First, you should prepare all the ingredients for this dessert, but it should be noted that the ingredients can vary depending on the preferences of the hostess.

Preparation of ingredients:

To make the dessert, you need to make marshmallows, because they are sold whole, you can simply break the dessert into halves, or you can cut it with a knife.

It should be noted that very soft marshmallows are difficult to cut; to make the process easier, you can occasionally dip the knife in hot water. A hot knife will cut the airy marshmallow faster and more evenly. Several halves of the dessert are removed before decorating the cake, because they act as the final layer.

Making cream:

Usually, a no-bake marshmallow cake with fruit is prepared with sour cream (with photo). But in our case, we will already prepare custard, which will make the cake no less tasty and tender. First, it’s worth preparing a specific cream; for this, take the yolks of chicken eggs and mix them with sweet sand and flour. Milk is added to the mixture evenly; it is better to mix with a whisk. In this way, it is possible to avoid the occurrence of lumps in the cream.

Even if lumps of flour suddenly form in the cream, you can break them up using a blender. The cream is placed on the fire, and then it is allowed to boil, while the mass must be constantly stirred so that the flour and milk do not start to burn. Once the mass is ready, cool it well, and then add softened butter to it and beat with a mixer. You should also add cocoa powder and the required amount of vanilla powder.

It is best to grind the nuts in a blender, so the crumbs will be as small as possible; do the same with cookies, in the end we should get a product similar to breadcrumbs.

Dessert formation process:

The marshmallow is divided into two equal halves, but you can simply cut off the tops of any sweet to make it flat. You should not throw away the tops, because they will be used to decorate the dessert. Place marshmallows in a springform pan and then cover it with a layer of custard. How to create a marshmallow cake without baking

I mix both ingredients with a mixer for up to 3 minutes. Turnovers do not play a special role, the main thing is that nothing splashes out. The thickness of the acquired mass should be slightly thinner than “store-bought” condensed milk.

This amount depends on the recipe that any housewife follows - for example, when my grandmother was preparing a marshmallow cake, she quietly made do with one glass. There is a small aspect: do not pour out all the ground mass at once, leave a little for powder at the very end.

A little bit of vigilance will be needed during this step. It is necessary to grind so that the “flour” is not very small. Next, add this ingredient to the bowl.

Now set the mixer aside and mix the resulting mixture with an ordinary tablespoon or silicone spatula. Our base should be similar in thickness to dough.

I mix what comes out with a spatula. This is almost the finish - all that remains is to apply the glaze to the workpiece and sprinkle with ground nuts.

First, let's prepare the cream for the marshmallow cake.

Grind the nuts very well in a blender. Create the same with cookies so that they resemble breadcrumbs. Divide the marshmallows into halves and cut off the tops of each so that it takes a flat shape. Take a springform pan (mine is 23 cm across) and cut the foil straight across the bottom (!) of the pan. After this, line the mold with cling film, so that the edges hang down, and put a circle of foil that we cut out in advance on the bottom.

Place the marshmallow circles on the bottom very, very tightly and fill the voids between them with cut off tops. Spread with cream and sprinkle with ½ cookies and ½ chopped nuts and compact well. Later, lay another layer of marshmallows, grease with cream, sprinkle with nuts and cookies, compact well again. Cover everything with hanging film and put the cake in the refrigerator for a day.

A day later, open the springform pan and carefully (!) transfer the cake to a flat dish, and only then carefully cut off the visible film with scissors.
The marshmallow cake is very delicate and if you try to pull the film out from under the foil, it can crumble. It's better not to take risks! You can decorate the top of the cake at your own discretion. These can be roses made of cream, pieces of marshmallows, crushed nuts. It came out very tasty and unusual.

For production we will need:

Marshmallow 500 gr

Cream 33-35% 300-600 ml

The cake is simple and easy to prepare – you don’t even need to bake it! Cut marshmallows into thin circles - 3 pieces from each marshmallow. You need to do this with a hot knife. First put a layer of marshmallows on the dish, grease it generously with cream, sprinkle with nuts, and put a layer of one type of fruit or berry. Later - again a layer of marshmallows, cream, nuts, another type of fruit or berries. The last “round” is a layer of marshmallows, cream, nuts and on top - the third type of fruit or berries. Decorate the cake with the remaining cream, chocolate or coconut shavings, melted chocolate, marmalade, and candied fruits. Place the cake in the freezer for 2-3 hours, and then in the refrigerator.

  • The following fruits and berries are suitable for making a cake: bananas, oranges, kiwis, pineapples, peaches and apricots (can be made from compote), tangerines, pears, strawberries, dark currants, blueberries, wild strawberries, cranberries, raspberries, blackberries, pitted cherries. The last layer in the cake should be a layer of cream. We decorate at our own discretion.
