Frisky blackcurrant pie

Made with sour milk, the frisky pie with the freshest currants turns out very lush. The airy dough melts in your mouth without leaving a feeling of heaviness. Thanks to the freshest currants, baked goods acquire a special, berry smell and a balanced, sweet and sour taste. It takes no more than 20 minutes to knead the dough, which is why this pie is called frisky.

Ingredients:

  • fresh currants - ½ tbsp.
  • eggs – 2 pcs
  • sour milk - 1 tbsp. or 200 ml
  • sweet sand – 120 g
  • soda – 1 tsp.
  • vegetable oil – 50 ml
  • flour – 1 tbsp.

Milk must be mixed with sweet sand. You need to beat until the sugar grains are completely dissolved. The milk for the test must be slightly sour. In appearance it does not have to differ from the freshest one, but it must have a corresponding, sour smell. Milk can be replaced with kefir or matsoni.

Then add eggs and soda to the sweet mixture and beat again until smooth, so that the whites and yolks are perfectly combined with the rest of the mixture. Baking powder can be substituted for baking soda. You need to beat with a whisk or spoon. This should not be done for long, so that the carbon dioxide formed by combining sour milk and soda does not escape from the dough, otherwise the cake will not rise.

Then you need to pour in vegetable oil. You can use sunflower or olive oil. The main thing is that it does not have a pronounced smell or taste. Mix the dough thoroughly to break the greasy stain into small droplets.

After this, flour should be added evenly. It must be sifted in advance.

The dough should be homogeneous, without lumps of flour. If you can’t get rid of them, you can beat the dough for 1 minute with a mixer at medium speed. Line a baking pan with parchment paper and pour the mixture into it.

Fresh currants need to be washed and dried. Then the berries should be poured into the dough and lightly mixed, trying to distribute them moderately. This must be done carefully so that the currants do not burst and release juice; otherwise, after baking, the dough will acquire an ugly, brown color.

Preheat the oven to 180 degrees. Bake the frisky pie with fresh currants for 30 minutes. You can check the readiness of the dough by sticking a wood stick into it. If no raw lumps stick to it, the baked goods are ready. The cake must cool in the pan. After this, it can be removed and freed from the parchment. Before serving, the currant pie can be sprinkled with sweet powder.
