Step-by-step production
Step 1:
Dough. To make the dough we will need: flour; drink (it is better to take a fatter one, approximately 3.2% fat); large testicle; soda and salt.
Step 2:
Break an egg into a bowl. Pour in the drink. Add soda and salt. Whisk everything until smooth.
Step 3:
Sift the flour and add to the dough.
Step 4:
Mix everything thoroughly. You should get a semi-liquid homogeneous dough.
Step 5:
Interior. To make the inside we will need: ham; cheese and herbs. I used parsley, but you can also use dill or a mixture of parsley and dill.
Step 6:
Cut the ham into medium cubes. If you wish, you can cut off the crust and fat layers from the ham, as I did.
Step 7:
Grate the cheese on a medium or large grater.
Step 8:
Wash the greens and chop finely. You can use any greens to taste.
Step 9:
Add ham, grated cheese and herbs to the dough.
Step 10:
Mix the mixture thoroughly.
Step 11:
Transfer the resulting mass into a greased and parchment-lined pan. If the mold is silicone, there is no need to lubricate it with anything.
Step 12:
Bake the pie with ham and cheese in an oven preheated to 200°C for about 35-40 minutes. The pie is ready. Bon appetit!
This pie is one of the fastest and easiest I've ever made.
I cook it when I have absolutely no time or energy. The dough is kneaded in a matter of minutes. All that remains is to cut the ham, grate the cheese and chop the herbs. And add it all to the dough. The pie takes a little longer to prepare.
Moreover, due to the fact that the dough is semi-liquid, a crispy golden crust will appear on the dough only at the very end of baking. During the first 25 minutes of baking, it seems like absolutely nothing is happening to the cake. But that's not true. The finished pie comes out soft on the inside, and has a colorful and crispy golden crust on top.
By the way, the bottom of the pie does not have such a crust. The pie is very filling, so you can eat a small piece. That’s why it’s great to take this pie with you to work or give it to your child at school. It is good both hot, warm and cool. Very comfortable.
In this recipe, it is very important to look at the degree of saltiness of the goods. If the cheese and ham are very salty, then it is better not to salt the dough at all. Everything will be over-salted. It is worth testing the taste of cheese and ham in advance. And then start making the dough.

- eggs – 2 pieces;
- premium flour – 150 grams;
- milk – 100 ml;
- baking powder – 10 grams;

- 100 grams of cheese;
- onions – 12 – 2 heads, take a precise amount of onions based on your own tastes;
- fresh herbs – optional;
- a pinch of salt.
How will we cook?
Let's start the recipe for jellied pie with ham and cheese by creating the inside.
Cut the cheese into small cubes. Literally chop all the ham in the same way. Wash the greens, shake off excess water and finely chop. Finely chop the onion.
Make the dough and bake
Let's take a deep bowl in which we will knead the dough for the jellied pie with ham and cheese. Beat two eggs with a pinch of salt. Add milk and unflavored lean butter to this. Sift the flour, add to the crushed filling and mix. Pour in the whipped milk-egg mixture.
Treat the inside of the pie pan with vegetable oil. We pour what came out. Place in the oven and, preheating it to 180 degrees, bake the jellied pie with ham and cheese for half an hour or 40 minutes. When the indicated time has passed, do not rush to remove the baked goods from the oven. We wait 10 minutes and you can take it out.
Pie with cheese and ham on kefir
Another recipe for jellied pie, the dough for which will be made using kefir. Here's what you need to make this recipe:
Step-by-step manufacturing method
Grind the eggs with salt. Beat them with a whisk or fork, adding the entire stated amount of kefir. With continuous stirring, add flour sifted with baking powder. The result should be a dough with the thickness of thick sour cream.
Rub the cheese through a coarse grater. We also chop the ham. You can use the same grater for this purpose, or you can cut the ham with a knife, turning it into cubes. If we use the freshest greens, then they must be kept in cold water for about 5 minutes. Then we take out the greens and shake off the remaining water. Finely chop it with a knife.
Place the crushed ingredients for the inside directly into the batter. Mix thoroughly. Grease the mold and pour the future cake into it.
Preheat the oven to 180 degrees. Bake the pie for at least half an hour. After 30 minutes, check the degree of readiness using a wood splinter. If necessary, keep the cake in the oven for another 10 minutes.
Now take out, cool slightly and serve for tea, cutting into portions.
With ham, cheese and mushrooms
This manufacturing variation will require a little more time. But the reward will be a very tasty jellied pie. List of components for the test:
- a glass of kefir;
- a glass of flour;
- 2 testicles;
- a pinch of salt and sugar;
- soda -12 teaspoon;
- 2 tablespoons of vegetable oil;
- two tablespoons of sour cream.
- 5-10 new champignons;
- 200 grams of ham;
- half an onion;
- 100 grams of processed cheese;
- 2 tablespoons of sour cream product;
- greenery.
How to cook
Let's start with the inside. Fry the chopped champignons in hot vegetable oil until the water evaporates. Together with the champignons, fry the chopped onions. Season the contents of the pan with salt and pepper to taste. Cut the ham into cubes or grate it. We'll do the same with cheese. Add two tablespoons of sour cream and chopped herbs. Add one raw protein to the filling. Let's mix everything.
Now let's start creating the dough for the ham and cheese jellied pie. Warm the drink slightly. Add soda to it and mix the ingredients. Leave the mixture for 5 minutes for the soda to begin its effect.
Now let's add salt and sugar here. Add the remaining egg and yolk and mix, pour in two tablespoons of vegetable oil. Mix again. Now it’s the turn of sour cream and sifted flour. The result will be a dough that resembles a not very thick sour cream product.
Grease the bottom of the pan with oil or line it with baking paper. Pour out a little more than half of the dough. We put the filling on it. The surface of the inside is again with the remains of dough.
Heat the oven to the required 180-200 degrees. We place the mold with the future pie in its “bowels”. After 50 minutes you can check for readiness. As usual, using a wood toothpick. If the cake is baked, the toothpick will come out without any sticky dough. If it’s not ready, then wait another 5-10 minutes and take it out.
Laurent pie with ham and cheese
Laurentian or Lorraine pie, or otherwise quiche, is a popular type of open-faced pies with savory insides originally from France. This pie is not bad because it is quite simple and quick to prepare, and the insides can serve whatever your heart desires - meat, sausage or other meat delicacies, as well as a wide variety of vegetables and cheeses. You can come up with hundreds of different interior options to suit any taste, both for vegetable and meat eaters, and still get an amazing result every time. The secret of the Laurent pie lies in a very tasty crumbly shortcrust pastry, a rich creamy egg filling and a delicious cheese crust on top. Well, what lies between these main components simply complements and highlights the existing harmony of taste.
Now I will show you how to use this unusual French pie to get rid of the remnants of meat tenderloin, left over, for example, after a gala feast. In our house, this happens all the time - you buy meat delicacies in stock, and guests lean more on salads and various snacks, so what is left later is a mountain of tenderloin, which spoils very quickly, and sometimes costs 2-3 times more than the freshest meat. The Laurentian pie is a good way to make use of all this wealth. For it, you can take one type of tenderloin, or you can combine 2 - 3 different meat delicacies in the pie, either raw or lightly frying them in vegetable oil. Such preparatory heat treatment will not only add an interesting special taste to the meat tenderloin, but will also help protect it in this case if it has already begun to deteriorate.
Along with meat delicacies, you can add any vegetables or mushrooms to the filling to your taste, preferably previously boiled, fried or brought to at least half-cooked. You can use products left over from the holiday and ceremonial cooking, for example, canned corn and peas, beans and mushrooms, olives. Also great for the inside are onions, leeks, cherry tomatoes and bell peppers. For lovers of diets and proper nutrition, we can recommend the most desirable version of Laurent pie with cauliflower or broccoli. Overall, experiment and enjoy different flavor combinations!

