Cupcakes made with kefir dough are the most common and affordable. They are so tasty that among my friends they got the name “Ulet” and are so versatile that you can cook them with any kind of entrails (cocoa and nuts, fruits and dried fruits, etc.). And most often I cook them, simply, with some kind of berry or fruit jam. For example, with chokeberry and zucchini jam.

Beat eggs with sugar.

Add the drink, stir.

Pour in vegetable oil and beat.

Mix flour with baking soda and baking powder, add to the dough and beat.

All that remains is to mix the jam into the dough.

Bake the cake in the oven at 180-200 degrees, in a ring shape for 45 minutes, in a round shape for about 1 hour.

  • 2 tbsp. good flour;
  • teaspoon baking powder;
  • teaspoon ground cinnamon;
  • teaspoon ground ginger;
  • 150 g butter;
  • a glass of sugar;
  • 3 huge chicken eggs;
  • a glass of orange jam.

Preheat the oven to 180 degrees. Place baking paper in the pan. Sift the flour through a sieve into a large bowl, add baking powder, cinnamon and ginger. Now add the butter, softened to room temperature in advance. Beat the eggs and add to the dough. At the end, add two thirds of a glass of jam. Beat everything thoroughly with a mixer. Pour the batter into the lined pan and bake for about an hour until the cake is puffed and firm. If you see it starting to burn but realize it's raw inside, cover it with foil. Check the degree of readiness with a toothpick, skewer or match. If you see wet dough on the matchstick, it means the cake with jam is not baked enough. Let the finished cake rest slightly and transfer it to a wire rack. Heat the orange jam and brush the cake.

This is a fairly basic recipe for small cupcakes with a jam center. Ingredients:

  • 150 g of premium wheat flour;
  • 100 g sugar;
  • a bag of vanilla sugar;
  • teaspoon baking powder;
  • half a spoon of tea salt;
  • three chicken eggs;
  • 150 ml milk;
  • a third of a glass of butter (melt);
  • teaspoon lemon zest;
  • 200 g jam.

In a bowl or saucepan, stir sugar, baking powder, salt and flour, vanilla sugar. In another bowl, beat the eggs and milk, pour in the butter and add the zest. Combine the two mixtures together and mix well to obtain a homogeneous dough. Place a tablespoon of dough into the prepared molds and spread evenly. Place a teaspoon of jam in the center of any mold. Place another tablespoon of batter on top of the jam. Bake the muffins with jam inside for at least 20 minutes in the oven. It must be preheated to 200 degrees.

Cupcake with jam and sour cream

  • two huge chicken eggs;
  • three-quarters cups of sugar;
  • 70 g butter;
  • one and a half cups of flour;
  • 100 g sour cream;
  • 150 g kefir;
  • teaspoon baking powder;
  • any thick jam to suit your taste.

This is a recipe for a cupcake with jam inside. Melt the butter and let it cool. Using a mixer, beat the eggs well until the mass increases in size by 3 times. Add sugar little by little and continue whisking. Add the drink and sour cream evenly to the oil. Stir flour, baking powder and sift through a sieve. Add flour little by little and continue whisking. As a result, you will get a dough as thick as sour cream. Place half a tablespoon of dough into paper or silicone muffin tins. Victoria sponge cake with strawberry jam

  • 200 g sugar;
  • 200 g softened butter;
  • 4 beaten chicken eggs;
  • 200 g flour with a teaspoon of baking powder;

  • 100 g softened butter;
  • 140 g sweet powder;
  • vanilla extract;
  • 200 g strawberry jam.

Preheat the oven to 190 degrees. In a large bowl, whisk all cake ingredients together until you obtain a smooth, soft dough. Divide the mixture between the pans and smooth the surface using a spatula or the back of a spoon. Bake for about 20 minutes until golden brown and the cake springs back to its original shape when pressed.

To create the filling, beat the butter until smooth, then beat in the sweet powder and vanilla evenly.

Spread cream on one of the biscuits, jam on top and cover with the second biscuit. Sprinkle with sweet powder.

Tender muffins with jam inside

  • 100 g semolina;
  • 100 g good flour;
  • one testicle;
  • 75 g sweet powder;
  • 70 ml vegetable oil;
  • half a glass of milk;
  • half a teaspoon of baking powder;
  • 6 spoons of tea jam.

Mix all the dry products separately, and separately all the watery ones that are whisked.

Pour the watery part into the flour and mix. The dough we will get is not very thick.

Pour a tablespoon of dough into the molds, then a teaspoon of jam, then again the dough. Bake for half an hour at 185 degrees until golden brown.

Curd cupcakes with jam

  • very soft cottage cheese – 150 g;
  • two tablespoons of mascarpone;
  • 100 g butter;
  • 150 g granulated sugar;
  • 2 huge chicken eggs;
  • a teaspoon of baking powder for dough;
  • a bag of vanilla sugar;
  • 4 tablespoons of jam or marmalade;
  • a couple of tablespoons of sweet powder;
  • silicone or paper cupcake molds.

Mash the cottage cheese with a fork, and mix the flour with baking powder. Cut the butter into pieces and melt over low heat. Beat the eggs with sugar and vanilla, then add the egg mixture with mascarpone and mix until smooth. If the cottage cheese is not soft enough, you can rub it through a sieve. Now add the melted butter and flour to the main mass, mix well and end up with a fairly dense dough. We put the dough into the molds, then add a little jam and add the dough on top again. Try to fill the molds 2/3 full, otherwise the dough will “run away”. Cook the cupcakes in the oven, heated to 180 degrees for about half an hour. When the cupcakes are browned, take them out, cool slightly and sprinkle with powder on top.
