Prep and Cooking Tips
Everyone is familiar with apple jam, but not many people have tried chokeberry jam. As a child, most of us feasted on our grandmother's rolls from ordinary goods that were in any garden. Some housewives have long been growing and consuming chokeberry berries in various forms; on their own they are tart, but in combination with the softest berries and fruits they become the softest in taste.
The ripe fruits of chokeberry contain a lot of essential vitamins and minerals, which have a beneficial effect on the entire body in general, but not everyone can eat them in their pure form. To improve the taste of tart fruits, they are often combined with other products; most often, apples succeed in smoothing out the rich taste; pear, plum, and quince mix well with the berries of the bush. The main tips for cooking are:
- A classic of the genre in sunset cakes is jam made from rowan berries and apples; the products are taken in approximately the same proportions. The taste is adjusted according to the ratio of raw materials: the more chokeberry there is, the sharper the taste of the jam will be.
- Sugar consumption will be normal and directly depends on the properties of apples and berries: the more sour they are, the more you need to add.
- Natural spices will help improve the taste and give it special spicy notes. It’s perfect to add a couple of cinnamon sticks to the brew, lemon zest will add some exoticism to the dish, and lemon balm will add freshness.
- It is better to prepare jam in an enamel bowl and stir with a wooden spatula.
Advice! You can make jam from apples and chokeberries; the products are boiled, rubbed through a fine sieve and boiled with sugar until thick.
From time to time, to improve the taste, a drop of vanilla extract or half a vanilla pod is added to the prepared jam.
Preparing Ingredients
Everyone understands that in order for the jam to be tasty and healthy, the ingredients must be of good quality, and the preparation is carried out only at the highest level. Chokeberry jam is no exception; in order to pamper yourself and your loved ones with tasty treats in the winter, you should prepare all the ingredients correctly before making them:

- The apples chosen are late-ripening types, firm and not broken.
The products are washed and dried beforehand, then the apples are peeled and cut into medium cubes. The rowan berries are removed from the brushes, painstakingly sorted and washed.
For recipes with the addition of lemon, you should be careful when choosing a citrus fruit; it should be medium in size, the skin should be quite yellowish, without any inclusions of foreign color.
Advice! In order for the chokeberry in the jam to be soft and tender, it is worth dousing the berries with boiling water several times beforehand.

Step-by-step production
Step 1:
To make jam, prepare the following ingredients: chokeberry fruits, sweet and sour apples, water and granulated sugar. Rowan can be consumed both fresh and frozen. It is even believed that frozen plants have tastier fruits. Therefore, if you are lucky enough to get the freshest chokeberry, then freeze it in advance.
Step 2:
Pour filtered water into a suitable size pan with thick walls, add a third of the sugar and pour in the washed chokeberry fruits without petioles. Place the pan on medium heat and, without covering with a lid, cook for about forty minutes after the syrup boils.
Step 3:
Wash the apples under running water and remove the seed boxes. Cut the apples into medium cubes. This way they will be better visible in the finished jam by their shape, because the color of the apples will eventually be chokeberry, in other words, dark burgundy.
Step 4:
Add the apples and the remaining sugar to the pan and stir. If you are the happy owner of a cherry tree at your dacha, then at this step you can add a few cherry leaves to the pan to flavor the jam.
Step 5:
Cook the jam under a closed lid over low heat for about 40 minutes after boiling, stirring occasionally so that it does not burn. Due to the fact that everyone’s hobs are different, as, in general, are the dishes in which the jam is cooked, the production time can vary significantly.
Step 6:
You should focus on the thickness of the jam and its desired thickness. In any case, it does not have to be very watery and flow from the spatula like syrup. The jam should thicken well and the apple pieces should become soft.
You can try the jam immediately after it has completely cooled down. But it would be better to transfer it to unstained, dry containers and let it sit at least overnight (that is, at night) in the refrigerator.
Store this jam in the refrigerator, but not longer than 2 weeks, maximum. For the longest possible storage, there is a preservation method using sterilization of glass jars.
