How to cook Viennese and other soft waffles
How to cook Viennese and other soft waffles
Viennese, cottage cheese, apple, banana-orange, cheese and even potato waffles are prepared in a matter of minutes.
How to Create Waffle Batter
Soft waffles are puffy waffles of square or round shape, which are prepared from dough with the addition of baking powder. Viennese waffles are considered a classic.
4 main secrets
If the recipe contains butter, then it needs to be melted in a water bath. Baking with melted butter acquires a delicate taste and porosity.
To melt butter in a water bath, you will need:
- plate;
- 2 pans: larger and much smaller.
Place the oil in the smallest container and place it in a large pot of bubbling water. Stirring the butter constantly, melt it.
Eggs are constantly added to the dough using a special method. The yolks are separated from the whites and added to the dough immediately. The whites are whipped to peaks and added at the end: small air bubbles make the baked goods light and fluffy. If you do not separate the whites from the yolks or add them first, the waffles may turn out rubbery.
If the recipe contains a drink, milk or sour cream, then they are added penultimately, before the whipped egg whites.
All ingredients without whipped whites must be thoroughly stirred with a mixer in a deep bowl until a homogeneous mass without lumps is obtained. When the whites are added, the dough is mixed only by hand. The mixture should resemble sour cream and be a little thicker than pancake batter.

In the waffle iron
Grease the waffle iron plates with vegetable oil and heat the device. Focus on the light indicator: when the waffle iron is ready for use, the green light will light up.
Place 2 tablespoons of dough on each plate. No more is needed, otherwise it will spill out around the edges. If you use less, the waffles will turn out very small.
Baking time depends on the power of the device. The larger it is, the faster the waffles will cook. For example, the Moulinex SW611812 model with a power of 700 W will bake waffles in 10 minutes. And the Kitfort KT-1620 waffle iron with the ability to adjust the temperature and a power of 920 W will cope with the task in approximately 6 minutes.
When the waffles are baked, the green light will go off.
The most popular waffle irons with light indicators:
- Gfgrill GFW-015 with adjustable thermostat;
- Gemlux GL-WM-888R with the ability to turn the device over for uniform distribution of dough;
- Redmond RMB-M713-1 with removable panels that allow you to bake not only fluffy waffles, but also donuts, triangular pies, thin crispy waffles, pancakes, nuts with condensed milk and almost everything else;
- Endever Skyline WM-20 with waffle cone cone;
- Gfgrill GF-020 with rotary handle for even distribution of dough;
- Kitfort CT (Computed tomography - a method of non-destructive layer-by-layer examination of the internal structure of an object) -1611-3 with cells for huge wafers;
- Clatronic WA 3606 with temperature configurability.
It is necessary to remove the waffles using silicone spatulas or tongs so as not to destroy the non-stick coating.
In the oven
Grease the mold with vegetable oil. Pour the dough into the cells. Shake the pan so that it is evenly distributed.
Place the mold in an oven preheated to 220°C. Bake waffles for 8-9 minutes. Then remove them from the mold and place them flat on a baking sheet. Bake for another 5 minutes.
The most popular waffle molds are made by Lekue. They are made of food-grade silicone, easy to wash, and easy to use. But you can also purchase an economical analogue on AliExpress.
How to serve waffles
Sweet waffles are served with ice cream, fruit, berries, grated almonds, yogurt, whipped cream, sweet powder, jam, honey, chocolate and toppings.

Traditional recipe for fluffy Viennese waffles
Fluffy Viennese waffles are known all over the world; the traditional recipe involves making a soft dessert with a tender mixture. You can prepare the delicacy in the oven or on an electric waffle iron. Viennese waffles are usually classified as desserts. They are served with the freshest berries, cream, syrups, watery chocolate, nuts, and caramel. With all this, you can add cheese, fresh herbs, and reduce the amount of sugar to the dough. This will make a good snack.
The dough recipe for Viennese waffles is similar to dough for pancakes or pancakes. It contains butter, milk or cream. Naturally, the base can be kneaded with water, but with a creamy base the taste of the dessert will be the softest.
The most delicious Viennese waffles: dough recipe with secrets
The baked goods will turn out to have a very tender texture if you include butter in its composition, which will give the base porosity. The product should be previously melted until watery. This can be created using a microwave (microwave radiation, ultra-high frequency radiation - electromagnetic radiation, including the decimeter, centimeter and millimeter range of radio waves) - an oven or a water bath. As a last resort, the oil is simply placed in a container, which is placed in a pan of water.
Viennese waffles turn out to be very tender, if you take into account the other secrets of their production:
- Chicken eggs must be fresh. With all this, the whites are separated from the yolks. The yolks are immediately added to the base, and the whites are beaten at high speed until stiff peaks form. The whipped protein mass makes the dough airy;
- Dairy products (cream, milk, drink, sour cream) are added to the dough at the very end, but before the whipped whites;
- Whipping. The dough is kneaded with a mixer until smooth. After adding the proteins, the base is kneaded by hand;
- Density. The base mixture should be slightly thicker than for pancakes.
It is important to realize that the traditional recipe for Viennese waffles is basic. It can be constantly varied. For example, good dough comes out with yogurt. Cottage cheese will make the dessert the most healthy.
Traditional recipe for Viennese waffle dough for the oven
If you don’t have an electric waffle iron, you can simply purchase an oven-safe pan. It is sold in any hypermarket. The cooking time depends on the oven itself and the thickness of the waffles. The thicker the base, the longer it takes to bake.
