I have been making potato and pickled cucumber salad for a long time. But only recently I found out that this salad is from German cuisine. True, with an unusual dressing - mustard. For a long time I did not dare to season the salad with mustard, thinking that it would be very spicy. But when I finally made such a salad, I was pleasantly surprised by its special and not at all hot taste!
For the salad I found these products useful:
I boiled the potatoes ahead of time so that they would cool well. It doesn’t have to be very boiled so that it doesn’t turn into puree. Later I cut it into large pieces and put it in a bowl.
In another plate I put onion, cut into narrow strips. I rinsed it with cool water to remove excess bitterness.
I also put mustard and dill here. As a standard, dill should be fresh and finely chopped, but at the moment it is winter, and fresh dill is not always available. That's why I replaced it with salted one. And I didn’t put salt.
I poured vinegar. I made it from acetic acid, diluting it to a suitable state.
And added cool sunflower oil without aroma.
Placed the onions in a bowl with the potatoes.
I stirred, trying not to mash the potatoes.
Cut the cucumbers into thin slices.
And smoked sausage - in small cubes.
By the way, the standard should have bacon instead of sausage, but my version is not at all worse. Yes, and cheaper.

In order for the potatoes to be saturated with the smell of spices, they must be placed in the refrigerator for several hours.

One of the most common options is German salad with sausage. The extreme sausage can be boiled, even half-smoked, garlic, even ordinary sausages are suitable, but the sausage must be fried so that it reveals its own smell and becomes even tastier.
- First, boil the potatoes in their jackets with salt. Make sure that it does not boil over, and to ensure that the potatoes come out elastic, after cooking they should be kept in the refrigerator for several hours.
- Peel the cooled potatoes and cut into thin slices or slices.
- Cut the sausage into slices and fry in oil until browned on each side.
- Cut the cucumbers lengthwise and chop into thin slices.
- Cut the tomatoes into small pieces.
- Chop the onion into thin half rings or large cubes.
- Combine all ingredients in a deep salad bowl, add salt and sprinkle with ground pepper. By the way, snow-white pepper and coriander, as well as nutmeg, “sound great” in potato salad. Add these spices and the dish will become inimitable.
In a separate container, mix vegetable oil with mustard, beat until smooth and pour the purchased sauce over the salad. Mix everything well and refrigerate for 20-30 minutes. Before serving, you can sprinkle the dish with chopped dill.
You can add mayonnaise to the sauce for German salad with potatoes, cucumbers and sausage, replacing oil with it. And besides sausage, you can also fry bacon or any smoked meats.
Options
Almost everyone will love the unusual German salad with ham and pickled herring. The composition contains a huge number of ingredients, different in taste, but together they mix amazingly, such a salad can become your favorite.
- You should create a dressing in advance by using a blender to beat yogurt or low-fat sour cream (200 g) with wine vinegar (2 tbsp), chopped green onions and walnut kernels (50 g each), ginger, salt and ground pepper.
- Cut the boiled potatoes into cubes and mix with a spoonful of dressing.
- Cut smoked ham, herring and pickles into cubes.
- Cut the apple and celery into slices, pouring a spoonful of dressing over them.
- Place potatoes in a deep salad bowl, herring on top, then apples and celery, ham and cucumbers. Pour sauce on top and sprinkle with chopped herbs.
You can also create a German bean salad with herring.
- To do this, you need to fry the fish in oil until cooked, then cut it into pieces, removing the bones.
- Boil the green beans and cut into 2 cm pieces.
- Cut apples and pickled cucumbers into slices.
- Mix everything in a salad bowl and season with sauce.
- The last one is prepared from vegetable oil, vinegar, a pinch of sugar and salt, and ground pepper. All ingredients are whipped until smooth.
