Cherry puff pastry strudel
The traditional recipe has earned the attention of millions of fans of this luxurious sweet. The product can be created from ready-made dough purchased in a hypermarket, which is practically no different in quality from homemade dough.
- Cherry (pitted) – 700 g;
- One testicle;
- Butter – 30 g;
- Yeast-free puff pastry – 450 g;
- Sugar – 150 g;
- Rusks - two huge spoons;
- Starch - one tablespoon;
- Sweet powder (as a topping).
The manufacturing process is as follows:
- If the cherries are frozen, remove the seeds from them, defrosting them first. You can also use the freshest one. Add sugar to any of these berries and stir thoroughly;
- Melt the butter in a water bath or in a microwave oven ;
- Defrost the “puff pastry” at room temperature, roll it out into a layer half a centimeter wide, wait until it rises a little. Season with melted butter, sprinkle with breadcrumbs (they can be made from a bun);
- Sprinkle sugared cherries on top. Leave about one centimeter on the sides, sprinkle the berries with starch;
- Brush the edges with beaten egg. Roll it into a roll (tube), making sure to fold the edges inward;

It’s quite quick and easy to prepare, and the result is simply excellent. For the dough, use puff pastry without yeast, because the yeast base will not work here.
- Four testicles;
- Yeast-free puff pastry – 250 g;
- Sugar - a glass;
- Frozen cherries – 300 g;
- Cottage cheese – about 1/2 kg;
- Butter – 30 g;
- Vanilla sugar, cinnamon - a teaspoon;
- Milk - two huge spoons;
- Starch - a large spoon.
The cooking scheme is as follows:
- Thaw the cherries and place in a colander to drain the juice. The recipe for cherry strudel made from puff pastry can also include the freshest berries. Remove the seeds from it and also discard the berries in a colander;
- Prepare the cottage cheese filling. Place it in a bowl, add a whole egg and two yolks, vanilla sugar and half a glass of regular sugar, stir until smooth;
- Roll out the puff pastry into a narrow layer, brush it with melted butter;
- Spread a thin layer of curd filling, leave approximately 2 cm free edges on 3 sides of the rectangular dough;
- Mix the cherry with cinnamon and the remaining sugar;
- Place the berries on the layer of cottage cheese from the close edge, which you will wrap first;
- Next, wrap the side test edges well - on the left and right sides, so that the inside does not leak out;
- Form a delicious strudel with cherries by rolling the dough with the inside into a roll (you can create a crescent);

- Mix the remaining egg yolk with milk and brush the product;
- Set the temperature to 180-190 degrees and bake in a preheated oven for about 30 minutes. Cool, cover with sweet powder.

Strudel with frozen cherries and apples made from puff pastry
A very special treat with a lovely hint of cinnamon.
- Fresh apples – 170 g;
- Puff yeast dough – 0.5 kg;
- Flour – 40 g;
- Crushed nuts and breadcrumbs – 85 g each;
- One egg;
- Frozen cherries (pitted) – 300 g;
- Sugar – 110 g;
- Ground cinnamon – 7-10 g;
- Peasant butter – 45 g.
{Instructions} for making at home:
- With the puff pastry we carry out the same steps as in the first recipe;
- The same manipulations with the cherry as in the 2nd annotation;
- Wash the apples, remove skins, cores and seeds, and cut into medium cubes. Place the resulting apple mixture in a saucepan, pour in a little water and simmer for about 5 minutes, stirring constantly;
- Add cinnamon and sugar, add thawed cherries without syrup and remove from heat. We are waiting for our delicious insides to cool down;

The most common option for making cherry strudel is using ready-made puff pastry. For this baking, yeast-free puff pastry is most suitable for us. How to make strudel with cherries
Wash the insides of the cherries, dry them and remove the seeds. If the cherries are frozen, then defrost them in advance in a sieve so that all excess liquid is drained.
To prevent the strudel from coming out raw inside, salt all the juice from the cherries, and mix the berries themselves with potato or corn starch. The only thing left to add to the filling is sugar, but we won’t do that for now, otherwise the berries will release juice again.
In a separate bowl, melt a small amount of butter and cool slightly.
Now that everything is ready, let's start working with the dough. Roll out the puff pastry into a narrow rectangle. To maintain the layering of baked goods, puff pastry must be rolled out in only one direction - up or down, or only to the sides.
Brush the dough with melted butter.
Sprinkle bread crumbs on top of the dough. You can buy them in the store (be sure to make sure that the crackers are without added spices) or you can create them yourself from dried bread.
Now add sugar to the cherries, mix everything and immediately spread it on the dough. If there are not enough cherries, then the filling can be supplemented with ready-made jam or jam.
Fold the dough under and on both sides. In this case, when rolling the roll, the inside will not fall out from the edges.
Starting from the bottom, roll the dough into a loose roll.

- Milk - 250 ml;
- Baker's vanillin - 1 sachet;
- Semolina - 2 tablespoons;

Manufacturing process:
- Remove the dough from the freezer and defrost it on a floured work surface.
- Peel the berries and place in a sieve to drain excess juice.

To make puff pastry you will need:
- Flour - 3 cups;
- Egg - 1 pc. (large);
- Melted butter - 12 tablespoons;
- Drinking water - ½ glass.
- To make the inside:
- Almonds - ½ cup;
- Sweet sand - ¾ cup;
- Pitted cherries - 300 g.
- Sweet powder - 3 tablespoons.
The manufacturing process contains the following steps:
- Slice almonds into thin slices
- Melt the butter in the microwave.
- Sift the flour into a deep bowl. Pour in warm water and 10 tbsp. butter, beat in the egg.
