It is certainly eaten cool, if desired, generously sprinkled with various sweet sauces, decorated with cream, but you can simply eat it without anything. Calorie content (without additives) is only 211 kcal. You will learn how to prepare curd pudding so that it turns out to be a truly tender and savory delicacy from recipes that have passed the strict test of home cooks.

Traditional curd pudding in the oven

Cottage cheese pudding in its traditional version is reminiscent of almost everyone’s favorite casserole. Thanks to painstaking mixing with the rest of the ingredients, the fermented milk taste in this delicacy is virtually invisible, which is perfect for those who do not really like the taste of such a product.

List of ingredients that will be useful for you:

  • half a cup of milk and sugar;
  • 2 cups cottage cheese (the higher the fat content, the better);
  • 3 testicles;
  • creamy spread – 70 g;
  • a pinch of salt;
  • a handful of raisins;
  • semolina grits - 3 tbsp. spoons.

  1. Baked goods made from semolina and cottage cheese are the most elastic and do not sag. Pour warm milk over the semolina and leave the cereal to swell.
  2. Separate the whites from the yolks. Beat the yolks with sweet sand until silky smooth.
  3. Grind the cottage cheese until a homogeneous mixture and combine with the yolk consistency.
  4. Soften the creamy spread until creamy and combine with the infused cereal. Place in parts into a bowl, stirring gently.
  5. The recipe for cottage cheese pudding in the oven can be made more interesting by adding raisins, nuts or any other fruits and berries. In our version, we will use snow-white raisins, which were previously soaked in hot water for about minutes.
  6. We break the protein into a strong foam, which we carefully introduce into the main mass, spoonful at a time.
  7. The oven is best served in a special form. Grease it well and cover it with baking parchment. Then pour our dough into it.
  8. Preheat the oven to 150 degrees, place the mold in it and increase the temperature to 230 degrees. Curd pudding with semolina takes about half an hour to prepare. Take it out of the dish completely cooled. Sprinkle with sweet powder on top or grease with any jam.

Dietary British steamed dessert

Curd pudding in the oven is a common, but not the only method of producing a wonderful dish. Steamed dietary curd pudding is no less fluffy and juicy.

List of ingredients for 400 g of cottage cheese:

  • spread – 40 g;
  • milk – 50 ml;
  • sugar – 50 g;
  • cream – 100 ml;
  • eggs – 2 pcs.;
  • a slice of dried snow-white loaf.

Description of the process step by step:

  1. Grind the cottage cheese through a strainer (or grind it through a meat grinder) into a deep bowl.
  2. Beat the egg yolk well with sugar and pour into a bowl. Mix carefully.
  3. Grind the dried loaf into small crumbs and add to the mixture.
  4. Mix milk with sour cream and softened butter (spread). Add the resulting mixture to the rest of the ingredients.
  5. Beat the egg whites until foamy and place them in a bowl, stirring gently.
  6. Steamed curd pudding is perfectly prepared using a double boiler (you can also use an ordinary steam bath). Line the bowl with paper and fill it. The dish takes about half an hour to prepare. This dietary recipe can be made richer by serving with cream or condensed milk.

  2. We will prepare cottage cheese pudding for the children from apple puree. We chop the washed and dried fruits using a blender, but you can grate them on a fine grater.
  3. Then we squeeze the cottage cheese through a strainer, add sifted starch and softened spread.
  4. Beat the yolks with sugar until fluffy and homogeneous and combine them with the apple mixture.
  5. Beat the cooled egg whites into a foam and mix in parts.
  6. Curd pudding in a slow cooker is prepared in a water bath. To do this, fill the bowl of the device with water. We spread the dishes specially created for cooking using this method with butter and put the dough into it.
  7. It takes about 40 minutes to prepare a children's dessert using the “Steam” program.
  8. The finished food must stand until it cools completely and only then can it be removed.

Curd puddings are a similar dish to cottage cheese casserole, but with their own manufacturing features. Some housewives incorrectly believe that these two dishes are one and the same. Simply mix all the ingredients, bake or steam, and the pudding will come out. Maybe the first puddings were prepared this way. But cooks are corrosive people. Therefore, they perfected pudding recipes, proving that pudding is a very special type of culinary skill.

How to make curd pudding - subtleties and secrets

Basically, the same products are used for puddings as for casseroles: cottage cheese, semolina, rice, eggs, crackers, sour cream, milk. They are prepared with a variety of ingredients, but raisins are the most popular. But you can create a pudding with other products, such as various berries, fruits, spices, cocoa, chocolate, juice, rum, cognac, fruit essence, candied fruits, pumpkin, beets, spinach, nuts, bananas and other fillings. In addition, they are prepared not only sweet, but also with fish, meat and various vegetables.

