Caesar with chicken and Chinese cabbage - a homemade version of a delicious salad
It is not in vain that this salad was given the title of Caesar: having come to us as a great foreign guest, it took root and was loved as if it were our own. We eat it in winter and summer, fortunately the year-round availability of new vegetables in stores allows this. And yet, in the autumn-winter period, traditional lettuce leaves are purposefully replaced from time to time with Chinese cabbage, which is no less rich in vitamins. For satiety, we will add chicken, despite the fact that this ingredient is not in the traditional recipe. For crunch, throw in a handful of crackers, homemade, of course. Our quick recipe with photos step by step.
What will we need
- Chinese cabbage – 1/2 fork;
- chicken (baked chicken breast) - 1 pc.;
- tomatoes - 2 pcs.;
- Parmesan cheese – 40 g;
- snow-white loaf – 2 slices;
- Caesar dressing - to taste
- olive oil – 0.5 tbsp;
- Provençal herbs – 0.5 tsp.
How to cook Caesar with chicken and Chinese cabbage
- First, let's create the crackers. To do this, cut the loaf into strips. Sprinkle the loaf pieces with olive oil and season with Provençal herbs.
- Place in the oven, preheated to 180 degrees, for 5-7 minutes. We take out the finished crackers and set them aside for now so that they cool and become even crispier.
- We collect the salad on a large plate or dish. We remove the solid parts of the Beijing. Shred the rest of the cabbage and place it on a dish. Sprinkle grated Parmesan cheese on top (you can grate it not in a separate container, but directly onto the cabbage). Drizzle with Caesar dressing.
- Cut the smoked chicken into medium pieces and place on the cabbage. Instead of smoked chicken, you can use boiled chicken. Chicken baked in the oven is also great for salad (you see, from time to time after baking a whole chicken, pieces of it remain, so they are great to use for our Caesar).
- Cut the tomatoes into pieces of similar size. Pour in the sauce.
- And as a final step, lay out the croutons and sprinkle them with Parmesan.
Serve immediately, because the croutons will get soggy from the water and the salad will lose all its beauty. In addition, Chinese cabbage, literally like lettuce leaves, quickly loses its elasticity after dressing, which also will not make Caesar appetizing.

Peking is amazingly mixed with crispy croutons and chicken, simply soaked in hot sauce, and therefore fits into the Caesar recipe as completely unacceptable.
In addition, cabbage can also be used for aesthetically pleasing dishes. Let's start analyzing the fork like this. First, we separate a few of the upper strong leaves, then we cut off the lower part and chop everything else for the salad. Line the dish with whole leaves and form a cabbage pad. And already on it we create the main sketch of Caesar.
And now we offer you another refueling option. Let's prepare it at home:
Squeeze the juice of half a lemon, mix it with 2 tbsp. spoons of mayonnaise. Add garlic, passed through a press, salt and pepper. Stir well and add 2 tablespoons. spoons of water, grated cheese and mix again until smooth. When everything is ready, add a pinch of dry Italian herbs seasoning.
Well, let’s recall the traditional sauce recipe:
Place one chicken egg at room temperature in warm water for 30 minutes. It is advisable that the other ingredients for the dressing are also not from the refrigerator. If you do not aim to be completely consistent with the original source, you can simply take a soft-boiled egg and break it into a blender bowl.
Add mustard (you can use mild French mustard), juice of half a lemon (or lime), and beat everything with a blender. It is important not to overdo it with the amount of lemon juice - the mixture will not be special, but sour. Now add olive and sunflower oil evenly and beat again until smooth. At the very end, add spices and Worcestershire sauce - slowly, one drop at a time. It can be replaced with balsamic vinegar.
Why is it desirable to combine different types of vegetable oil in the sauce - the taste of the finished dressing will be the mildest and will not interrupt the taste of the other ingredients.
You can find other options for making Caesar dressing, regardless of whether you prepare it with Chinese cabbage or lettuce leaves, at the following link:
Chinese cabbage will go perfectly with any of the proposed sauces - truly a vegetable for all occasions: formal banquets, home dinners, a leaf in a sandwich. Useful, beautiful, radiates freshness and a spring mood.

Step-by-step recipe with photos
In our area, Chinese cabbage is available in grocery stores at any time of the year, so I began to increasingly replace it with iceberg lettuce or romaine in Caesar salad! I cook virtually any of its variants with Peking: with shrimp, with bacon. You can look at the collection of Caesar salads collected on the website.
More often than all other options in our family menu, Caesar with chicken and, in my opinion, with Chinese cabbage, it tastes very harmonious. I really like making pastrami from chicken breast; its juicy pieces are perfect for salads! Chicken meat prepared by any method is also suitable: baked in the oven, boiled in water or steamed, etc.
Take note of the recipe for Caesar dressing or prepare a sauce based on mayonnaise, adding garlic, lemon juice, Worcestershire sauce or anchovies and hard cheese.
For Caesar salad with Chinese cabbage and chicken, prepare the ingredients according to the list.
Prepare croutons of the desired size and shape from snow-white bread. The loaf or baguette can be cut into cubes or thin slices. Ciabatta can simply be torn into pieces by hand. Brush or sprinkle the croutons with olive oil and sprinkle with chopped garlic. Dry the crackers on a baking sheet in the oven.
Cut the chicken breast into thin slices. Here is pastrami, for which I used a curry mixture as spices.
Wash and dry the Chinese cabbage. Then chop the leaves. If you wish, you can chop them completely or just their leaf part, having previously removed the dense veins.
Grate hard cheese. In this version, Irish snow-white cheddar is used, and Parmesan is usually used, it gives that particular taste, but flavor analogues of Parmesan will also work.
Assemble the salad in portions on a flat plate. First, place a heaping portion of Chinese cabbage leaves, pour about 1 tablespoon of Caesar dressing over them, and sprinkle with about 1 tablespoon of grated cheese.
Arrange the chicken and tomato slices.
Pour the second portion of the sauce over the salad. Serve immediately, accompanying the salad with crispy croutons and a good sprinkling of grated cheese.
Caesar salad with Chinese cabbage and chicken is ready.
