.

To sterilize a multicooker, place several layers of gauze on the bottom and add water. Select the baking mode, after boiling, leave in the simmering position for 20 minutes. After this time, the jars are closed and put away to cool.

Compote of frozen apples and cherries

You can cook compote from frozen fruits following the rules of the usual winter recipe. The advantage of this method is that it can be done at any time of the year.

There is no need to cook or boil water with fruit for a long time, otherwise the value of the drink will decrease significantly.

To make it for specific consumption, simply place frozen apples and cherries in boiling water and wait until it boils again, then add sugar and, if desired, spices.

For a regular recipe, you can take the following proportions:

  • cherry - 500 g;
  • sugar - 400 g;
  • water - 2 l.

The average time for making a regular compote will be from 10 to 15 minutes.

Recipe without sterilization

The highlight of the recipe is that in the first step the jars and lids are sterilized, and the compote itself is not subjected to heat treatment. You will need to create a syrup, which is prepared on the basis that there are 200 g of sugar per 1 liter of water. Place berries and apples in jars in equal proportions so that their quantity fills ½ of the container.

The jars are filled with syrup immediately after the water boils. After this, they are turned over and removed to cool. The purchased compote will be sweet, so after opening it is recommended to dilute it with water in a 1:1 ratio.

How to store compote

The main problem with making compotes is that after rolling, the jars become moldy or explode. The risk of the first option is eliminated by proper processing of fruits, the use of high-quality raw materials and adherence to manufacturing techniques. To prevent the jars from exploding, after rolling up the hot containers should be turned over and placed on the lid, well wrapped in a warm blanket. The cooling time must be at least 12 hours, after which the containers can be removed to permanent storage.

Store jars of compote in a cold, dark room. The drink is stored without loss of properties for 1 year. After opening, it is recommended to put the container in the refrigerator.
