Mushroom pie . Mushroom pie
You can prepare a huge number of different dishes from mushrooms - fry, stew, bake, add to casseroles and sandwiches. A decent space among mushroom dishes is occupied by mushroom pie, which is a real dish of Russian state cuisine.
When making a pie, you can use various mushrooms. First, naturally, the fragrant freshest mushrooms, collected in the season (chanterelles, white mushrooms, boletus, boletus). Secondly, these are the same mushrooms, but dried. After all, champignons and oyster mushrooms can be purchased all year round in virtually any more or less large hypermarket.
Mushroom pie is baked from various types of dough - yeast, sponge, shortbread, bulk. In addition to the usual ones, open pies with mushrooms are extremely popular.
The mushrooms undergo the usual preparatory treatment - they are cleaned, cutting out spoiled areas, washed well and cut into pieces. If you are using dry mushrooms, soak them in cool water for a couple of hours. It is also recommended to boil dry mushrooms before using them.
Mushroom pies can be baked in a regular pan or in a Dutch oven. Heavy cast iron frying pans are also suitable. It is recommended to cook mushrooms only in enamel dishes that do not oxidize.
The mushroom inside for the pie is usually fried with onions and mixed with herbs (for example, dill).
The mushroom filling is usually placed on top - the fact is that thanks to the dough mixture, it will still be distributed throughout the dough, sinking to the bottom.
The mushroom pie takes about half an hour to bake. Serve it warm or cooled.
Mushroom pie - recipes for juicy mushroom pies
Traditional recipe for mushroom pie
Mushroom pie is a savory yet nutritious dish that can be served as an appetizer or as a main course.
We will need:
- 250 gr. oils;
- 3 cups flour;
- 2 medium testicles;
- 2.5 tablespoons of sour cream;
- Salt to taste.
For the mushroom inside:
- 1.7 kg. mushrooms (honey mushrooms);
- 2 spoons of sour cream;
- 2 tablespoons of vegetable oil;
- Sesame and salt.
Manufacturing:
- Cut the hard (frozen) butter into cubes about a centimeter in size. Then grind and mix with flour.
- Beat eggs and sour cream, add salt. Stir in butter and flour. Knead the finished dough well and divide into 2 parts. Wrap each half in film and place in the refrigerator for half an hour.
- Tidy up the mushrooms and chop them coarsely. Fry in a preheated frying pan for 8 minutes. Don't forget to add salt. Then put the mushrooms in the oven to dry them slightly. When the mushrooms become crispy, remove them.
- Roll out both halves of the dough; they should be uniform in size. Place the first half in the mold (sprinkle the bottom of the mold with semolina so that the dough does not stick) and put the filling on it.
To make the pie juicier, before putting it in the oven, make 4 cuts on top. After the mushroom pie is ready, pour sour cream into the holes, cover with foil and let sit for 20 minutes.
The recipe for mushroom pie is easy to make. You can buy the dough in the store, or use a ready-made recipe.

Pies with mushrooms
Mushroom pies were always considered one of the most delicious and were a delicacy. Both earlier and now they are prepared for a ceremonial table and just for an everyday meal. They can be made large or small, in portions. Any edible mushrooms can be used for the filling, but the best ones for the interior are wild mushrooms - boletus, boletus, boletus, chanterelle, russula, boletus, etc.
