How to make sweet syrup: 3 recipes for a quality bartender

Making sweet syrup is its own kind of science with its own subtleties and wisdom.

To begin with, at least, the fuss with syrup could be changed by adding ordinary sweet sand to one or another drink and then stirring it, but this fundamentally clashes with bartenders’ ideas about ethics and aesthetics.

The fact is that in the overwhelming majority of cases, sugar crystals that have not completely dissolved spoil the appearance of the drink and, accordingly, are considered a manifestation of bad manners and a sign of vulgarity.

  • 1 Regular or basic sweet syrup
  • 2 Ancient Sweet Syrup
  • 3 Rock Candy syrup

Regular or basic sweet syrup

The substance prepared according to this recipe is an indispensable component for drinks such as Al Capone, Whiskey Julep, Galliano Sour, etc.

List of ingredients

Preparation method

Boil water, pour sugar over it and stir until completely dissolved.

Next, the liquid should be cooled and filtered, after which it can be used for its intended purpose.

If you need to prepare a solution for a dozen or two servings of a cocktail, it is important to assume that from the above amount of sugar and water you will get not 200, but about 160 ml of the final product.

Ancient sweet syrup

If you want to show off in front of your friends by treating them to cocktails based on recipes taken from books from the times of Queen Victoria or the Art Deco era, a slightly different theory for making syrup will come in handy.

List of ingredients

Preparation method

Pour boiling water over the sugar, then place a suitable container in a water bath and stir the substance until the crystals are completely dissolved.

Then, the solution should be cooled and filtered.

With all this, when making a cocktail, be sure to adhere to all the characteristics of the recipe, even if the resulting drink turns out to be a relatively small size. The fact is that during the preparation of ancient recipes, popular portions of cocktails were somewhat smaller than now, which, by the way, determined the need to use the most saturated sweet solution.

Rock Candy syrup

Rock candy sugar syrup mixes well not only with rum cocktails like Mai Tais, but also with strong mint solutions like French Pearl.

List of ingredients

Snow white sugar – 100 g

Brown sugar – 100 g

Vanilla essence – 2-3 drops

Preparation method

The syrup is prepared following the example of the previous recipe; but, just before straining, vanilla essence is added to it.

In addition, it should be borne in mind that when choosing coffee (cane) sugar, it is better to stick to darker varieties; such as Muscovado or Demerara.

Is there an error or do you have anything to add?

Sugar syrup for cocktails

Approximately 50% of all favorite cocktails use sweet syrup. Naturally, it can be replaced with regular sugar, but this will affect the taste of the drink, because the sugar will be distributed unevenly.

As a result, the first couple of sips may turn out to be cloying, and most of them may turn out to be bitter or sour, etc. (depending on the cocktail recipe). Therefore, we will tell you how to prepare sweet syrup for cocktails at home. There is nothing complicated about this.

Sweet syrup recipe for cocktails

  • 1 part regular sugar;
  • 1 part dark cane sugar;

In addition to adding to cocktails, the syrup can be used to make lemonades (a simple recipe - water, syrup, lemon/orange/lime juice).

This recipe for sweet syrup can be considered as a basic one - nothing “terrible” will happen if you change the proportions. For ease of storage and use, it is best to pour the syrup into a bottle of any alcohol.

Syrups for alcoholic cocktails

Why add syrups to alcoholic cocktails? It's simple: for taste and color. This is precisely why they are different. How? Let's figure it out.

Syrup is different from syrup

So, syrup is an extract whose main component is sugar. A variety of components can be used as other ingredients: juices, extracts, flavorings. If we are talking about good syrup, they will be natural. But, if the manufacturer decided to save on quality, use synthetic ones. The extreme ones are quite easy to find due to their very intense color, which is very difficult to achieve using natural ingredients.

For example, to obtain one liter of standard maple syrup, as much as 30 5 liters are required. sweet maple juice! Why? Because, firstly, it needs to be boiled down properly, and secondly, when boiled, the juice turns white on its own. In other words, it turns out that a good syrup, by definition, cannot be inexpensive. But thanks to sugar, known as a good preservative, syrups have a long shelf life, and since they are added to cocktails in very small doses, one bottle lasts for a very, very long time.

But there are a few more features that you need to pay attention to when choosing a syrup:

  • Density (viscosity). Dense viscous syrups can be used to make layered alcoholic cocktails, but watery ones cannot.
  • The amount of sugar and flavor saturation. They influence the size of syrup that must be used to achieve the desired taste.
  • Color intensity. The color of the upcoming cocktail depends on this parameter.
  • Interaction with milk. Some syrups cause milk to clot.

If everything is clear and understandable with the last points, then let’s take a closer look at the first one.

How to find the density of syrup?

There are usually three degrees of syrup viscosity, which we will look at using the example of the ratio of water and sugar:

  • 1st sample . Or 50% to 50%. This syrup doesn’t even need to be brought to a boil, just heat the water slightly and simply dissolve the sugar in it.
  • 2nd sample . Or 75% water and 25% sugar. This solution will have to be boiled for some time. The mixture is determined as follows: rub a drop of slightly cooled syrup between your thumb and index finger and spread them apart. Is there a thin thread? You have reached the appropriate concentration.
  • 3rd sample . Or 85% water and 15% sugar. This syrup takes a little longer to boil, and a sign that it is ready is the appearance of a thick “thread”.

From time to time it happens that it is easier to cook a good syrup on your own than to find it on sale, or you need it urgently. In this case, they will come to your rescue...

Master Bar Syrup Recipes

Depending on the desired density, syrups need to be cooked longer or less, but the general notes will be as follows:

  • Sugar. To make it you need to take 600 grams of sugar and 400 grams of water. Depending on the desired density, you can simply dissolve the sugar in heated water or boil the syrup for up to 10 minutes. Just don’t forget to remove the foam.
  • Mint . Pour 50 grams of dry mint leaves into 0.5 liters of boiling water and leave to steep under the lid for an hour. Afterwards, strain, add 650 grams of sugar and cook over low heat for 10 minutes.
  • Vanilla . It is made on a sweet base: when it has cooled slightly, dissolve 20 ml of vanilla extract in it.
  • Raspberry . For the base we take 1 liter of sweet syrup. Squeeze the juice out of 1 kilogram of new raspberries, strain it and mix it with syrup, put it on the fire and, after boiling, cook for 5 minutes over low heat.
  • Lemon . Perhaps the longest in production. For it we will need 1 liter of sweet syrup, in which we will bring the zest of 300 grams of lemons to a boil and leave it to brew for 2 days. After this, the solution will need to be filtered and diluted with the juice of the same 300 grams of lemons.
  • Orange . Prepared according to the lemon recipe, but at the end you can dissolve 10 grams of citric acid in the finished syrup.
  • Strawberry . It is prepared in the same way as raspberry syrup, but after the finished syrup has cooled slightly, you need to add 20 ml of lemon juice to it.
  • Cherry . Follow the recipe for making raspberry syrup.
  • Rowan . This is syrup with pulp. It is prepared like this: rowan berries (0.5 kilograms) boiled for 7 minutes in boiling water, rubbed through a sieve, a solution of 650 grams of sugar and 480 ml of water is added to them, put on fire, brought to a boil and removed from the heat.
  • Nutty . We prepare sweet syrup, but based on coffee, not water. We will need 650 ml of it. Roast 350 grams of walnuts, chop, add to the hot coffee syrup, stir and leave for about an hour.
  • Clove . You will need 10 grams of ground cloves, which must be poured with 100 milliliters of hot water and boiled for 7 minutes. The purchased infusion is filtered and combined with 400 milliliters of sweet syrup. Ready!