But in order not to turn the pudding into an ordinary casserole, you need to know some ordinary rules:

  • To make the product more luxurious, the whites are separated from the yolks. Any product is whipped separately. Then alternately combine with the rest of the ingredients. The whipped protein is introduced into the mixture at the end; it is added carefully so as not to kill the bubbles.
  • For baking, special molds with a hole in the middle are used. Then the pudding will bake perfectly. Small cake pans are also used.
  • Place the pudding in the oven at one second preheated, otherwise it will instantly be covered with a golden brown crust, but the inside will remain unbaked and raw. Such a product quickly falls off when removed from the oven.
  • First, the oven is heated to 180°C, the pudding is placed in it, and then heating is continued to 200–220°C.
  • Remove the baked goods from the oven after cooling.
  • For elasticity, semolina, flour, stale bread, and boiled rice can be added to the dough.
  • If semolina is added according to the recipe, then after kneading the dough it must be given time to rest, about half an hour, so that the semolina swells. Then the pudding will keep its shape perfectly and will not sag.
  • Apart from the oven, curd puddings are prepared in a double boiler, in a water bath, or in the microwave.
  • Ready baked goods are stored in the refrigerator for no more than 72 hours.
  • It is better to take homemade cottage cheese or prepare it yourself from homemade milk.
  • If the cottage cheese is store-bought, then it is better to take it with an average fat content of 9%.
  • Very dry cottage cheese is diluted with a few tablespoons of kefir or sour cream.
  • Cottage cheese is consumed with a shelf life of no more than 5 days from the date of its production.
  • To ensure that the pudding does not burn and leaves the mold perfectly, the dishes must be greased with vegetable or butter before baking or lined with parchment paper.
  • The pudding will be tastier if all the ingredients are mixed until a homogeneous smooth mass and only later the eggs are added separately, dividing them into yolks and beaten whites.

Step-by-step recipe with photos

I suggest you prepare an excellent curd pudding that you will fall in love with from the first spoon. This pudding is a good delicacy that is suitable both as a dessert and for a light breakfast. The cottage cheese for pudding must be soft.

So that making the pudding does not take much time, it is better to prepare the raisins in the evening. It must be filled with hot water for 7-10 minutes, then washed and dried.

Pour semolina into a bowl, add hot water and stir. Make cottage cheese. Place the cottage cheese in a bowl, mash well with a fork, add half the sugar and vanilla sugar. Separate the yolks from the whites and add them to the cottage cheese. Quickly remove the whites to a cold space.

Grind the cottage cheese with the yolks, add melted butter and mix.

Add swollen semolina and cooked raisins to the curd mass.

Beat the whites with the remaining sugar and salt, add them to the total mass and mix.

Grease the ramekins with butter or unflavoured vegetable oil. Fill with curd mass. Grease the top of the pudding with sour cream.

Preheat the oven to 250 degrees and bake cottage cheese and semolina pudding with raisins for 25 minutes. The pudding will rise perfectly in the oven, but will settle later, this is normal. The slightly cooled curd pudding should be sprinkled with sweet powder.

Curd pudding - 10 recipes

Curd pudding differs from casserole in the most uniform and tender texture. To make the dessert come out perfect, beat the main mass using a blender or mixer, and add the whites and yolks separately.

Traditional curd pudding in the oven

This particular dish is prepared according to this recipe in Great Britain, the birthplace of pudding. The secret of its successful production lies in perfectly whipped egg whites and a pasty mixture of cottage cheese.

List of goods:

  • 2 testicles;
  • 80 g flour;
  • 80 g sugar;

Step by step recipe.

  1. The thickness of the cottage cheese is brought to a homogeneous consistency using a blender or meat grinder.
  2. Add granulated sugar and sifted flour to the cottage cheese and pour in 80 ml of melted butter.
  3. Eggs are divided into yolks and whites. The yolks are added to the main mass, and the whites are beaten at the highest speed of the mixer until stiff.
  4. The protein mass is transferred into a cup with the rest of the ingredients and stirred carefully so that the foam does not settle.
  5. Coat the mold with the remaining oil and place the curd dough into it, leveling the surface.
  6. The pudding is placed in an oven preheated to 180°C for approximately 45 minutes (until an appetizing crust appears).

Tip: to make the pudding texture as smooth as possible, you can combine two types of cottage cheese: pasty and granular.