How to cook Laurent pie - a recipe for shortbread pie with ham, cheese and cream filling with step-by-step photos
INGREDIENTS:
- 250 g flour
- 125 g softened butter
- 1 testicle
- 3 tbsp. l. water
- a pinch of salt
- 250 g ham/ham/carb
- 1 large bell pepper
- 1 large onion
- 2 tbsp. l. vegetable oil
- salt
- 2 huge testicles
- 250 ml cream 33%
- 125 g cheese (hard or semi-hard)
- 125 g mozzarella
- salt, pepper, basil, oregano
COOKING METHOD:
1. In order to prepare the Laurent pie with ham and cheese, sift the flour into a deep bowl or the bowl of a food processor.
2. Add softened butter, egg, salt and water to the flour.
3. Knead the dough with your hands or in a food processor using the hook attachment.
It is not recommended to knead shortbread dough for a long time. Once all the flour is moistened and the dough begins to form a ball, roll it into a ball, wrap it in cling film and put it in the refrigerator for 30 minutes. 4. While the dough is cooling, let's start making the interior for the Laurent pie.
To do this, peel the onion and cut into thin half rings. 5. Peel the bell pepper from seeds and cut into narrow strips.
6. Lightly salt the vegetables and fry in vegetable oil over medium heat for 8 - 10 minutes until golden brown.
7. While the vegetables are being fried, cut the ham or other boiled-smoked delicacy meat (ham, carb, neck) into long pieces.
8. To prepare the filling for the Laurentian pie, grate two types of cheese on a large grater and place in a bowl.
9. Add eggs and heavy cream to the cheeses.
10. Add salt and spices to the filling and mix everything thoroughly with a whisk until smooth.
11. Roll out the chilled dough on a lightly floured surface into a circle slightly larger than the diameter of the pan.
12. Carefully roll the rolled out dough onto a rolling pin and transfer it to the mold, making small sides.
I had a tart pan with low fluted sides and a diameter of 25 cm. It is not necessary to grease the pan, because the dough contains a huge amount of oil and it does not stick to the pan. 13. Place fried onions and bell peppers on the dough and spread moderately over the bottom.
14. Place slices of ham on the vegetables.
15. Pour the egg-cheese mixture over the top of the pie.
16. Bake the Laurent pie in an oven preheated to 190°C for 25 - 30 minutes until golden brown.
Cool the finished pie in the pan for 10 - 15 minutes so that the inside “sets” slightly, after which it can be cut into portions and served.
A very tasty and satisfying Laurent pie with ham and cheese is ready!
