  • For those who are especially lazy and don’t want to bother with baking pancakes (although there is nothing labor-intensive here!), there is an option. Swap the wheat ones for egg ones, in other words, for an omelet. The taste will vary, but it won't be any worse.
  • Don't be afraid to experiment, swap the corn for peas. Or instead of new cucumbers, use salted ones
  • Be sure to let the salad sit until it’s ready!

Cabbage salad with smoked chicken and egg pancakes is a very ordinary, fairly economical and yet delicious salad. It comes out light and juicy thanks to cabbage, herbs and onions, and filling thanks to smoked chicken and egg pancakes.

1. Prepare all the ingredients. Peel the onion. Wash and dry the greens.

In the photo there is more cabbage than will be needed for the salad, because it is more convenient and faster for me to chop the cabbage, cutting it into thin strips from a fork cut in half. The required amount of cabbage is indicated in the recipe header.

This salad will be much juicier and tastier if you use young cabbage. Unfortunately, it’s not the season at the moment, so I have winter cabbage.

2. Remove the skin from the smoked chicken breast (I don’t use it, so I throw it away) and separate the meat from the body.
Cut the meat into thin bars, chop the cabbage thinly, cut the onion into small cubes, chop the greens finely. Let's marinate the onion: add salt, sugar, vinegar and cool water.
There should be so much water that it practically covers the onion. Let marinate for 30 minutes. Break the eggs into a deep bowl.

The remains of a smoked chicken breast can be frozen and used in the future for cooking broth or soup, for example, pea soup.

3. Add salt, ground black pepper and dried garlic to the eggs,

5. Pour approximately one-sixth of the egg consistency in a thin layer into a perfectly heated frying pan, lightly greased with olive or other vegetable oil. Fry the egg pancake over medium-high heat (on my electronic stove 6 out of 9) very quickly: as soon as the bottom of the pancake sets,

7. Remove the finished pancakes from the pan and let them cool slightly. From 6 eggs I got 6 and a half thin pancakes.

8. Cut the slightly cooled pancakes into small strips.

9. Add some salt to the shredded cabbage and carefully knead it with your hands so that it releases its juice.

10. Salt all the liquid from the pickled onion (you can discard it in a colander). Add all other ingredients to the cabbage and ground black pepper to taste. I don’t add salt, because there is not a single unsalted ingredient in the salad: we salted the cabbage, onions and egg pancakes, and the smoked chicken is salty on its own.

I usually don’t dress the whole salad at once and add the dressing in portions. For dressing, you can mix mayonnaise, sour cream and mustard in a ratio of 3:3:1, or you can simply season with mayonnaise, sour cream or natural yogurt. Here for your taste and your wishes.
