Just by the name alone, everything becomes immediately clear - how could a dish that includes mushrooms, cheese, and chicken meat not be tasty? This is truly a very affectionate, tasty, truly festive salad. There are not many ingredients in this recipe, so the dish does not take long to prepare. The salad with mushrooms and chicken and cheese is laid out in layers. But if you really have no time, you can quickly combine all the prepared ingredients in a salad bowl and mix with mayonnaise, the taste is the same, a little less beauty.

– chicken fillet – 300 g;
– fresh champignons – 300 g;
– boiled chicken eggs – 3 pieces;
– hard cheese – 200 g;
– onions – 1 piece;
– butter – 1 tablespoon;
– vegetable oil – 2 tablespoons;
– mayonnaise – 100-130 g;
– salt – to your own taste.

Step-by-step recipe with photos:


1. Boil the chicken fillet in salted water until fully cooked. During cooking, you can put peeled onions and carrots into the pan. When you take out the chicken meat, you are left with ready-made chicken broth, on the basis of which the next day after a rich ceremonial feast, cook a light and necessary soup. While the meat is cooking, prepare all the other components of the salad. Wash the champignons, cut into small cubes and fry in a frying pan in vegetable oil for about 5 minutes, no more.


2. Now put the onion cut into small cubes here and fry everything together until the onion is fully cooked until it acquires a beautiful golden color. At the very end of frying, add butter to the pan for taste and stir. Once the butter has melted one hundred percent, remove everything from the heat. The mushrooms and onions are ready, let them cool.


3. Grate the hard cheese into separate bowls


and boiled eggs, no matter what kind of grater - large, small or medium.

It so happened that during the holidays we love to prepare hearty salads from several ingredients, coming up with various serving methods. One of my favorites is in layers. Naturally, you won’t cook such a dish on any day, but on holidays or weekends you might be puzzled. This means that we have decided on the serving, all that remains is to choose the ingredients. I now offer you the following combination: chicken and mushrooms. These two ingredients will be in any recipe, step-by-step photos of the preparation for which you can see below. But in each individual case, we will add something else and end up with a layered salad with chicken and mushrooms, but in different designs and with different tastes. Are we watching?

Salad with mushrooms and chicken: recipe with photos (layers)

Ingredients (4-6 servings):

  • chicken breast fillet – 1 piece;
  • mushrooms (champignons) – 4 pcs;
  • regular onion – 0.5 pcs;
  • vegetable oil – 1 tbsp;
  • reddish onion – 0.5 pcs;
  • eggs – 2 pcs;
  • hard cheese – 60g;
  • pineapple pieces – 100g;
  • salt - to taste;
  • mayonnaise.

How to make a layered salad with mushrooms, chicken and pineapples

  1. Boil the chicken fillet and eggs in advance.
  2. Cut the snow-white (or yellowish, which is better to say?) onion into small cubes.
  3. Champignons - in large pieces.
  4. First fry the onion in vegetable oil until transparent.
  5. Add mushrooms and fry until done. At the end, add a little salt.
  6. Cut the cooled chicken into cubes and place on the bottom of the salad bowl. Lightly salt.
  7. Top with mushrooms fried with onions and coated with mayonnaise.
  8. Cut the reddish onion into half rings - this is the 3rd layer.
  9. Chop the eggs with a knife, not very finely, and place them on the onion. Salt.
  10. Coat with mayonnaise again.
  11. Grate the cheese on a small grater and sprinkle it on the top layer of the salad.
  12. Place pineapple pieces on top of the cheese crumbs.
  13. Let it soak for at least an hour.

Salad "Polyanka": recipe with chicken and mushrooms in layers

What we will need:

  • chicken fillet – 1 pc.;
  • marinated champignons – 150g;
  • Korean carrots – 150g;
  • testicle – 3 pcs.;
  • potatoes – 2-3 pcs.;
  • pickled cucumber (not large) – 10 pcs.;
  • fresh parsley - 1 bunch;
  • salt - to taste;
  • mayonnaise – 100g.

How to Create This Chicken and Mushroom Salad

  1. Despite the fact that it can be prepared quite quickly, some preparation must be done in advance, namely: hard-boil chicken eggs, jacket potatoes and boil chicken breast in salted water. Cool and clean all the ingredients needed for the salad.
  2. Place marinated mushrooms on the bottom of a salad bowl or a special mold, caps down. Drizzle mayonnaise onto each mushroom leg.
  3. We wash the freshest greens in running water, dry them and finely chop them. Place on top of the mushrooms.
  4. Then lay out all the ingredients in layers, coating any layer with mayonnaise. The first is boiled eggs, grated on a large grater.
  5. The next layer will add a special note to such a salad - Korean carrots (for the most pleasant taste and beautiful appearance, it is better to cut them smaller). You can prepare carrots yourself or buy them ready-made at the store.
  6. Cut the chicken breast into small cubes and place it after the carrots. Add a little salt to taste and also grease with mayonnaise.
  7. Cut the salted or pickled cucumber into small cubes and place on top of the chicken.
  8. Grate the boiled potatoes and place them in the outermost layer. Lightly press the salad formed in this way on top so that all the layers come together perfectly and do not crumble when serving. Place the salad in the refrigerator for at least 1 hour. After an hour, cover the salad with a flat plate and carefully turn it over.

Ready-made puff salad with chicken and mushrooms, garnish with parsley leaves and you can serve it on the table.

Puff salad with Korean carrots, chicken and mushrooms

List of goods:

  • chicken breast – 1 pc.;
  • fresh cucumber – 2 pcs.;
  • fresh champignons – 250g;
  • Korean carrots – 150g;
  • mayonnaise – 60g;
  • lean oil - for frying;
  • salt, pepper - to taste.

Salad making method

  1. Boil the chicken breast in salted water for 30 minutes, then cool and cut into small pieces.
  2. Because we use fresh champignons and not pickled ones, they also need to be prepared in advance. Wash the mushrooms, peel and cut into thin slices.
  3. In a preheated frying pan with the addition of vegetable oil, fry the champignons until golden brown (approximately 5 minutes). Then remove from heat and let them cool one hundred percent.
  4. Meanwhile, cut the washed cucumbers into small cubes (if the skin is hard, it is better to peel them).
  5. Lightly chop special Korean carrots.
  6. When all the necessary ingredients for the dish are ready, you can “assemble” the salad into a single whole. Because it will be layered, so any layer needs to be greased with mayonnaise. Making such a salad using a molding ring will be even easier and more convenient. And so: on the bottom of a flat plate, place the chicken pieces in the first layer.
  7. Place fried mushrooms in the next layer.
  8. Then we distribute the freshest cucumber cubes on top.
  9. And the final layer will be Korean-style carrots (there is no need to season it with mayonnaise).

The salad came out appetizing in appearance and very tender and immediately tasted special!

Here are just three options for you with what you can combine chicken and mushrooms in a salad. In addition to the additional ingredients we used, we can recommend the following products for the inner layers and decoration on top:

  • prunes;
  • kiwi
  • apple;
  • grape.

These fruits will add sourness, sweetness and juiciness to the dish. Boiled chicken can be replaced with smoked chicken, then there will be more flavor and piquancy. The walnut will change the texture. In general, when it comes to layered salad, there is a lot of room for imagination. The main thing is not to be afraid to move away from stereotypes.
